Fiesta Corn Dip

This fiesta Mexican corn dip is made with hidden valley ranch mix and just three extra ingredients for the easiest and most delicious appetizer! There is nothing I love more than combing a few ingredients together and making a delicious dip that is also extremely easy. This dip takes under 5 minutes to prep. It can be served right away; however, I prefer it to be chilled in the fridge for a little. It is zesty, it is sweet, it is creamy and has pops of corn kernels in it! Pair it with any chips or veggies for an awesome appetizer.

Quick Tips for Fiesta Corn Dip

  • Don't like yogurt? Sub sour cream!
  • If you do not want to make your own ranch, buy a packet
  • Let the dip set in the fridge for at least an hour to allow for all the flavors to mend together
  • Drain the Rotel if serving right away. If letting it set in the fridge, you can leave the juices
  • Add any of your favorite taco / fiesta toppings!

What You Need for Fiesta Corn Dip

There is no cooking required. You really just combine everything in a bowl. You can eat it right then; however, I prefer to let it set in the fridge for at least an hour, to allow the flavors to form together.

Ingredients:
  • Plain, nonfat Greek yogurt
  • Rotel
  • Corn kernels
  • Fiesta ranch mix
  • Mexican shredded cheese - optional
  • Any additional taco toppings that you prefer
Substitutions and Suggestions for Fiesta Corn Dip

Substitute plain nonfat Greek yogurt for anything similar that you prefer. I love using plain nonfat greek yogurt as it is thick, has lots of protein and is not all that bad for you. However, you can use a different type of yogurt, sour cream, mayo, or mix any the two.

I can sometimes find Rotel to be spicy; however, it was not spicy in this mix at all. I think the combination of that with the cool and creamy yogurt help to hinder some of the spice. However, you can also substitute that for some salsa. In addition, if you like it extra spicy, add some more seasonings. I can discuss that in a minute.

For the corn kernels, I used extra sweet nibbles. Like I said, I am a baby when it comes to spice so I wanted something to help mellow it out. However, you can use any corn kernels that you have.

However, you can also add any taco toppings that you like. My husband added some jalapeรฑo slices as he was dipping into this fiesta ranch corn dip. I also think this will be really good with some beans for protein, or extra veggies like green onions, bell peppers or red onion.

Shredded Mexican cheese is also amazing in this fiesta dip; however, not completely necessary. I sprinkled on a little to make the dip pretty for a photo and I ate the cheese with the dip; however, I also did love the dip without the cheese. It really depends how light you want to keep the dip.

Making Fiesta Ranch Mix

You can buy a package of fiesta ranch dip; however, I just make it. I have a huge bottle of hidden valley ranch seasonings at my house and I prefer to just use that for this fiesta dip and add some spices to it.

To make fiesta ranch dip, I combine the following ingredients:

  • Ranch seasonings
  • Parsley
  • Onion powder
  • Chili powder
  • Ground cumin
  • Garlic powder

If you prefer to just buy some ranch fiesta mix, use about 4 tablespoons of it - two packets.

If you want to make your fiesta dip spicier, add some spicy spices! You can try ground red pepper, extra chili powder, dried chipotle pepper, or really anything!

How to Make Fiesta Corn Dip

To make fiesta corn dip, just combine all the ingredients in a bowl. You can eat the dip right away; however, I prefer to let it set in the fridge for at least an hour to allow the flavors to form together. Either cover it tightly or place it in an air tight container.

If you need to serve this right away, I will drain the Rotel a little so it is not too soupy. However, if you are letting the dip set in the fridge, you can leave the Rotel as it (with the juices) as the mix will absorb the extra liquid.

As you should let this set in the fridge, this is a great appetizer to prep ahead of the time for a party or gathering. You can make this up to 24 hours in advance and let it set in the fridge, in an air tight container, until ready to eat.

Serve this Mexican fiesta dip cold with some chips or veggies. I also like to keep a little bit of the ingredients to sprinkle on top and make it pretty!

This recipe makes about 7-8, half cup servings; however, it really depends if you drained the Rotel or not and if you added anything else.

Honey Balsamic Pork Chops

The best marinade for rosemary balsamic pork chops, glazed with a delicious honey mustard sauce.ย There is nothing easier than marinading some meat all day, then throwing it in the oven for a couple minutes and having dinner done! That's what I did tonight with my honey balsamic pork chops. Only a couple ingredients, that you already have in the house, come together to make these pork chops. They cook in 10 minutes, making dinner a breeze!

Plus, turn the marinade into a sauce while the pork chops cook! Then, you will have a glazed your pork chops with a delicious balsamic sauce.

What You Need for Brown Sugar Pork Chops

You do not need any special cooking tools for this recipe. Just bake the pork chops in the oven for 10 minutes and that is all! You can even turn the marinade into a sauce on the stovetop. Yup! You can do that!

The ingredients are all for the balsamic marinade or for pork chops. They are simple and you probably have them all in your house already!

  • Pork chops
  • Balsamic vinegar
  • Olive oil
  • Honey
  • Mustard
  • Garlic
  • Rosemary
  • Salt and pepper
Suggestions and Substitutions

Pork chops for BOGO at Publix so I had to pick some up! I got 4 pounds of them for like $7. That was amazing. However, this marinade/recipe tastes really great with chicken or salmon if you are looking for something lighter.

I use a tablespoon or two of each ingredient, we will go over that later. I think this recipe tastes amazing as it is, and all the ingredients are required. However, if you do not have an ingredient or do not like an ingredient, do not worry.

Specifically, for the mustard, I used stone ground mustard. I think it is the fancier, elite mustard. Don't you agree? The balsamic and mustard really compliment each other. However, if you like regular yellow mustard, go ahead and substitute that. Additionally, you can substitute honey mustard for the mustard and the honey if that if what you have. Lastly, you can skip the olive oil if you do not want to much oil, or just use less.

I love how the rosemary compliments the balsamic on these pork chops. However, if you do not have rosemary or do not like it, you can skip it. Additionally, I use garlic salt sometimes, instead of plain salt, to add a little more garlic. You know what I say, there is never enough garlic!!

I make the marinade into a sauce. You can also add a little bit of brown sugar replacement (this stuff) if you like things sweet. You do not have to add that if you do not want to. Another suggestion is to add crushed red pepper if you like things spicy!

But, come on, look at these honey balsamic pork chops. This recipe is perfection and you need to try it!

How to Make Honey Rosemary Balsamic Pork Chops

Start by marinading the pork. Place all ingredients for the balsamic mustard marinade and the pork chops in a baggie. Mix it all around and seal the baggie very tight. I like to place the baggie in a Tupperware container just to make sure it does not leak. Place that in the fridge for at least an hour or up to all day.

However, if you forget or do not have time to marinade, it will be okay. We can turn the marinade into a sauce and they will still be a very flavorful balsamic mustard-y dish.

Once ready to cook, preheat the oven to 350 degrees. Line a baking tray with aluminum foil and grease with cooking spray.

Place pork chops on the baking tray, in a single layer. Shake off any excess marinade but do not rub it off. DO NOT throw the marinade away. Bake in the oven for 10 minutes, flipping halfway, or until fully cooked. I like to use a meat thermometer to know exactly when the pork is done.

While the pork is cooking, heat a small pan over medium/high heat. Once heated, pour in the marinade and bring to a boil. Once boiling, reduce the heat to low and add in the brown sugar, if you want to use that. Stir and scrape up the bottom every minute until the sauce is thickened. It will be done when the pork chops are done.

Once the pork chops are done, cover them in some of the thickened sauce! (I use about half of the sauce) Then, you will have a glazed your pork chops with a delicious balsamic sauce.

Pairings

Now that you have your brown sugar garlic pork chops, what will you pair it with? I recommend my roasted red potatoes as it really plays in with the rosemary on the pork chops. Then, for your vegetable, try out my air fryer maple bacon balsamic Brussels sprouts to really bring out that balsamic flavor.

To make it a seamless dinner, begin with the potatoes as those take the longest. Get those cooking, then start on the Brussels sprouts. Once those have started, begin the pork. Everything will be ready at once! Easy and delicious pork chops with some easy and delicious sides!

I used about half the marinade for the sauce. Therefore, I estimated that I used a total of โ…” of the marinade. This will be reflected in the WW recipe builder. You can adjust that depending on what you did. It was about 1-2 tablespoons per serving of extra sauce.

Easy and delicious recipe for baked pork chops smothered in a honey, brown sugar and garlic sauce. There is nothing easier than marinading some meat all day, then throwing it in the oven for a couple minutes and having dinner done! That's what I did tonight with my brown sugar garlic pork chops. Only a couple ingredients, that you already have in the house, come together to make these pork chops. Plus, turn the marinade into a sauce while the pork chops cook and you have a delicious glaze for your side and veggie. Come on, you know me. I always give you some extra sauce!!

What You Need for Brown Sugar Pork Chops

I highly recommend my candied carrot chips, as it plays into the brown sugar of the sauce (same with my crunchy crack broccoli) and my instant pot rice. There is tons of extra sauce leftover that is perfect for some rice.

To make it a seamless dinner, begin with the carrot chips, as those take the longest. As those are finishing up, begin on the pork chops. Once you pop those pork chops in the oven, start the rice. Everything will be ready at once! Easy and delicious pork chops with some easy and delicious sides!

Remember, I put the whole marinade into the recipe builder. It makes a ton of extra sauce that I use on my rice, about ยฝ cup of extra sauce. I used all of the marinade to make the sauce, besides what was stuck to the pork, of course.

Instant Pot Mexican Rice

The best and easiest way to make Mexican or Spanish rice is in the instant pot. It is so quick to make and comes out delicious every time. Everything is made in one pot, which makes for an easy clean up. Just toast the rice, dump all the ingredients in and press go! It is done in under 20 minutes and pretty low maintenance!

There is a Mexican restaurant near me that makes the best Spanish rice I have ever tried. I usually was not a fan because I typically do not like all the vegetables in my rice but this restaurant changed my mind. Typically, I make my rice in the instant pot; therefore, I thought I would try Mexican / Spanish rice in the Instant Pot too. I am telling you, this is the way to make it!

What You Need to Make Instant Pot Mexican Rice

First things first is an instant pot of course. I use the original instant pot brand and I love using the non-stick bowl insert easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

Then, grab your ingredient:

  • Oil
  • Extra long grain rice
  • Onion
  • Garlic
  • Carrot
  • Tomato sauce
  • Water
  • Salt
  • Cumin
  • Paprika
  • Peas

Oil

To make Mexican or Spanish rice, you have to sautรฉ the rice in oil first. I use corn oil as I feel like it pairs well with this dish; however, you can use a different type of oil if you prefer that.

Extra Long Grain Rice

I use Publix extra long grain rice for mostly everything, including my instant pot Mexican rice. Typically, I just buy a huge bag of it, really, 20 pounds is only $15 and will last me ages. However, you can use a different rice if preferred, just be mindful of cooking times.

Tomato Sauce

Yes, like that tomato sauce from a jar. However, I usually will just blend up some canned diced tomatoes or used crushed tomatoes from a can. I have used tomato sauce before, like plain pizza sauce from a jar in the grocery store. However, I have also been desperate and used Italian pasta sauce. Yes I know, this is an instant pot MEXICAN rice recipe but desperate times call for desperate measures. Not the best, but whatever works.

Water

I use water for this recipe. However, you can use a broth such as a chicken broth, vegetable broth; however, tomato bouillon and water tastes amazing in this recipe.

Peas

If you notice, I did not put peas in mine. However, you can put them in yours at the end, or leave them out. It is really up to your personal preference. Additionally, you can add any more vegetables that you want.

How to Make Instant Pot Mexican Rice

Before beginning and turning on the Instant Pot, be sure everything is prepared and ready.

Mince the garlic or use an already minced alternative. Dice the onion and carrot, you will need about โ…› cup or so of each. However, you can add more or less depending on your preference.

Set the Instant Pot to the sautรฉ setting. Add in the oil and let it heat up.

Once heated, add in the rice and stir occasionally, until golden, it should take about 5 minutes.

Add in the garlic, onion and carrots and let them sautรฉ for about a minute, mixing occasionally. Turn the Instant Pot off.

Add in the remaining ingredients, except the peas, and give it a little stir, trying not to disturb the rice.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it.

Once completely cooked, let set for 5 minutes, then vent and de-pressurize the instant pot then open the lid. Fluff up the rice a little and add in the peas.

Stovetop Cooking Method

Don't have an instant pot but want to make this Spanish rice? Come on, I will show you how!

Heat a small pot over medium heat. Add in the oil and let it heat up. Once heated, add in the rice and stir occasionally, until golden, it should take about 5 minutes.

