The best recipe for an Asian style stir fry using ground chicken with a sugar free and gluten free sauce.ย 

If you know me, my absolute favorite thing in the world is takeout food. I love making "fakeout" dishes; but, sometimes they take a while. I wanted to create something simple, and delicious, yet packed with flavor, protein and veggies. That's why I love making my ground chicken stir fry! It is one of the easiest things to make and is smothered with a delicious gluten free and sugar free stir fry sauce.

You can serve this over noodle, rice, as a salad, or just on its own! It is also really good with riced cauliflower or as an egg roll in a bowl type of dish.

What You Need to Make the Best Ground Chicken Stir Fry Recipe

As I mentioned, this is a gluten free and sugar free stir fry sauce; however, it is very easy to modify the ingredients if you do not need or want that.

I make this more of a neutral to slightly sweet dish; however, you can spice it up. Typically, I use ground chicken for this recipe; however, you can also use this sauce to marinate chicken strips. I make this Asian stir fry with chicken. But, you can also substitute ground beef if you prefer a red meat. Don't forget to serve your ground chicken stir fry over rice or noodles and add any more vegetables.

  • Bell pepper
  • Onion
  • Soy sauce
  • Brown sugar
  • Sesame oil
  • Garlic
  • Ginger
  • Ground chicken

Let's go over some suggestions and substitutions

Soy Sauce

I use a low sodium soy sauce so keep that in mind when adding your salt. However, you can use a regular soy sauce, just make sure to be mindful of the other ingredients. If you are using this for a gluten free

Brown Sugar

I always, typically, use brown sugar replacement and ground chicken stir fry is no exception. It is easyย grab a huge package from Amazon and that is what I always use. I do not mind using a replacement sugar. However, I know some people have concerns with that. You can substitute a brown sugar blend or just straight brown sugar.ย 

Honey can be common in a ground chicken stir fry recipe and you can also substitute that for the brown sugar.

Sesame Oil

Just your typical sesame oil. However, if you are trying to cut back some oil, you can skip this ingredient.

Garlic and Ginger

You can used minced garlic and ginger but you can also use the powder/ground version if you do not have the other.

Pepper

Just your normal bell pepper. If you want to spice this up, add in a little jalapeรฑo pepper.

Onion

I prefer a white or sweet onion in this recipe. Use a sweet onion if you want to keep things sweeter or just the white onion for a neutral flavor.

Ground Chicken

I make this Asian stir fry with chicken but, try this with ground beef if you prefer a red meat. Typically, I will use a 99% fat-free ground chicken breast; however, you can substitute a different fat percentage. I think the best stir fry recipe is with ground chicken but, I am very biased towards it.

You can also use this recipe to marinate some chicken (or steak) strips and make a stir fry from that.

Making This Spicier

If you want to make this dish spicy, add some chili flakes into the seasonings or sautรฉ some jalapeรฑo with the bell pepper. You can also reduce the amount of brown sugar if you do not want it to be that sweet. I really love adding in some Mike's hot honey as well.

I also love adding 2 tablespoons of sweet chili sauce into this for a little kick!

How to Make The Best Ground Chicken Stir Fry Recipe

Start by mixing all the ingredients for the gluten free and sugar free stir fry sauce together in a small bowl and set that aside.

Dice the onion and pepper.

Heat a medium sized pan over medium high heat. Grease with cooking spray.

Once heated, add the pepper and let that cook for 4 minutes. Then, add the onion and let that cook for another 2-3 minutes. Add the ground chicken and start breaking that up, a meat chopper works great for this. Sprinkle with all the seasonings and continue to break up while cooking.

Once fully cooked, add the stir fry sauce in and bring to a simmer. Simmer for 5 minutes to allow the sauce to thicken and the flavors form together.

I also love adding 2 tablespoons of sweet chili sauce into this for a little kick!

Make a Stir Fry Bowl Recipe

I love serving ground chicken stir fry over some rice or noodles. You have to try my instant pot rice, it makes the best rice. But, you can also use a rice cooker. Then, serve with broccoli or another vegetable. My crunchy crack broccoli recipe works amazing in this bulgogi bowl.

Ingredients
 

Sauce

  • 3 tablespoons soy sauce low sodium
  • 2 tablespoons brown sugar replacement

Bulgogi beef has been all the rage! It is a deliciously flavorful dish that can be anywhere from sweet to spicy. I absolutely love it with ground beef and served with rice and broccoli