Add in the garlic, onion and carrots and let them sautรฉ for about a minute, mixing occasionally. Add in the remaining ingredients, except the peas, and give it a little stir, trying not to disturb the rice.

Let the pot come to a simmer. Let some heat escape for about 2 minutes then cover and cook until all the water has evaporated and the rice is fully cooked. Once completely cooked, fluff up the rice a little and add in the peas.

What to Serve with Mexican Rice

Top them off with your favorite taco additions and pair it with some Mexican rice!

Ingredients to Make Weight Watchers Friendly Chicken Enchiladas

There are no fancy ingredients required for these chicken and cheese enchiladas. Basically, all you need is an oven; however, you can also make these in the microwave as well.

  • Chicken
  • Taco seasoning
  • Enchilada sauce
  • Street corn tortillas
  • Shredded cheese

However, we can go over some suggestions and substitutions.

Chicken

I typically will just cook my chicken; however, a pre-cooked chicken or a rotisserie chicken works very well. Usually, I will just pop the chicken in the oven because it is easy and low maintenance; however, you can cook the chicken with whichever cooking method you prefer. The grill or stovetop works wonders as well.

I use chicken cutlets as they are thin and will cook quickly. However, these enchiladas are delicious with ground chicken, or any other similar meat, as well.

Enchilada Sauce

For my chicken enchiladas, I use red enchilada sauce. I have used tons and tons of different brands from generic, to Old El Paso, to La Victoria and I am sure many others. If you have a specific preference, use that one. In addition, you can substitute a green enchilada sauce if you prefer that.

Street Corn Tortillas

I use street corn tortillas for the chicken enchiladas as they are very weight watchers (WW) friendly. They are smaller tortillas and the perfect size to eat three enchiladas. However, you can use my recipe and substitute and tortilla that you like.

Shredded Cheese

I use Trader Joe's lite shredded Mexican cheese. I will stock up on a bunch of these and keep it in the freezer. However, you can use any type of cheese that you like. If you want to use fat-free to keep the WW points down, spray the cheese with some cooking spray to help it melt.

I think this is a good amount of cheese for these enchiladas, whether you are on weight watchers or not, they were very cheesy.

Taco Seasoning

I always have my homemade taco seasonings on hand, I make them exactly how I like them and I think they are better than anything you can buy. Plus, when you buy a seasonings mix, you never really know what is in it.

This is the taco seasonings recipe that I live and breathe for, hey, I love tacos, and is perfect to season the pork for this recipe. However, you can also buy a packet, just use 2/2.5 tablespoons of it!

  • ยผ teaspoon salt
  • 1 teaspoon chili powder
  • ยฝ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • ยผ teaspoon black pepper
  • ยฝ teaspoon oregano

Adjust any of these seasonings to your liking. This mix is not spicy; however, you can make it spicier with the addition of ground red pepper. If you are watching your salt, you can reduce that as well; but I do not think there is too much salt in this.

How good do these weight watchers enchiladas look!? So cheesy and delicious.

How to Make Weight Watchers Friendly Chicken Enchiladas

Grab your margarita and let's make some weight watchers enchiladas! You can cook the chicken however you want; however, I cook it in the oven, I find it to be the easiest, these are lazy enchiladas after all.

Prepping

Preheat the oven to 400 degrees. Sprinkle the taco seasonings evenly over both sides of the chicken pieces. Bake in the oven for about 15 minutes, flipping halfway, until the chicken is fully cooked. Grab a meat thermometer to know exactly when it is done.

I shred the chicken; however, you can also cut into thin strips. Additionally, you can substitute ground meat, my crock pot shredded taco chicken or my instant pot shredded taco chicken. I let the chicken cool down for about 3 minutes then I shred it with a hand mixer.

Making WW Enchiladas

Grease a casserole dish with cooking spray. I use a 12x9 white dish; however it was slightly too big; but it was the only one I have. Then, spread ยฝ cup of the enchilada sauce on the bottom of the casserole dish. I use red enchilada sauce for these lazy chicken enchiladas.

Mix the remaining 1 cup of enchilada sauce with the shredded chicken, set aside. Then, we will assemble the weight watchers enchiladas.

Wrap tortillas in a damp paper towel, I do this in groups of three. Microwave for about 30 seconds to heat them up. This will allow them to become pliable and able to be rolled. Do this three at a time and roll the enchilada before moving onto warming more tortillas.

Divide the chicken mixture evenly onto each tortilla, about 2-3 tablespoons. Roll them up and place them in the casserole dish, seam side down to keep them together. Sprinkle the cheese evenly over all of the enchiladas. I think this is a good amount of cheese for these enchiladas, whether you are on weight watchers or not, they were very cheesy.

Bake in the oven for 10 minutes, to allow the cheese to melt and the enchilada sauce to heat up.

Sprinkle the chicken and cheese enchiladas with cilantro or top with your favorite taco additions such as sour cream, greek yogurt, crema, shredded lettuce, salsa or jalapeรฑo.

Microwave Method

There is also an easier way to make these weight watchers enchiladas. Alternatively, use a microwave safe casserole dish and instead of baking the enchiladas, microwave for 5-7 minutes. This is a great method to use with pre-cooked chicken, such as rotisserie chicken, as it can be finished in under 15 minutes. This is truly a lazy enchiladas hack.

BBQ Bacon Chicken

This is a baked chicken with BBQ sauce, bacon and cheese, kind of a copycat recipe for the Chiliโ€™s cheesy Monterey chicken. This is my recipe for a healthier version of a Monterey chicken, with some added onions for a vegetable. I like to think of it as a BBQ chicken pizza, minus the pizza? Basically, combine seasoned chicken, BBQ sauce, sautรฉed onions, bacon and shredded cheese. Those are probably my 5 favorite foods, combined in one dish!

Baked chicken with BBQ sauce, bacon and cheese, kind of a copycat recipe for the chiliโ€™s cheesy Monterey chicken.

Do you like BBQ sauce? Onions? Bacon? Shredded cheese? Well, then you are going to LOVE this recipe. I know onions are not for everyone, make this recipe with or without them and it will be just as amazing. It literally oozes with flavor and cheese. An irresistible meal or meal prep.

  • Use any seasonings that you like! If you love spicy, add some spice!
  • Fully cooked bacon works great here to make it a super easy dish

What You Need to Make BBQ Bacon Baked Chicken

This is basically the copycat recipe for the Chiliโ€™s cheesy bacon bbq chicken, or Monterey chicken, which they do not offer at mine anymore. Therefore, I had to whip it up myself.

For the ingredients, I keep this very simple. All you really need is chicken with bbq sauce, bacon and cheese. This is stuff that I have on hand at all times. Minus the chicken, which I do pick up weekly.

  • Chicken cutlet
  • Seasonings
  • BBQ sauce
  • Bacon
  • Onion
  • Brown Sugar
  • Shredded cheddar cheese

We can go over some substitutes and suggestions as well.

Chicken Cutlet

I use a chicken cutlet for tons of recipes, including this BBQ bacon chicken. I love that they are already thin and easy to work with. However, you can use a chicken breast. If using a chicken breast, be sure to butterfly it, all the way in half, and pound it out thin. The chicken is seared on the pan, then, placed in the oven to finish cooking. The cheese will go in the oven with the chicken and if the chicken is too thick, it will not cook quickly and the cheese will burn.

Seasonings

We will be seasoning the chicken, of course. Who wants bland chicken? I just use seasoned salt as the other flavors really take over and make this dish extremely flavorful. However, you can really use any seasonings.

Do you like things spicy? Then add ground red pepper, paprika and chili powder. Do you prefer things to be extra garlic-y? Then use garlic salt or add in some garlic powder. You can really use any seasonings that you have and like here.

BBQ Sauce

With the BBQ sauce, I choose to use a sugar free one. G Hughes is usually my go-to. However, you are more than welcome to use any of your favorite BBQ sauces. I want this recipe to be something you, enjoy and love, and that just speaks you.

Just be cautious as I do add brown sugar back into the recipe. Therefore, if you are using a BBQ sauce with sugar, it may be too sweet for you.

Bacon

Weird, fun fact about me, I absolutely love fully cooked bacon. It is seriously the best bacon. I find it easy to get squishy bacon when it is already fully cooked. When you have to cook bacon, it can get crunchy and brunt. However, I know a lot of people do enjoy that, I just do not.

What I am getting at is that I use fully cooked bacon for the BBQ bacon chicken. It makes the recipe quicker as the bacon does not need to be cooked ahead of time. However, you can use 'regular' bacon, just pre-cook it. Additionally, you can try turkey bacon as well, I have been loving that.

Brown Sugar

I always, typically, use brown sugar replacement. It is easy grab a huge package from Amazon and that is what I always use. I do not mind using a replacement sugar. However, I know some people have concerns with that. Then, you can substitute a brown sugar blend or just straight brown sugar and it will be okay. Also, you can completely omit the brown sugar.

Shredded Cheddar Cheese

I always use reduced fat or fat-free shredded cheese. Really, I just think it is a quick and easy way to cut out some calories and fat. I know, it does not make too big of a deal but I do think it adds up and if it makes me happy, that's all that matters.

I specifically used fat-free for this recipe; however, reduced fat works somewhat the same. These cheeses take a little extra longer to melt, as compared to the full fat cheese. Therefore, it will not burn or melt too much while the chicken fully cooks. Yes, it will melt; however, it will not melt too much and burn.

With that being said, for this bbq bacon chicken, you can use any type of cheese that you want. If you make this and find that full fat cheese melts too much, pre cook the chicken in the oven for about 5 minutes, then top with cheese.

Additionally, you can substitute the type of cheese. If you like spicy, add in some pepper jack cheese. You can also use Colby jack or another cheese that you love.

Additional Ingredient Suggestions

You can make this BBQ bacon chicken even better and more to your liking. When sautรฉing the onion, add in some sliced mushrooms as well. I would have but I was working with what I have.

Another way to spice this up is to top it with some tomatoes or green onion.

BBQ Bacon Chicken

How to Make BBQ Bacon Baked Chicken

This is basically the copycat recipe for the Chiliโ€™s cheesy bacon bbq chicken, or Monterey chicken, which they do not offer at mine anymore. Therefore, I had to whip it up myself.

Begin by preheating the oven to 350 degrees.

Start off with some prep work, I promise it is not too much. Slice the onion into thin strips. Heat a pan over medium heat, greased with cooking spray. Add the onions and sautรฉ until they are soft, it takes about 5 minutes. T

hen, add in the brown sugar and stir until all the brown sugar is melted and dissolved. Place the onions on a clean plate and set aside. You can skip the brown sugar if you want.

You will use this pan again. Wipe it down if the onions made too much of a mess.

Season both side of the chicken cutlet with seasoned salt. Place on the heated pan and sear about 2 minutes per side. Then, transfer to a greased baking tray.

Spread the BBQ sauce across the top of the chicken. Then, top with a piece of fully cooked bacon, the onions, and then the shredded cheese.

Place the chicken in the oven and bake until the chicken is fully cooked (reaches an internal temperate of 165 degrees), the cheese is melted and the BBQ sauce is warmed, about 10 minutes. I suggest using a meat thermometer as well.

There you have it! Easy, healthy and delicious cheesy chicken Monterey - BBQ bacon baked chicken.

How amazing does this BBQ bacon chicken look! This recipe can easily be doubled, quadrupled, or more. As seen here, I made four servings. I made two for my dinner, and my husband's, and another two for our lunch the next day. It was very difficult to not devour all 4 servings.

This is my recipe for a healthier version of a Monterey chicken, with some added onions for a vegetable. I like to think of it as a BBQ chicken pizza, minus the pizza? Basically, combine seasoned chicken, BBQ sauce, sautรฉed onions, bacon and shredded cheese. Those are probably my 5 favorite foods, combined in one dish!

  • 1 teaspoon brown sugar replacement
  • 1 chicken cutlet 4 ounces
  • ยฝ teaspoon seasoned salt
  • 2 tablespoons sugar free BBQ sauce
  • 1 slice fully cooked bacon
  • โ…› cup fat-free shredded cheddar cheese

Instructions

  • Preheat the oven to 350 degrees.ย 
  • Slice the onion into thin strips. Heat a pan over medium heat, greased with cooking spray. Add the onions and sautรฉ until they are soft, it takes about 5 minutes.
  • Then, add in the brown sugar and stir until all the brown sugar is melted and dissolved. Place the onions on a clean plate and set aside. (You can skip the brown sugar if you want)
  • Season both side of the chicken cutlet with seasoned salt. Place on the heated pan and sear about 2 minutes per side. Then, transfer to a greased baking tray.ย 
  • Spread the BBQ sauce across the top of the chicken. Then, top with a piece of fully cooked bacon, the onions, and then the shredded cheese.
  • Place the chicken in the oven and bake until the chicken is fully cooked (reaches an internal temperate of 165 degrees), the cheese is melted and the BBQ sauce is warmed, about 10 minutes.

Want to learn how you can boil radishes to make them taste like a boiled, seasoned, delicious red potato? Did you know you could turn radishes into potatoes!? We put it to the test and I was Did you know you could turn radishes into potatoes!? HAHA not exactly, but you can make them taste like a potato! I put it to the test and was HIGHLY impressed. I used my garlic herb recipe on them and it was SO GOOD. Who can resist a zero point potato? Weight Watchers and Keto friendly!

Boiled Radishes

Did you know that you can boil radishes? A boiled radish will taste exactly like a red potato! This is one of my first recipes on here, and apparently, one of my most popular. It is no surprise why. I mean come on, who doesn't want to eat a vegetable and think it is a potato.

Red Radishes

A radish is a root vegetable, eaten mainly raw. You may have added a sliced radish to your salad before. They grow quick and easy, making then readily available and a great vegetable to grow for a novice gardener. Which I have now decided that I may start growing them myself.

The skin color can be white, pink, red, purple, yellow, green, and even black black; but, the inside is usually white. I typically find and use red radishes. If the radish is harvested on time, it will be crispy and sweet. However, if it is left in the ground too long, it will be tough and bitter. Therefore, you want to make sure you are grabbing a good radish.

A radish can provide for a moderate amount of vitamin C. However a raw radish is 95% water, which you can tell when eating them. The greens of a radish are usually thrown out; however, are edible and very nutritious. They can be used in tons of recipes from soups to sautรฉs to smoothies.

Mostly, people just eat the root of the radish, which is that colorful red bulb. However, the entire portion of the radish is edible. Radishes are most commonly eaten raw, the exterior has a crispy peppery flavor. You have probably eaten a sliced radish in a salad at one time or another. However, you have also seen them in Mexican dishes as a garnish. But, what a lot of people do not know is that boiled radishes can taste just like a red potato.

What You Need for Boiled Radishes

You can make boiled radishes on the stovetop with no fancy gadgets required. However, they are also very good (and crispy) finished out in the air fryer.

Then, just grab your ingredients. This recipe can easily be doubled, tripled, and more.

  • Red radishes
  • Minced garlic
  • Seasoned salt
  • Rosemary
  • Oregano
  • Bail
  • Garlic powder
  • Cooking spray

I use red radishes for my boiled radish recipe as they are very easy to find and they look more like the red potato I am going for. The skin color can be white, pink, red, purple, yellow, green, and even black black; but I have only used red ones.

Adjust the seasonings to your liking. As mentioned, the exterior has a peppery flavor already; therefore, be mindful if adding any black pepper. In addition, you can also add some finely grated parmesan cheese.

I use cooking spray, specifically butter flavored cooking spray, for this recipe to keep it lighter. However, the boiled radishes are amazing seared in a little bit of butter.

How to Make Boiled Radishes

Thoroughly wash the radishes before beginning. I usually place them in a strainer and give them a good wash and scrub with my hands and some water. They are a root vegetable and may be dirty.

Then, bring a pot of water to a boil, just big enough for the radishes. Slice radishes into quarters and place into the boiling water. Boil for 10 minutes, stirring occasionally. Once radishes are almost soft, drain well and set aside. Do not let them over cook as they will continue to cook on the pan.

Stovetop

Heat a small pan over medium/high heat, greased with cooking spray. I prefer to use a butter flavored cooking spray. Add garlic and cook until fragrant, about 1 minute.

Add boiled radishes and let them set on the pan for 3 minutes, sprinkle with the seasonings. Toss radishes and allow the other side to get slightly crispy as well, cooking until your desired wellness.

Air Fryer

I like to make these in the air fryer as well. Radishes are 95% water and I think that the air fryer can really dry out the boiled radishes a bit, in a good way! Follow the steps above, skipping the stovetop step.

Be sure to preheat the air fryer to 400 degrees and grease the air fryer rack. After the radishes have boiled, spray them with cooking spray and toss in the seasonings. Place the boiled radishes on the greased air fryer rack and air fry until desired crispness, flipping halfway. It will take about 3 minutes per side, 6 minutes total.

Additionally, you can completely just air fry the radishes. Preheat the air fryer to 400 degrees. Wash and cut the radishes. Add them to a bowl and toss in olive oil or spray with cooking spray. Sprinkle on the seasonings and toss to coat again.

Air fry for about 20 minutes, flipping and spraying the radishes halfway through, or even tossing a third or a quarter way through, depending on how your radishes are taking to the air fryer. The timing really depends on how crispy you like the radishes to be.

Oven

You can make them in the oven very easily. They will not be as watery, more crispy. However, they do take a lot long. I prefer to not go with this method, due to the timing, but they are so crispy!

Wash and cut the potatoesโ€ฆ I mean radishes. Add them to a bowl and toss in olive oil or spray with cooking spray. Sprinkle on the seasonings and toss to coat again.

Place on a greased baking tray and bake at 350 degrees for 40-50 minutes. You can leave them like that, or bake a little longer, or air fry them for a couple extra minutes to get them super crispy. It is really up to you!

Different Ways to Eat Boiled Radishes

You can also mash them up and make mashed radishes, like mashed potatoes, but with radishes.

Try these out with my roasted red potatoes or my air fryer baby potatoes to really compare them! If you make some mashed ones, I suggest you try my lighter mashed potatoes with them as well.

This Jennie O turkey breast tenderloin is made in the instant pot in no time and one of the best recipes you can try. Instant Pot Turkey Tenderloin is the quickest and easiest meal you can make. It has a garlic herb crust that literally smells like an Italian restaurant. Plus, this recipe really puts the tender in turkey tenderloin; it can basically be cut with a fork! This low calorie / low weight watcher point recipe is one you do not want to miss out on!

Where Did It All Begin?

I have been obsessed with crock pot pork tenderloin since I made it for New Year's. Someone asked if I made it with turkey tenderloin yet. I had never even heard of turkey tenderloin! I was so excited that I immediately started recipe testing. That is where I created my crock pot turkey tenderloin. Then, I decided to make it easier and quicker with an instant pot turkey tenderloin. Done in 10 minutes!

You know this was a good one when my husband had a comment! He said "this REALLY puts the tender in tenderloin". We were basically cutting the turkey loin with a fork it was so tender. But, there are some tips and trick you will need to follow to ensure you get the same tender turkey that I have achieved.

What You Need for Instant Pot Turkey Tenderloin

First things first is an instant pot of course. I use the original instant pot brand and I love using the non-stick bowl insert easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

Then, grab your ingredients

  • Turkey breast tenderloin
  • Minced garlic
  • Parmesan
  • Spices
  • Broth
Turkey Tenderloin

For my instant pot turkey tenderloin recipes, I use a Jennie O turkey breast tenderloin. I believe Hormel or Butterball makes one as well? There is a very limited market for turkey tenderloins; therefore, there are only a couple of brands.

My Jennie O turkey tenderloin came in a package with two tenderloins. Each tenderloin was 12 ounces; however, I only made 1 piece. The single piece was enough for 3 servings which was perfect. However, you can certainly make both, we can go over an adjusted cooking time for the tenderloin in the instant pot.

If you are on Weight Watcher (WW) or just watching your calories / fat, this is a very lean cut of meat!

Minced Garlic

I have started mincing my own garlic and I am in love. I just mince a ton of garlic cloves at once and store them in a mason jar, in my fridge. It will last me so long! However, you can use pre-minced garlic, like Spice World.

Parmesan

For the parmesan, I always use reduced fat Kraft grated parmesan. Yes, the fake kind that you buy in the aisle next to the pizza sauce. You are more than welcome to use a different one; however, make sure it is finely grated like this one to really stick to the tenderloin.

Broth

I would say the closest flavor to turkey is chicken; therefore, I use chicken broth. Plus, I always have that one hand. Whatever you already have should work fine, it really just helps to bring the instant pot to pressure. I use reduced sodium so keep this in mind when choosing your broth and/or seasonings.

Spices / Seasonings

This is the seasonings blend that I have perfected for really good, Instant Pot, turkey tenderloin. It literally smells like an Italian restaurant when you combine these together.

  • Basil
  • Italian seasonings
  • Garlic powder
  • Seasoned salt
  • Rosemary
  • Thyme
  • Paprika

However, you can certainly adjust the seasonings to your liking. If you are not a fan of one of the spices, you can omit it; however, you can also add more of one of the spices if you want to as well. Make this how you want to, it is your turkey loin.

I also use all dried seasonings that are purchased at the grocery store.

How to Make an Instant Pot Turkey Tenderloin

This is one of the best recipes for the Jennie O turkey tenderloin!

First things first is an instant pot of course. I use the original instant pot brand and I love using the non-stick bowl insert easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

If the turkey is really moist, blot with a paper towel to absorb any excess moisture.

Pour the broth into the bottom of the pot.

Then, combine the garlic, parmesan and seasonings in a small bowl, whisking together. Press the spices into the turkey tenderloin, being sure to coat all the sides. Place the turkey loin at the bottom of the pot.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 10 minutes and start it. Once completely cooked, let set for 5 minutes, then vent and de-pressurize the Instant Pot then open the lid.

If the turkey is thinner, it may only need 9 minutes.

Make sure the turkey reaches an internal temperature of 165 degrees, before eating. Then, cut the turkey tenderloin into 6 equal slices, 2 slices per serving.

Making More Turkey Tenderloin

Are you making more than just 12 ounces? Here is a quick guide.

  • 12 ounces - 9-10 minutes 
  • 16 ounces - 15 minutes 
  • 2 pounds - 25-30 minutes 

However, please be sure your turkey tenderloin is fully cooked and reaches an internal temperate of 165 degrees. Cooking times can vary.

Alternative Cooking Methods

Place the lid on the crock pot and cook for 1 hour 45 minutes to 2 hours, until the turkey reaches an internal temperature of 165 degrees. It will take about 8 to 10 minutes per ounce.

Once the turkey tenderloin is fully cooked, remove from the crock pot and let sit for 10 minutes. Then, cut the turkey tenderloin into 6 equal slices, 2 slices per serving.


What to Serve with Turkey Tenderloin

Potatoes and turkey tenderloin are the best combination! I served this with my roasted red potatoes. However, it is really good with some scalloped potatoes or air fryer baby potatoes.

For the vegetable, try some garlic parmesan zucchini chips or my one point spaghetti squash Alfredo.

  • Use a meat thermometer - I cannot stress it enough, you need a meat thermometer. You can find them almost anywhere and they are very affordable. Be sure to get one that can go in a crock pot (or oven).
  • Cook on low - poultry like turkey tenderloin does not work out as well on the high setting in a slow cooker
  • Remove the turkey right when it finishes cooking - you do not want to overcook the turkey as it can get tough

For my crock pot turkey tenderloin recipes, I use a Jennie O turkey breast tenderloin. I believe Hormel or Butterball makes one as well? There is a very limited market for turkey tenderloins; therefore, there are only a couple of brands.

My Jennie O turkey tenderloin came in a package with two tenderloins. Each tenderloin was 12 ounces; however, I only made 1 piece. The single piece was enough for 3 servings which was perfect. However, you can certainly make both, we can go over adjusted cooking times.

Spices / Seasonings

This is the seasonings blend that I have perfected for really good, slow cooker, turkey tenderloin. It is not spicy. It is a little sweet, but not too sweet, just a hint of sweet.

  • Brown sugar replacement
  • Garlic powder
  • Onion powder
  • Salt
  • Oregano
  • Paprika
  • Chili powder
  • Nutmeg
  • Black pepper

However, you can certainly adjust the seasonings to your liking. If you are not a fan of one of the spices, you can omit it; however, you can also add more of one of the spices if you want to as well. Make this how you want to, it is your turkey loin.

BBQ Sauce

With the BBQ sauce, I choose to use a sugar free one. G Hughes is usually my go-to. You are more than welcome to use any of your favorite BBQ sauces. I want this recipe to be something you, enjoy and love, and that just speaks you.

Just be cautious as I do add brown sugar back into the sauce. If you are using a BBQ sauce with sugar, it may be too sweet for you.

Brown Sugar

I always, typically, use brown sugar replacement. It is easy grab a huge package from Amazon and that is what I always use. I do not mind using a replacement sugar. However, I know some people have concerns with that. You can substitute a brown sugar blend or just straight brown sugar.

Honey Mustard

I just use generic honey mustard for this recipe. Yes, it has sugar. It is pretty thick and makes a nice glazing for the slow cooker turkey tenderloin. However, you can use a sugar free honey mustard if you wish. Alternatively, to keep it less sweet, substitute regular mustard.

How to Make Turkey Tenderloin Slow Cooker

This is one of the best recipes for the Jennie O turkey tenderloin!

First things first is to grab a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

I like to add a tablespoon or two of broth in the bottom of the crock pot. I think it keeps the turkey moist but who knows. Pour it into the crock pot first.

If the turkey is really moist, blot with a paper towel to absorb any excess moisture.

Then, combine all of the seasonings in a small bowl, whisking together. Press the spices into the turkey tenderloin, being sure to coat all the sides. Place the turkey loin at the bottom of the crock pot.

In a bowl, stir together the remaining brown sugar, BBQ sauce and honey mustard. Then, pour the sauce on top of the turkey tenderloin. If using a meat thermometer, this is the time to place it into the largest area of the tenderloin; however, you do not need to.

Place the lid on the crock pot and cook on low for 1 hour 45 minutes to 2 hours, until the turkey reaches an internal temperature of 165 degrees. It will take about 8 to 10 minutes per ounce.

Once the turkey tenderloin is fully cooked, remove from the crock pot and let sit for 10 minutes. Then, cut the turkey tenderloin into 6 equal slices, 2 slices per serving.

Making More Slow Cooker Turkey Tenderloin

The Jennie O turkey tenderloin My Jennie O turkey tenderloin came in a package with two tenderloins. Each tenderloin was 12 ounces; however, I only made 1 piece. The single piece was enough for 3 servings which was perfect. However, you can certainly make both, we can go over adjusted cooking times. Everything is on low.

  • 12 ounces: 105 to 120 minutes
  • 16 ounces: 140 to 160 minutes
  • 24 ounces: 200 to 240 minutes

However, as I have been saying, the meat thermometer is your best friend. Cooking times can vary so much depending on the thickness and shape of the turkey loin or the specific slow cooker. Cook until the internal temperature reaches 165 degrees.

Alternative Cooking Method (Pressure Cooker)

Looking for some more Jennie O turkey tenderloin recipes? If you need this quicker, make my instant pot turkey tenderloin. It only needs to cook for 10 minutes!

Pour โ…“ cup low sodium chicken broth into the bottom of the pot. This will keep the turkey moist and help bring the pot to pressure.

Then, repeat the same steps as you would with the crock pot, seasoning and saucing the loin. Place the turkey loin at the bottom of the pot.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 10 minutes and start it. Once completely cooked, let set for 5 minutes, then vent and de-pressurize the Instant Pot then open the lid.

If the turkey is thinner, it may only need 9 minutes.

What to Serve with Jennie O Turkey Tenderloin in Crock Pot

Potatoes and crock pot tenderloin are the best combination! I served this with my roasted red potatoes. However, it is really good with some scalloped potatoes or air fryer baby potatoes.

For the vegetable, try some garlic parmesan zucchini chips or my one point spaghetti squash Alfredo.

These are my air fryer chicken tenders covered in a firecracker sauce which is basically a hot and spicy buffalo glaze. Firecracker chicken tenders combine crispy, air fried chicken tenderloins, with a better than the bottle buffalo hot sauce. But, I am warning you, these are spicy spicy! They will create a firecracker of spicy and delicious-ness in your mouth!

Have you heard of firecracker chicken? Firecracker glaze is basically a dressed up version of buffalo hot sauce. Think, Nashville hot chicken; but, saucier?

I love making my chicken tenders in the air fryer. They come out just as crispy as normal fried chicken; however, A LOT less oil is required. I love healthier food that is just as good as the 'not as healthy' version.

Air fryer spicy buffalo chicken tenders are so easy to make and require ingredients that you probably already have! These are the best weeknight dinner idea.

What is Firecracker Glaze?

Firecracker chicken tenders will need a firecracker glaze. But, what exactly is that? The glazing combines sweet and spicy ingredients into one amazing sauce. It is basically a buffalo hot sauce doctored up with some brown sugar, honey and red pepper flakes. I really like to think of it as a Nashville hot chicken sauce; but, saucier and without all the seasonings.

Coat the sauce onto the chicken tenders, if you really think you can handle the heat. Otherwise, it is really good as a dipping sauce, on the side. Therefore, you can control how much spice you get.

Don't say I didn't warn you...

  • This sauce is spicy! I am not playing around when I say it is spicy. I can give you some tricks to make it less spicy; but, it is spicy!
  • Serve this sauce on the side if you are not sure that you can handle the heat
  • Make just the sauce and serve it over pre-made chicken tenders or anything else you would like

Starting with the Glaze

You will want to start with the sauce as it will need to simmer on the stove to thicken, as the chicken cooks. To make the sauce, grab a couple ingredients that you probably already have in your kitchen.

  • Buffalo hot sauce
  • Honey
  • Brown sugar replacement
  • Red pepper flakes
Substitutions and Suggestions

Buffalo sauce, hot wing sauce, hot sauce, whatever you want to call it, you need it. I have used Frank's red hot and sweet baby ray's for this recipe before. Both work great; however, you can use whatever your favorite sauce is.

Honey is used in this recipe as buffalo wing sauce tends to have a bit too much vinegar. The honey counteracts the vinegar and makes the sauce enjoyable. I think the honey is pretty necessary in this recipe.

How to Make Firecracker Sauce Less Spicy

To make the sauce less spicy, add less hot stuff or more sweet stuff. Sounds easy enough; but, really, use less hot wing sauce, more honey, or more sugar. Dip the chicken tenders in the firecracker sauce, instead of coating it, to control how much heat you are getting.

How to Make Firecracker Glaze

Grab a small pan and heat it over medium to medium/high heat. Combine all the ingredients for the glaze in a bowl, whisking together the brown sugar as best you can.

Dump the sauce into the heated pan and bring to a slight simmer. Once simmering, reduce the heat to low. Then, simmer until desired thickness is reached and the brown sugar has dissolved completely.

Ingredients to Make Chicken Tenders

I am going to teach you how to make the best chicken tenders in the world; however, you do not have to make your chicken homemade. Store bought or frozen tenders will work great too. Alternatively, you can pair this sauce with chicken nuggets, just fries or anything else that is great for dipping.

I make my spicy chicken tenders in the air fryer. They come out so crispy and perfectly cooked in the air fryer. However, I can go over how to make them in the oven as well. Make sure you grab an air fryer, I like using a rack type air fryer for this.

I love making homemade chicken tenders. Again, only 4 ingredients and some spices go together for this recipe.

  • Chicken tenderloins
  • Flour
  • Breadcrumbs
  • Egg
  • Seasonings
Suggestions and Substitutions

I love using chicken tenderloins as they are a very tender piece of chicken, hence the name. However, if, for some reason, you cannot find them in the store, make thinner strips out of chicken breasts. This recipe will also work if you prefer to make chicken nuggets.

I use egg beaters, liquid egg whites, a lot for my recipes. I find it to be much easier than cracking and whisking an egg. Plus, it is a lot less 'goopy' and has less cholesterol. However, regular eggs, if whisked, will work fine too.

For the seasonings, I love garlic powder, seasoned salt and paprika. Feel free to spice this recipe up a little and add some ground red pepper or black pepper. But again, these air fryer chicken tenders will already be spicy with the buffalo sauce.

You will also need some cooking spray as it will help emulate actual frying, which we will not be doing here. You are more than welcome to actually fry the chicken; however, I do not.

How to Make Firecracker Chicken Tenders

I make my buffalo chicken tenders in the air fryer. They come out so crispy and perfectly cooked in the air fryer. However, I can go over how to make them in the oven as well.

Air Fryer

First, begin by preheating the air fryer to 400 degrees. Grab two small shallow bowls, I like using a Tupperware, and the air fryer rack. Grease the air fryer rack with cooking spray and set the bowls next to it. In one bowl, add the liquid egg whites. In the other bowl, combine the flour, breadcrumbs and seasonings.

Dip each chicken tenderloin in the egg, making sure to completely cover it. Then, press the chicken tenderloin into the flour mixture, being sure to thoroughly coat all the sides.

Place all the chicken tenderloins on the air fryer rack, being careful not to let them touch.

Air fry for 2 minutes, then spray the chicken tenderloins with cooking spray. This emulates actual frying. You will want to make sure the chicken is slightly warm/hot before spraying with cooking spray. That way, the cooking spray does not melt into the chicken.

Air fry for another 3 minutes. Then, flip the chicken over and spray with more cooking spray. Air fry for another 4-5 minutes, until the chicken is completely cooked.

You can use a meat thermometer to know exactly when the chicken is ready. Chicken can over cook quickly and you want the best and juiciest chicken.

Once the chicken is cooked, toss in the firecracker glaze or serve it on the side to dip the chicken into.

Oven Version

To make the chicken tenderloins in the oven, follow all the instructions, except for the air fryer part.

First, begin by preheating the oven to 425 degrees. Grab two small shallow bowls, I like using a Tupperware, and an oven safe cooling rack. Grease the rack with cooking spray and set the bowls next to it. In one bowl, add the liquid egg whites. In the other bowl, combine the flour, breadcrumbs and seasonings.

To prevent things from getting messy, grab a cookie sheet that is just bigger than the cooling rack and line it with aluminum foil.

Dip each chicken tenderloin in the egg, making sure to completely cover it. Then, press the chicken tenderloin into the flour mixture, being sure to thoroughly coat all the sides. Place all the chicken tenderloins on the rack, being careful not to let them touch.

Place the rack on top of the cookie sheet that is lined with aluminum foil. I like cooking my chicken on a rack, as it allows the air to circulate the chicken completely. However, you can just cook it on a greased cookie sheet.

Bake the chicken in the oven for about 15 minutes, until fully cooked. Make sure to flip and spray the chicken with cooking spray halfway through. Once the chicken is cooked, toss in the firecracker glaze or serve it on the side to dip the chicken into.

Alternative Cooking Methods

You can make your firecracker chicken tenders by deep frying in oil. Alternatively, you can not bread the chicken and cook it on the stove or in the oven.

Alternative Sauces

Great Sides to Pair

If you want some fries to dip into the extra sauce, you have to make my air fried fries. However, frozen fries work great too. This recipe pairs well with my crunchy crack broccoli or my candied carrot chips as it provides for a sweet taste to counteract the spicy buffalo chicken tenders.

These are my Chinese takeout recipes for a classic chicken and broccoli meal, smothered in a sweet, brown, soy sauce glazing. I love Chinese restaurant style chicken and broccoli stir fry. You know, the classic meal from your local takeout place. Sometimes it has mixed veggies, sometimes it just has broccoli. Make this either way.

It is made with tender cooked chicken and finished off with a delicious, savory, creamy sauce. You can have this meal on the table in about 30 minutes; therefore, you can skip the takeout restaurant!

  • Salt, pepper and garlic powder

First, this recipe is for chicken and broccoli, which we have gone over a lot. However, if you are not a fan of broccoli, you do not need to make the broccoli. Broccoli is great in this recipe; however, many other vegetables are as well including carrots, peppers or mushrooms. Alternatively, you can skip the vegetables in total or do a combination of all your favorite.

This recipe does make a lot of extra sauce, which is perfect for additional vegetables and rice. However, if you are skipping the vegetables and/or rice, you may want to reduce some of the sauce.

Second, this recipe calls for try chicken tenderloins; however, it really does not matter which cut of chicken you use. I love using chicken tenderloins as they are a very tender piece of chicken, hence the name, and easier to cut as they are already slim. This recipe is amazing with chicken breast, chicken thighs, chicken cutlets, just about anything.

Alternatively, if you more of a beef or pork person this recipe works great with either of those proteins. However, this recipe would be pretty great with just about any protein that you want to throw in it.

I use minced garlic and minced ginger out of a bottle. I know, I am awful, but I am also lazy. Alternatively, you can mince your own garlic and ginger. If you want to spice up this recipe, add some crushed red pepper as well.

Chicken and Broccoli Sauce Ingredients:

The sauce is very simple and I typically have all of the ingredients on hand.

  • Broth
  • Soy sauce
  • Teriyaki sauce
  • Brown sugar
  • Sesame oil
  • Corn starch

This recipe will call for chicken broth; however, I have made this many times with beef broth or veggie broth, whatever you have on hand. I typically use chicken broth, as that is what I have in my house normally, but I really do not notice a big taste difference. Nevertheless, use whichever one you want to use and have on hand, it does not make a big difference. If you are making this into a vegetarian or pescatarian dish, you can certainly use vegetable broth as well.

Soy sauce and teriyaki sauce are used in this recipe; but, you can use just soy sauce. I think that the teriyaki sauce really provides and elevated flavor; however, I have made this with just soy sauce before and it is still amazing.

I use brown sugar substitute, and a lot of it. Chicken and broccoli tends to me more of a savory dish, which this still is; however, in mine, I can taste a bit of the sweetness, which I love. For me, there is nothing like chicken in a sweet soy sauce. If you want to keep this restaurant style chicken and broccoli dish more savory, like in the restaurant, reduce the amount of sugar. However, you can also substitute regular brown sugar.

How to Make Chinese Style Chicken and Broccoli Stir Fry

This recipe will not include rice; however, if you want to add rice, I would get that started first. You can use my stovetop rice method or my instant pot rice method. Alternatively, try a pre-made rice, substitute cauliflower rice or try noodles.

Broccoli

First, start by cooking the broccoli. Cut the broccoli into bite-sized pieces. I steam my broccoli on the stove with a little bit of water. Fill a medium sized pot with about an inch of water. Place that on the stove over medium heat and let that come to a slight boil.

Add the cut up broccoli, cover the pot, and steam for about 5-7 minutes, depending how you like the broccoli. Once cooked, remove from heat and drain. Then set aside as we cook the chicken.

However, you can cook the broccoli with any cooking method that you prefer. I typically prefer baked broccoli but this will also do.

Chicken

Let's make our restaurant style chicken and broccoli. Grab the chicken and cut into cubes, about one inch by one inch, but you can make it as big or small as you please. Place chicken in a bowl. Then, sprinkle on the seasonings, tossing to coat.

Heat a large pan over medium / medium high heat. Grease with cook spray; however, you can also drizzle with a little oil. Once heated, add the minced garlic and ginger, cooking for about 2-3 minutes, until fragrant.

Add the cut up, seasoned chicken to the pan and cook for a couple minutes on each side. It should only take about 10 minutes to cook the chicken; however, be sure it is fully cooked.

Chinese Style Sauce for Chicken and Broccoli

While the chicken is cooking, prepare the Chinese style sauce for chicken and broccoli. Combine all the ingredients for the sauce in one bowl, and the two ingredients for the slurry in another.

Once the chicken is cooked, add the sauce to the pan, bringing to a slight simmer. Simmer the sauce with the beef for about 3 minutes, until slightly thickened. Then, add the slurry and mix that into the sauce. Bring back up to a simmer and simmer again for another 3 minutes, until the sauce is to your desired thickness.

Either add the broccoli in and mix everything together or serve on the side. As mentioned, there will be plenty of extra sauce for the broccoli and rice.

What To Do With Leftovers

This chicken and broccoli in brown sauce recipe makes a bunch of servings, 4 servings. It will be great for a meal prep; however, you can also adjust the serving size. If there are leftovers, store in an air tight container in the fridge, it should be good for about four days. You can use the leftover chicken for salads as well.

Substituting with Beef

If you are not a fan of my soy sauce chicken recipes, try beef! This recipe can easily be adapted into a beef and broccoli. See that photo right there, beef and broccoli.

You basically just want to follow all the same steps; however, use beef instead.

Instructions

Copycat recipe for Chipotle Citrus pork carnitas, aka Mexican pulled pork, made in the slow cooker, shredded, then crisped on the stovetop. I have always been a Chipotle fan. Chipotle chicken is amazing, one of my favorites. But have you tried the carnitas? Their carnitas made me fall in love with pulled/shredded pork and I haven't gone back!

I made my own version, which is healthier, cheaper and more delicious than the real deal. They are so easy to make in the slow cooker, then you can crisp them up on the stove. Dump and go recipes are the best because they are so easy!

This recipe for chipotle carnitas is perfect for a weeknight dinner, meal prep or if you are hosting a gathering. You can make bowls, tacos, burritos, salads, just about anything with these carnitas.

Let's get into more of the juicy details. Get it, juicy details, because this pork is so juicy and tender.

What Do You Need To Make Slow Cooker Mexican Pulled Pork

First things first for this Chipotle carnitas recipe is a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock. I think food like ribs, and many types of pork, are perfect in the crock pot but that is up to you!

We are also going to crisp up these pork carnitas on the stovetop; however, you can also do this in the oven.

To make this recipe for chipotle carnitas, just grab a couple ingredients and press go.

  • Pork butt
  • Olive oil
  • Seasonings
  • Garlic
  • Red onion
  • Lime juice

The meat I chose for this was pork butt, it is boneless. However, different types of pork work great too, pork shoulder is another great option. Don't forget, you can also use chicken to keep this a lower fat or calorie recipe.

What I love about making my own recipe for Chipotle carnitas is that I can make it exactly how I want, and you can too. If you do not like onion, don't add them. Are you a huge garlic fanatic? Add some more garlic! Adjust this recipe, easily, to your liking.

Taco Seasonings

I always have my homemade taco seasonings on hand, I make them exactly how I like them and I think they are better than anything you can buy. Plus, when you buy a seasonings mix, you never really know what is in it.

This is the taco seasonings recipe that I live and breathe for, hey, I love tacos, and is perfect to season the pork for this recipe. However, you can also buy a packet, just use 2/2.5 tablespoons of it!

  • ยผย teaspoonย salt
  • 1ย teaspoonย chili powder
  • ยฝย teaspoonย paprika
  • 2ย teaspoonsย garlic powder
  • 2ย teaspoonsย onion powder
  • 1ย teaspoonย cumin
  • ยผย teaspoonย black pepper
  • ยฝย teaspoonย oregano

Adjust any of these seasonings to your liking. This mix is not spicy; however, you can make it spicier with the addition of ground red pepper. If you are watching your salt, you can reduce that as well; but I do not think there is too much salt in this.

How to Make this Recipe for Chipotle Pork Carnitas

Slow cooked carnitas is quite easy to make. The hardest part is trying not to devour the pork as the amazing smell fills your home all day long but that's another story.

I suggest using one of these crock pot liners for easy clean up, situate that on the crock pot first.

Prepping

In a small bowl, combine all of the seasonings. Pat dry the pork butt, if there is any excess liquid. Drizzle with half the oil, then, press the seasonings into all sides of the pork. Add the pork to the bottom of slow cooker. If there is a fat cap, put the fat cap placing up.

Slice the onion into big chunks. You can slice the onion as big or small as you want. I typically leave it as big chunks and remove them when the pork is ready. You can dice the onion and keep it in with the shredded pork. It really does not matter. Add the lime juice, garlic and onion on top of the pork butt.

Cooking

I use a meat thermometer to know exactly when the pork is ready. At this point, place your probe into the pork. Then, cover the slow cooker pot and cook on low for four hours, or until the pork reaches 205 degrees. At 205 degrees, the pork becomes very tender and it is easy to cook because the collagen has broken down. When it becomes this tender, the carnitas are shredded very easily. Science stuff, we are not here for that.

Crisping the Pork Carnitas on the Stovetop

Let the pork cool for a couple minutes, so it is not too hot to the touch. As the pork is cooling, heat the remaining oil in a pan over medium high heat. I like to use a pot with tall sides as this can get messy.

Once the pork has slightly cooled, shred with a hand mixer or two forks. Add the shredded carnitas to the pan with the heated oil, cover, and let crisp for a couple minutes.

Once that side is crisped to your likeness, toss the pork and repeat this crisping process. Crisp the pork carnitas on the stovetop until it reaches your desired wellness. Remove from heat once ready.

If there are any liquids, add those back into the pork and mix to allow the pork to absorb any juice.

Making More Pork

This recipe for Chipotle carnitas calls for 1 pound of pork, which is not that much, it feeds about 4 people. To increase the amount of pork, it needs to be cooked a lot longer. I will chart some common poundage and their cook times, but again, a meat thermometer is your best friend. I pull it out when it hits 205 degrees.

  • 1 pound of pork - 4 hours
  • 2.5 pounds - 7 hours
  • 4 pounds - 9 hours
  • 5 pounds - 10 hours

Cooking times may vary depending on the shape and thickness of the pork butt, be sure to use a meat thermometer.

Alternative Cooking Methods

Mexican pulled pork in the slow cooker is amazing. There is nothing like pulled pork in the crock pot. However, this can also be made in the instant pot.

Instant Pot

Repeat the same recipe steps for the chipotle carnitas, except place the pork in the instant pot. You will need to grease the bottom of the instant pot and/or use a non-stick bowl insert.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 15 minutes and start it. (It will take about 15 minutes per pound to cook).

Once completely cooked, let it set for 5-7 minutes. Then, vent and de-pressurize the instapot then open the lid.

Repeat the same steps for the crisping parts. Crisp the pork carnitas on the stovetop until your desired wellness.

Oven

Instead of crisping the pork carnitas on the stovetop, do it in the oven. Add the shredded carnitas to a baking tray. Drizzle with the oil then, toss to coat. Place under the broiler and broil for 5 minutes, or until desired crispness.

Using Chicken Instead

Mexican pulled pork in the slow cooker is the best. But I get it, not everyone loves chicken. If you prefer to use chicken, that is great! You can still make my recipe; however, just modify it a little. I use two chicken breasts, that equal one pound total.

Crock Pot

Follow the majority of the recipe steps for the chipotle carnitas; however, the chicken will only need to cook for about 1.5-2 hours. Make sure to also use a meat thermometer. Chicken cooks to 165 degrees.

Follow the same steps to crisp the carnitas; however, be careful not to dry out the chicken. Add a bit of chicken broth if it starts to dry out.

Instant Pot

Again, follow the majority of the same steps. But, put the chicken in the instant pot. You will need to grease the bottom of the instant pot and/or use a non-stick bowl insert.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 15 minutes and start it. (It will take about 15 minutes per pound to cook).

Once completely cooked, let it set for 5-7 minutes. Then, vent and de-pressurize the instapot then open the lid.

Toppings

Just like chipotle, add some toppings! I am very basic when it comes to my bowls, I like corn, rice and salsa. You can add shredded lettuce, fajita veggies, cheese, jalapeรฑos, the list goes on and on!

This is how to make the copycat version of the famous raising caneโ€™s chicken tender dipping sauce, plus it is even healthier! In honor of Raising Cane's heading to Orlando, I whipped up a copycat version of the famous canes sauce. It is healthier than what you get in the drive thru, but tastes so similar! This sauce is perfect for dipping your chicken tenders or fries into.

I make this copycat Cane's sauce with plain, nonfat Greek yogurt. I like to keep it a bit healthier; however, you can go with the classic mayo as well. Only 4 ingredients and some spices go together for this delicious sauce!

Serve this with my air fryer chicken tenders, I will give you the recipe for those here as well, or any chicken tender, nugget, fry, anything!

What is Raising Cane's?

Depending on where you live, you may or may not know what Raising Cane's is. I just had some friends move here from Ohio, or otherwise, I probably would not know either.

No, Raising Cane's is not like Chick-fil-A. Although they both do have a signature sauce, they are very different. I do have a copycat Chick-fil-A sauce recipe, if you want to check that one out. I would say Chick-fil-A is a bit more sweet; whereas, Cane's is more savory.

There are two Raising Cane's coming to the Orlando area, which is super exciting. We have been getting a lot of fun and different restaurants lately.

Raising Cane's is a fast food chain which specializes in chicken fingers, and of course, their special sauce. If you have a Huey Magoo's around you, it is pretty similar to that.

They pretty much only serve chicken tenders with sauce. Their famous cane's sauce is a top secret blend of sauces and spices. According to their website, their general managers make a fresh batch of Cane's sauce everyday. However, no one knows the sauce recipe except for them. But, today, we have cracked the code! My copycat Cane's sauce taste so much like the original, they will be wondering who shared the secret recipe!

Starting with the Copycat Cane's Sauce

You will want to start with the sauce as it tastes better the longer it sets in the fridge. Chilling the sauce, especially with Greek yogurt, allows all of the flavors to form together. It creates on seamless, creamy sauce.

Only 3 ingredients and some spices go together for this delicious sauce!

  • Plain nonfat Greek yogurt
  • Ketchup
  • Worcestershire sauce
  • Garlic salt
  • Black pepper

Traditional Cane's sauce is made with mayonnaise. You can use mayo, light mayo or fat-free mayo; however, I am keeping this as healthy as possible. Plain, non-fat Greek yogurt is a wonderful alternative to mayo or sour cream. It works great it in so many recipes, but I know some people are not a fan. Coming from someone who really does not like yogurt on its own, I promise you really do not taste the yogurt.

Plain, nonfat Greek yogurt works great in copycat Cane's sauce as there are lots of other flavorful ingredients added to it.

There are a lot of different brands of plain, nonfat greek yogurt. You might need to experiment with some as they all have different tastes and textures. But, you can also use regular plain yogurt as well.

If you are on Weight Watchers, you may have plain, nonfat Greek yogurt as a zero point food and this would be a great recipe for you. Also, you may not know that greek yogurt has added protein! How cool is that?

Other Substitutions

I use sugar free ketchup in this recipe as, again, I am keeping it healthier. However, it really does not matter if you want to use regular or sugar free ketchup.

For the Worcestershire sauce, use any brand that you want. I use garlic salt because it is only one ingredient; however, you can do garlic powder and salt separately. Alternatively, try out a little bit of celery salt. Finally, the black pepper is pretty self explanatory, it is black pepper.

Add some hot sauce, depending if you like things super spicy or not. You can also add a dash is creole into the mixture as well.

How to Make Raising Canes Sauce

This is how to make Raising Canes sauce. You will want to start making the sauce first as it tastes better the longer it sets in the fridge. Chilling the sauce, especially with Greek yogurt, allows all of the flavors to form together. It creates on seamless, creamy sauce.

Combine all the ingredients in a small bowl, stirring together to get any clumps out. Store the sauce in the fridge until the rest of the food is ready, about 15-30 minutes. However, if you do not have time to chill the sauce, just eat it right away. But the longer it sits the better. You can leave it in the fridge for days even. If leaving it longer than 15-30 minutes, I will cover it or put it in an air tight container.

This is the perfect chicken tender dipping sauce, which is why Raising Canes is famous for their chicken fingers. Therefore, pair this copycat canes sauce with some chicken tenders and crinkle fries.

My recipe makes about 3 tablespoons of sauce per serving (4 servings total), but you can make more or less.

Ingredients to Make Chicken Tenders

Famous canes sauce needs some chicken fingers! This copycat canes sauce makes the best chicken tender dipping sauce.

I am going to teach you how to make the best chicken tenders in the world; however, you do not have to make your chicken homemade. Store bought or frozen tenders will work great too. Alternatively, you can pair this copycat canes sauce with chicken nuggets, just fries or anything else that is great for dipping.

I make my chicken tenders in the air fryer. They come out so crispy and perfectly cooked in the air fryer. However, I can go over how to make them in the oven as well. Make sure you grab an air fryer, I like using a rack type air fryer for this.

I love making homemade chicken tenders. Again, only 4 ingredients and some spices go together for this recipe.

  • Chicken tenderloins
  • Flour
  • Breadcrumbs
  • Egg
  • Seasonings
Suggestions and Substitutions

I love using chicken tenderloins as they are a very tender piece of chicken, hence the name. However, if, for some reason, you cannot find them in the store, make thinner strips out of chicken breasts. This recipe will also work if you prefer to make chicken nuggets.

I use egg beaters, liquid egg whites, a lot for my recipes. I find it to be much easier than cracking and whisking an egg. Plus, it is a lot less 'goopy' and has less cholesterol. However, regular eggs, if whisked, will work fine too.

For the seasonings, I love garlic powder, seasoned salt and paprika. Feel free to spice this recipe up a little and add some ground red pepper or black pepper.

You will also need some cooking spray as it will help emulate actual frying, which we will not be doing here. You are more than welcome to actually fry the chicken; however, I do not.

How to Make Chicken Tenders

I make my chicken tenders in the air fryer. They come out so crispy and perfectly cooked in the air fryer. However, I can go over how to make them in the oven as well.

Air Fryer

First, begin by preheating the air fryer to 400 degrees. Grab two small shallow bowls, I like using a Tupperware, and the air fryer rack. Grease the air fryer rack with cooking spray and set the bowls next to it. In one bowl, add the liquid egg whites. In the other bowl, combine the flour, breadcrumbs and seasonings.

Dip each chicken tenderloin in the egg, making sure to completely cover it. Then, press the chicken tenderloin into the flour mixture, being sure to thoroughly coat all the sides.

Place all the chicken tenderloins on the air fryer rack, being careful not to let them touch.

Air fry for 2 minutes, then spray the chicken tenderloins with cooking spray. This emulates actual frying. You will want to make sure the chicken is slightly warm/hot before spraying with cooking spray. That way, the cooking spray does not melt into the chicken.

Air fry for another 3 minutes. Then, flip the chicken over and spray with more cooking spray. Air fry for another 4-5 minutes, until the chicken is completely cooked.

You can use a meat thermometer to know exactly when the chicken is ready. Chicken can over cook quickly and you want the best and juiciest chicken.

Once the chicken is cooked, dip it into your copycat famous canes sauce!

Oven Version

To make the chicken tenderloins in the oven, follow all the instructions, except for the air fryer part.

First, begin by preheating the oven to 425 degrees. Grab two small shallow bowls, I like using a Tupperware, and an oven safe cooling rack. Grease the rack with cooking spray and set the bowls next to it. In one bowl, add the liquid egg whites. In the other bowl, combine the flour, breadcrumbs and seasonings.

To prevent things from getting messy, grab a cookie sheet that is just bigger than the cooling rack and line it with aluminum foil.

Dip each chicken tenderloin in the egg, making sure to completely cover it. Then, press the chicken tenderloin into the flour mixture, being sure to thoroughly coat all the sides. Place all the chicken tenderloins on the rack, being careful not to let them touch.

Place the rack on top of the cookie sheet that is lined with aluminum foil. I like cooking my chicken on a rack, as it allows the air to circulate the chicken completely. However, you can just cook it on a greased cookie sheet.

Bake the chicken in the oven for about 15 minutes, until fully cooked. Make sure to flip and spray the chicken with cooking spray halfway through. Once the chicken is cooked, dip it into your copycat canes sauce!

Alternative Cooking Methods

Famous canes does fry their chicken in oil, which you can do. Alternatively, you can not bread the chicken and cook it on the stove or in the oven.

Alternative Sauces

If you want to make this recipe, but want a different sauce, try out some of my other ones! I have an amazing yum yum sauce, sometimes called white sauce, or bang bang sauce. Alternatively, you can go with a classic homemade healthy ranch.

Leftovers

Copycat canes sauce makes for amazing leftovers. This is the best chicken tender dipping sauce, and can be used again and again. The longer the sauce sits the better, this can be stored in the fridge, in an air tight container for days. Pay attention to the expiration on the yogurt, it is usually about 5 days once opened.

With the leftover plain, nonfat Greek yogurt that you have, you need to make my zero point onion dip or my greek yogurt buffalo chicken dip. Same with this recipe, if you do not like yogurt, you will LOVE this! If you want something spicier, check out my firecracker chicken tenders.

French Onion Burger

This is my onion soup burger recipe made with French onion soup seasoning or dip mix and topped with a BBQ onion marmalade. I have been absolutely obsessed with French onion dip mix since I got back into making my zero point onion dip.

Also, it has been a long time since I have made my famous BBQ onion marmalade. You can also call it an onion jam. I had a couple extra packets of my favorite onion seasonings mix. Then, I thought, why not put those two together.

So, here is where I created a French onion burger made with onion soup mixed and topped with marmalade. Using a packet of onion dip and seasoning mix is the easiest way to season a burger and make it taste absolutely incredible.

Now, don't be wary of this recipe. My husband is not the biggest onion fan, he would probably say he hates onions; but he LOVED this recipe! I am the biggest onion fan and this was perfect for me as well.

French Onion Burger

Have you tried my BBQ onion jam?! It is one of my most popular and favorited recipes. I typically just pair it with a classic turkey burger. Well, I stepped it up a notch and served it over my French onion burger.

Basically French onion soup, in burger form! Seriously, all you need is a packet of French onion seasonings and some ground chicken. Add my onion marmalade on top and you do not need anymore toppings.

Talk about a low ingredient, quick and delicious meal. This recipe has it all and more!!

Ingredients for French Onion Burger

The ingredients are very minimal for this French onion burger. Seriously, all you need is a packet of French onion seasonings and some ground chicken, for the burger part at least.

We are keeping it very minimal for the onion marmalade which goes on the burger as well. Plus, this can be completely option if you do not want to add it.

For the cooking instrument, we are keeping it simple. I made these on the stovetop. It suddenly decided to pour down rain so we could not use the grill, thanks Florida! However, these can be made on the grill, which I have before. In addition, these can be made in the oven, air fryer, or just about anything you have.

Seriously, all you need is a packet of French onion seasonings and some ground chicken, for the burger part.

  • Ground chicken breast
  • French onion seasonings mix
Ground Chicken

This recipe does not necessarily need ground chicken breast. However, I think that chicken goes great with French onion. Haven't you heard of French onion chicken?

I was keeping this recipe healthier and less fatty you could say. This is why I use 98% fat-free ground chicken breast. Regular ground chicken works fine as well. However, it has more fat. If you are doing WW (weight watchers), you will be mindful of which one you chose.

This recipe is great with ground turkey breast as well. They both have a similar flavor as compared to other meats. Again, if on WW, be mindful of choosing 99% fat free turkey. However, normal turkey works fine too.

French Onion Burger Seasoning

Now, this is important so pay attention. We will be using French onion dip and seasonings mix. Did you catch that, French onion dip and seasonings mix. This is not a soup recipe, leave the soup mixes at home.

Well you can make this French onion burger with onions soup mix but I do not like to. The soup mix is thicker and chunkier. The seasonings mix is more ground up, perfect for this.

It can be a little difficult to find in stores. You will not find this in the soup aisle with the soup mixes. This, at least in my local grocery store, is found in the condiments aisle. You know, where the ketchup and what not is. In my store, it is found on the top shelf, above the salad dressings. It is similar to a Ranch seasonings packet, and is found next to it.

Speaking of Ranch seasonings packet, if you want to make a similar healthy recipe, grab that Ranch and make my healthy homemade Ranch dip! A pretty similar recipe to this and is also great as a Weight Watchers zero point veggie dip.

There are a lot of varieties of onion dip mix that you can buy; however, I grabbed this one. This one is my favorite. It is also gluten free, if that is a concern for you.

Really, you do not need any other seasonings.

Add a burger bun too, if you want to. Keep this low carb, without a bun. Alternatively, add any bun of your choosing.

Want to Make You Own Dip Mix?

While I go the easy and lazy route for this French onion burger recipe with the mix packets, you can make your own.

To create your own French onion dip mix, combine the following ingredients:

  • Dried minced onion (1 tablespoon)
  • Dried parsley (1 tablespoon)
  • Onion powder (1 teaspoon)
  • Salt (ยผ teaspoon)
  • Garlic powder (โ…› teaspoon)

In addition, add some diced chives for extra onion flavor! But, it is not necessary.

Alternative Ways to Make the Burger

This burger with onion soup mix is incredible. But, I get it, not everyone wants to make that. An alternative way to make the patty, that would still be amazing with this onion jam, is a Worcestershire burger. Add the following ingredients, instead of the onion seasonings mix.

  • ยฝ teaspoon salt
  • โ…› cup fresh minced diced onion
  • ยฝ teaspoon garlic powder
  • โ…› cup Worcestershire sauce
  • ยฝ teaspoon oregano
  • ยฝ tablespoon panko breadcrumbs
  • ยผ teaspoon black pepper

Following the remaining instructions but use these seasonings. Using the Worcestershire makes it tastes more like a beef burger, while keeping it healthier.

Onion Jam Ingredients

I am a HUGE burger fan. And thereโ€™s nothing I love more on my burger than my BBQ Onion Jam. It adds to the flavor of any type of burger youโ€™re making. No cheese needed when the patty and topping are this good!

This is also a very simple recipe, only three ingredients are needed.

  • Onion
  • Brown Sugar
  • BBQ Sauce

Plus some water, but that does not really count.

Onion

This onion marmalade for the burger has some sweetness in it. Therefore, I like using a sweet vidalia onion. However, you can use a white or yellow onion, if that is that you have on hand. The onion jam is so rich and delicious that you really will not notice which onion you use.

Brown Sugar

I always, typically, use brown sugar replacement. It is easy grab a huge package from Amazon and that is what I always use. I do not mind using a replacement sugar. However, I know some people have concerns with that. You can substitute a brown sugar blend or just straight brown sugar.

The brown sugar really helps thicken the onion marmalade to put it on top of the burger. It is pretty necessary for this recipe.

BBQ Sauce

With the BBQ sauce, I choose to use a sugar free one. G Hughes is usually my go-to. You are more than welcome to use any of your favorite BBQ sauces. I want this recipe to be something you, enjoy and love, and that just speaks you.

Now that I think we have covered all the ingredients, substitutions and reasonings, let's make a French onion burger!

How to Make a French Onion Burger

Basically this is French onion soup, in burger form! Seriously, all you need is a packet of French onion seasonings and some ground chicken. Add my onion marmalade on top and you do not need anymore toppings.

To prepare, heat a large pan over medium heat, greased with cooking spray.

Burgers

Start by placing the ground chicken into a large bowl. Open the seasonings packet and sprinkle the entire packet over the ground chicken. Using your hands, thoroughly mix the seasonings into the meat.

Really, no other seasonings are required! A burger with onion soup mix is seasoning enough.

Form the meat into four equal sized patties. You can use your hands. Alternatively, use a burger press. Either way, be sure to grease your hands or the press very well with cooking spray as chicken is very sticky.

Add to formed patties to the heated pan and cook until thoroughly cooked, about 6 minutes per side, flipping once. Use a meat thermometer to know exactly when the chicken is done cooking.

Onion Jam

While burgers are cooking, start working on the onion marmalade.

To prepare, heat a small pan over medium to medium/high heat, greased with cooking spray.

Slice half the onion into thin strips, as thin or thick as you would like. Add to the pan and begin to cook. Sautรฉ and stir the onions until desired wellness, about 5-6 minutes.

Once the onions are softened to your likeness, reduce the heat to medium and add in the water and brown sugar. Stir together, then bring the temperature back up a little. Bring the mixture to a slight simmer and simmer until it has slightly thickened.

Pour in the BBQ sauce and bring back up to simmer. Simmer until the mixture reaches your desires thickness. However, remember that the mixture will thicken more once it has cooled.

Assemble your burgers and do not add any other toppings, because you do not need them! Really, no other toppings are required, not even cheese. This onion jam and French onion burger are so delicious that nothing else is needed. However, you are more than welcome to add anything that you want, of course.

Leftovers

This recipe makes 4 burgers. I typically make this with my husband. We will both eat a burger for dinner, then eat the two leftover patties for lunch. I might do a bun-less burger for lunch, to keep it light. The patties should be good in the fridge, in an air tight container, for about 4 days.

For the onion jam, I will typically store it in a separate air tight container. That will be good in the fridge for a couple days as well.

If you have leftover onion, make my crispy onions (which would also be good on this burger), onion rings, or copycat bloomin' onion.

With any leftover onion seasonings mix, make my zero point onion dip.

Plus, only three ingredients are really required and you can customize the rest as you see fit!

I have been obsessed with salsa con queso lately, it needs to be put on everything. It is basically a cheese sauce with some salsa in it. Slightly spicy, but really not spicy at all. It is perfect for everything, meals, appetizer or spoon snacking. Plus, it is the easiest way to add some flavor and creaminess to your meals. Mexican chicken and rice with queso should be topped with your favorite taco toppings.

What You Need for Chicken con Queso

This chicken and rice recipe can be made on the stovetop with one pot. I use one with tall sides as we will be pouring in some broth and doing a lot of mixing. This can also be made in the oven, which we will discuss later on.

You really only need three ingredients to make this chicken con queso, chicken, queso and rice. However, certainly substitute those for your favorite alternatives. There are a couple other ingredients; but, you can skip those or use an alternative. We will go over all of that.

  • Minced garlic
  • Diced onion
  • Ground chicken breast
  • Taco seasonings
  • Chicken broth
  • Rice
  • Salsa con queso

Minced garlic and diced onion are sautรฉed at the start of this recipe. Do you really need them? Not particularly. However; I do think it adds a bit of flavor. Plus, I love the texture of onion, I know, strange, but I do. It is always my philosophy that you cannot have too much garlic; therefore, we add the garlic! Diced bell peppers would also be amazing in this as well but mine were rotten.

Ground Chicken Breast

To keep this chicken con queso recipe lightened-up, and Weight Watcher's friendly, I use ground chicken breast. Make sure you are grabbing 98% fat-free ground chicken breast, if you are keeping this super lightened-up as I am. However, this can also remain a very healthy recipe by using 99% fat-free ground turkey breast. But, I prefer chicken as it is easier to break up, especially with a meat chopper. In addition, substitute the ground chicken for cubed chicken if that is your preference.

I make this with chicken; however, you can substitute it for many other meats. This recipe is amazing with chorizo, ground beef, sausage and so much more. If using a fatty meat, you may want to drain it before adding in the rice. For a more classic hamburger helper crunchy taco copycat recipe, use lean ground beef.

Taco Seasonings

I always have my homemade taco seasonings on hand, I make them exactly how I like them and I think they are better than anything you can buy. Plus, when you buy a seasonings mix, you never really know what is in it. This is the taco seasonings recipe that I live and breathe for, hey, I love tacos, and is perfect to season the meat for this chicken con queso recipe. However, you can also buy a packet, just use 2/2.5 tablespoons of it!

  • ยผย teaspoonย salt
  • 1ย teaspoonย chili powder
  • ยฝย teaspoonย paprika
  • 2ย teaspoonsย garlic powder
  • 2ย teaspoonsย onion powder
  • 1ย teaspoonย cumin
  • ยผย teaspoonย black pepper
  • ยฝย teaspoonย oregano

I like seasoning the chicken but the salsa con queso does have a lot of flavor to it if you wanted to skip the seasonings. I do not suggest it but you do you.

Chicken Broth

Typically, I have chicken broth on hand, and chicken broth goes vert well with chicken con queso, hence the chicken. It just has a very nice neutral, yet slightly meaty, taste to it. I usually make this dish with chicken broth; however, you can use another type of broth. Beef broth would be great if you are using ground beef or something similar. Additionally, you can do a water and broth concentrate mixture or just water. Any one of these options will work well. Just be mindful that I use low sodium broth and if you are using regular broth, you will have to adjust the salt content.

Rice

Any rice will work with this; but, be mindful as I use Publix extra long grain rice. Publix's extra long grain rice is my tried and true rice. I always have that on hand and use it for most of my recipes. If you are on Weight Watchers and have brown rice as a zero point food, you can certainly use that here; however, it does have a longer cooking time as opposed to the rice I love.

To lighten this up even further, use cauliflower rice. All you will need to do is cook the chicken on the stove, with the other garlic, onion and seasonings. Then, add in some cooked rice cauliflower and stir that in with the salsa con queso. There is no need for broth.

Salsa con Queso

We are going to need some salsa con queso with our Mexican chicken and rice. Salsa con queso is the secret ingredient here. It is an all in one seasoned salsa with queso, perfectly combined in a jar. Alternatively, try queso Blanco, which is similar. You can make your own salsa con queso at home, with some cheese, usually like a Velveeta, and some Rotel.

Alternatively, use your favorite salsa (or Rotel) and some shredded cheddar cheese; however, I love salsa con queso as it is an all in one, easy ingredient.

Taco Toppings

After this recipe is complete, grab your bowl and smother it with your favorite taco toppings.

  • Greek yogurt or sour cream
  • Jalapeรฑos
  • Shredded cheese
  • Salsa
  • Beans
  • Shredded lettuce
  • The list goes on!

I love this recipe with some extra sweet corn kernels. For a more exact copycat recipe of the Hamburger Helper crunchy taco, add some crushed up tortilla chips.

How to Make Chicken con Queso

This recipe is extremely easy to make, literally nothing about it is complicated. Plus, just grab one pot, for an easy cleanup. No fancy equipment required, just your stovetop is all you are going to need.

First, start with the prep work. Make sure to dice the onion and grab your pre-minced garlic and mince it yourself. Grab the remaining ingredients and get them ready to go.

Heat a pan over medium high heat, I like to use one with tall sides as we will be adding broth and doing some mixing. Grease with cooking spray then add in the diced onion and minced garlic. Sautรฉ those for about 2 minutes, then add in the ground chicken and let it brown for about two minutes per side.

After the chicken is browned on both sides, start breaking it up. Sprinkle on the taco seasonings and continue to break up the chicken, mixing until it is completely cooked.

Pour in the broth and the rice, pressing down the rice to fully cover it in the broth. Reduce the heat to low/low-medium. Bring the mixture to a slight simmer then cover the pot. Simmer until the rice is fully cooked and all the liquid is gone, about 15 minutes.

Then, fluff up the rice and add in the salsa con queso, mixing to combine. Divide into four equal bowls, about ยพ cup each, and add in your favorite taco toppings.

There we have it! A one pot chicken and rice recipe that is made on the stovetop, what could be better or easier.

Alternative Cooking Methods

This is an easy, stovetop chicken con queso recipe; however, make it in the Instant Pot as well.

Pressure Cooker

Turn the Instant Pot to the sautรฉ setting, greasing with cooking spray as it heats up. I use a non-stick bowl insert for easy clean up. Add diced onions and garlic. Sautรฉ garlic and onion for 2 minutes. Add in the ground chicken and sautรฉ for 1 minute per side. Turn off the Instant Pot and season the chicken with the taco seasonings, breaking up while you mix it all together.

Add the rice and the broth to the Instant Pot, pressing down the rice to cover in the broth. Cover the pot and secure the lid. Make sure the valve is sealing. Set the pressure cook button to 5 minutes and start it. Once completely cooked, let stand for 5 minutes. Then, vent and de-pressurize the pot to open the lid. Add in the salsa con queso, mixing to combine.

Oven

Try this in the oven as well; however, you will have to make the chicken on the stovetop. Cook the chicken in the dutch oven, to keep this a one pot recipe. Then, add the broth and rice and place in the oven. Bake at 375 degrees for about 25 minutes. It is easiest in a dutch oven; however, you can cook the chicken in a different pan on the stove, then transfer everything to a casserole dish to put in the oven.

Perfectly oven baked Jamaican jerk chicken tenders or strips with an authentic jerk seasoning blend and bbq sauce. If you like spicy and you like chicken, you are going to LOVE my jerk chicken strips. The chicken tenderloins are perfectly seasoned with my homemade authentic jerk seasoning blend then smothered in BBQ sauce and baked to make some delicious and juicy chicken. These are perfect for dinner, lunch or a quick appetizer. Plus, they go great with anything. You can put it on a salad, make a wrap, or it them on their own. You can add the BBQ sauce, like I do, or keep it more simple with just the seasonings.

These take about 15 minutes to make and only require chicken, BBQ sauce and seasonings.

Jerk Chicken Strips

Have you ever been to Jamaica? I went once, in I think 2012, with my entire family. All my immediate family, my aunts, uncles, cousins, grandparents. It was an event! It has been a while but I still remember that trip clearly and I still remember the Jamaican jerk chicken.

Jamaican jerk chicken is a classic dish on the island and available literally anywhere. Typically, you can get Jamaican jerk chicken thighs or breasts, or sometimes you can find some chicken wings. However, I am making this a little healthier and using lean chicken tenderloins. Who wouldn't want some Jamaican jerk tenders. But, if you want to keep this more of a classic dish, use my seasonings blend on anything you want.

Jamaican jerk chicken does not always have BBQ sauce on it; however, I like the addition of a good BBQ with this. You can, I have many times, make it without the BBQ sauce for more of a classic seasoned chicken strip.

What you Need for Jerk Chicken Strips

I typically make these in the oven, no fancy equipment! However, these are really good in the air fryer if you want something with a little more crisp to it.

To make jerk chicken strips, you need chicken strips, BBQ and seasonings.

  • Seasonings

I am making this Jamaican jerk chicken with some BBQ sauce. Jamaican jerk chicken does not always have BBQ sauce on it; however, I like the addition of a good BBQ with this. You can, I have many times, make it without the BBQ sauce for more of a classic seasoned chicken strip. I use sugar free BBQ sauce, to keep this healthier; however, use any BBQ sauce you like.

Authentic Jerk Seasoning

I love making a homemade authentic jerk seasoning blend. There are many different pre-made seasonings blend that you can purchase at a store; however, I get a little wary of those. With some seasonings blends, you may not know exactly what is in them. Some seasonings blends have additives such as sugar or wheat, and I do not want that. However, you are more than welcome to just used a pre-made seasonings blend.

I love making my authentic jerk seasonings blend in bulk. It is great to have on hand for just about anything you need. My husband loves spicy so he loves when I make my seasonings for him.

I will let you in on my secret blend but you can modify it how you want.

Seasonings Blend
  • onion powder (1 teaspoon)
  • garlic power (1 teaspoon)
  • chili powder (1 teaspoon)
  • brown sugar replacement (1 teaspoon)
  • parsley (1 teaspoon)
  • paprika (ยฝ teaspoon)
  • salt (ยฝ teaspoon)
  • ground red pepper (ยฝ teaspoon)
  • black pepper (ยผ teaspoon)
  • crushed red pepper (โ…› teaspoon)
  • cumin (โ…› teaspoon)
  • nutmeg (โ…› teaspoon)
  • cinnamon (โ…› teaspoon)
  • thyme (โ…› teaspoon)

That is how I make my seasonings blend, and it is perfect for one pound of jerk chicken strips. However, you can modify it how you want or use more of less.

I use brown sugar replacement because I am keeping it healthier and I really just like using it. However, if you are wary about using replacement sugars, you can substitute with regular sugar. In addition, if you do not want the sweet flavor, you can skip it. But, traditional jerk chicken does have some sugar in it.

I put a bit of salt in it; however, if you are watching your sodium, you can use less of it or none of it at all.

This is SPICY, there is no doubt about that. To make it less killer spicy, you can reduce or skip the ground red pepper and crushed red pepper. Alternatively, add more sugar. However, if you want it spicier, increase those two seasonings.

My recipe makes almost 2.5 tablespoons of seasonings mix, if using a pre-made blend, substitute with that amount.

How to Make Jerk Chicken Strips

Jamaican jerk tenders are one of the easiest recipes you can make, it is done in about 15 minutes. The hardest part is measuring all of the seasonings, which is really quite easy; however, as I mentioned, you can use a pre-made blend.

First, preheat the oven to 375 degrees. Then, like a baking tray with aluminum foil, spraying it with cooking spray.

Start off by mixing together all of the seasonings to make the jerk seasonings blend.

Lay the chicken tenderloins out flat, making sure they are not overlapping. If very wet, pat dry with a paper towel. However, mine are usually fine.

Sprinkle half the seasonings blend on the chicken tenderloins, pressing down to absorb into the chicken. After that, flip the chicken tenderloins over and repeat.

Place on the greased baking tray and bake for 4 minutes. Then, brush on half the BBQ sauce and place back in the oven for another 4 minutes.

Remove from the oven and flip over. Brush the other side with the remaining BBQ sauce and place back in the oven until fully cooked, about another 4-5 minutes.

You can brush on the BBQ sauce first; however, I like to let the tenders bake for a couple minutes first as this allows the BBQ sauce to spread easily, without disturbing the seasonings.

This makes for some delicious, juicy and flavorful Jamaican jerk tenders. These are also amazing in the air fryer, for more of a crispy coating.

This is seriously one of the easiest meals I have made, it really just takes three ingredients dumped into a crock pot and shredded it an hour or so later. What is Hawaiian pulled chicken? Well, to put it frankly, it is shredded chicken with pineapples and bbq sauce. Yeah, that is it. I like to add brown sugar, but you really do not have to. I am not even a huge pineapple fan, unless it is a piรฑa colada, but it is amazing on chicken! So, even if you are not a pineapple fan, you have to try it out.

First things first is a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock. If you do not have a crock pot, I will go over alternative cooking methods later on, stay tuned.

For this recipe, you basically need three ingredient, but I like to throw in some extra sugar too.

  • Chicken breast
  • BBQ sauce
  • Pineapples
  • Brown sugar
  • Broth
  • Garlic salt
Chicken Breast

This specific recipe works really great with chicken breast as they are amazing in the slow cooker. I used two chicken breasts that were 8 ounces each, for a pound total. You can substitute another cut of chicken or another type of meat if you want. I use chicken cutlets when I make this in the pressure cooker but I also use pork butt when I make this in the crock pot.

BBQ Sauce

For the BBQ sauce, you know me, I am using sugar free. You are more than welcome to use any BBQ sauce that you want, just be mindful of the brown sugar that you put into it. For reference, I use G Hughes sugar free BBQ sauce in the original, it is the best! This is one of the best BBQ pulled chicken recipes you could try so we are going to need a good BBQ sauce.

Pineapple

Pulled Hawaiian chicken needs some pineapple! The specific pineapple kind of matters, but also does not matter. Really, it is more of a personal preference. I prefer pineapple tidbits because they are very small, they come in a can in the canned fruit aisle at the store. Any canned pineapple that you want to use will work out fine. I have made this with crushed pineapple and pineapple chunks but I really do prefer the tidbits. Now, another thing to be cautious about is what is in the canned pineapple. Use a canned pineapple that is in 100% juice, we do not want any additives. Especially if you are on WW, added sugar will start to add points. But again, personal preference.

Brown Sugar

Finally, this recipe calls for brown sugar replacement as I use sugar free BBQ sauce. I make other versions of this recipe without brown sugar; however, the extra sugar with pulled meat is just so good. Hawaiian pulled chicken is sweet, that is just how it is. But, you can use regular sugar or just skip the sugar if you want to.

Broth

Now, do you really need broth? No. Do I like using it? Yes. I feel like it kind of helps keep the moisture in the chicken; however, you can honestly skip it or just use water. I use low sodium chicken broth but others work too, whatever you have.

How to Make Hawaiian Pulled Chicken

Pour the broth at the bottom of the crock pot. Place the chicken breasts at the bottom of the crock pot and sprinkle with the garlic salt. Pour on the pineapples, with the juice, the BBQ sauce and the brown sugar. Swirl the sauce together then place the lid on the crock pot. If using a meat thermometer, place that into the biggest part of the biggest piece of chicken before putting the lid on the crock pot.

Cook on low for 1.5 to 2 hours, until the chicken has reached an internal temperate of 165 degrees and is fully cooked. Remove the chicken to a bowl, as not to ruin the crock pot. Shred the chicken, it is easy with a hand mixer, then place back into the crock pot with all the juices, tossing to absorb all of the juices. This Hawaiian BBQ chicken sauce is amazing, you do not want to waste any of it.

Serve by itself, over rice or as a sandwich. This is one of the best BBQ pulled chicken recipes and it is amazing however you want to eat it!

Cooking Times

This recipe is for 1 pound of chicken, two 8 ounce chicken breasts. Typically, this takes anywhere from 1.5 hours to 2 hours, cooking times vary a lot so just be mindful of that. If you want to double this recipe, which I have, you will need to double the cooking time.

Alternatives Way to Cook

What if I want to make Hawaiian pulled chicken but do not have a slow cooker? Well, do not worry, let's go over some alternative ways to cook this Hawaiian pulled chicken.

Oven

Do you prefer baked chicken? Preheat oven to 400 degrees. Place chicken on a greased baking tray, sprinkling with the garlic salt. Bake for about 40 minutes, flipping halfway, until fully cooked. These were big chicken breasts and would take a while to cook. You can also butterfly them in half to speed up the cooking time. When there is about 10 minutes left, heat a medium sized pan on the stove over medium heat. Use one with tall sides as to not let the sauce splash around. Add the brown sugar, BBQ sauce and pineapple, bringing to a simmer, stirring occassionaly. When the chicken is done, shred using a hand mixture then add to the pan with the sauce. Toss everything around to absorb all the juices.

Pressure Cooker

I love making this in the pressure cooker. I will link the Instant Pot that I use here and also the non-stick bowl insert here that I love, it helps to keep your food from sticking while cooking and also makes clean up easy.

Start by greasing the bottom of the Instant Pot with some cooking spray. Sprinkle the chicken cutlets with a little bit of garlic salt. Place the chicken cutlets at the bottom of the bowl. Add in the same ingredients, broth, bbq sauce, sugar and pineapples, giving it all a little swirl. Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 15 minutes and start it. Once completely cooked, let set for 5 minutes, then vent and de-pressurize the instapot then open the lid. Remove the chicken, shredding it with a hand mixer, then place back in the bowl and toss to absorb all of the juices.

Now do I really see a difference between making this Hawaiian pulled chicken in the slower cooker versus the pressure cooker? I feel like the debate is still out.

Stove Top

Cook the chicken on the stove top, over medium high heat, sprinkled with the garlic salt. Cook until it is almost fully cooked. Mix together the BBQ sauce and pineapple, then pour over the almost cooked chicken. Put a lid on your pan and steam/cook until the chicken is fully cooked and the pineapple/bbq is heated up. This is difficult with a large chicken breast and works better with thinner cutlets or tenderloins.

Remove the chicken, shredding it with a hand mixer, then place back in the pan and toss to absorb all of the juices.

Air Fryer Baby Potatoes

Air fryer baby honey gold potatoes are mini but pack a punch as they are diced then air fried to perfection. This is a much quicker way to make potatoes, and they provide a nice little crunch to them. Think French fries, but diced potatoes. I love potatoes. I truly love potatoes in all shapes, sizes and forms. Give me tater tots, give me waffle fries, give me mashed potatoes, scalloped potatoes, I do not care. But, you know the worst part about potatoes, they take forever to cook. You need to cook potatoes all the way. Who wants a hard potato, but who wants to wait forever for a soft and delicious potato! Air fryer baby potatoes cook in almost half the time as oven potatoes, are just as delicious, but pack a nice crunch to them.

This is a quick and easy recipe that will be done in less than 20 minutes. All you need to do is cut, season, then air fry! It cannot get more simple than that.

Air Fryer Baby Potatoes

Would you consider potatoes a vegetable. I mean, I wouldn't, but my dad calls potatoes his favorite vegetable. If I could eat fries and call them a vegetable, I would be one happy gal. As far as carbs go, I would say potatoes are not too bad. At least roasted potatoes, or in this case air fried baby potatoes. We are not dunking them in oil or anything crazy. The potatoes will just be diced then placed in the air fryer. I guess it does mimic being fried, especially when spray with cooking spray, but still healthier than takeout fries.

What You Need for Air Fryer Mini Potatoes

First things first will be an air fryer. You can use a rack type air fryer but I prefer a basket type air fryer for this recipe. I prefer a basket type air fryer with little things, such as baby potatoes, because then everything is not rolling around or falling down. With a basket air fryer, all of the mini potatoes are corralled in one container. It also makes it easier to flip the potatoes as you can just shake the basket around.

Now, for the ingredients, we will just need some potatoes, oil and seasonings.

  • Baby potatoes
  • Oil
  • Seasonings
  • Cooking spray

Use less oil if you are being conscious about weight watchers points, calories, or just the amount of oil you use in general.

Baby Potatoes

Honey gold potatoes are key here. I mean, not really, you can use any potato. But I absolutely love honey gold potatoes. They are also called 'Nibbles' at my grocery store. What are honey gold potatoes? They are a buttery flavored, bite-sized potato that has a semi-sweet taste to them. I love butter and I love sweet so I love these potatoes.

Honey gold potatoes can be big or small. This recipe is for baby potatoes; however, they do have normal or larger sized honey potatoes. You can certainly use those but make sure to be cutting them up smaller. The baby ones are typically in a bag already.

We will be adding some more butter flavor to these potatoes, which is why I love the honey gold ones, they already provide a nice base butter flavor. However, you can use any potatoes you want for this recipe. The actual potato does not matter too much. Try this with fingerling or red potatoes.

Seasonings

Adjust the seasonings to your likeness. I will provide a good solid base for you, but, like anything, adjust them how you like them. Are you not a crazy garlic fanatic like I am? No worries, add less! Also, minced garlic tends to burn, especially in the air fryer. So just be mindful of that when using minced garlic as I do. Do you need a low salt recipe? Great! Add less or no salt.

If you are looking for something spicy, try adding in some ground red pepper and paprika. Then, drizzle with some Mike's hot honey after they go in the air fryer. It is truly perfection.

For my seasonings, I like to do a classic garlic and onion with some Italian flavoring in there. I typically do the following:

  • Minced garlic
  • Garlic powder
  • Onion powder
  • Seasoned salt
  • Italian seasonings
  • Basil
  • Rosemary
  • Thyme

However, use your favorite seasonings or adjust mine to your liking.

How to Make Air Fryer Baby Potatoes

First things first will be grabbing an air fryer. You can use a rack type air fryer but I prefer a basket type air fryer for this recipe. I prefer a basket type air fryer with little things, such as baby potatoes, because then everything is not rolling around or falling down. It also makes it easier to flip the potatoes as you can just shake the basket around.

Preheat the air fryer to 400 degrees and then begin the prep work, don't worry, it is not much.

Begin by cutting up the potatoes into bite-size pieces. You will need to wash them first, if not already. Make sure you are cutting the potatoes into equal sizes so they air fry evenly. You do not want half burnt potatoes and half raw potatoes, ya know. You will be cutting some of the potatoes in half, into third and into fourths and so on. The potatoes do not come out the same size, that is why we are cutting them up into equal pieces.

Next, place all the potatoes in a bowl and drizzle with oil, tossing to coat. Sprinkle with the seasonings and toss to coat.

Open the air fryer and grease with cooking spray. I prefer a butter flavor cooking spray. Place the potatoes in the air fryer, trying to get them into a single layer. Air fry for 12 to 13 minutes, or until your liking.

Halfway through, toss/shake up the potatoes and spray with butter spray. Alternatively, you can just grease them again with cooking spray. These will be the most delicious air fryer diced potatoes! Air fried baby potatoes have like a French fry crisp but are not fried in oil.

Alternative Recipes

If you do not have an air fryer, or do not want to air fry, try out my roasted red potatoes, crispy smash potatoes or roasted potatoes and carrots. Alternatively, try my sheet pan sausage and potatoes or lighter mashed potatoes.

So, what should you pair with these delicious air fryer mini diced potatoes. I have tons of main dish recipes that would be perfect for these, such as, a bacon wrapped chicken tenderloin, crock pot pork tenderloin, garlic butter chicken thighs, or homemade blacked chicken strips.

Plus, I have tons of vegetables you can add to your meal. You can try my maple bacon Brussels sprouts, garlic parmesan zucchini chips, or ranch carrot bites, which also all use the air fryer. If it is in season, if you are reading this between September and November, you have to pair this with some delicata squash, another air fryer vegetable.

There are so many delicious options to choose from when you make these potatoes.
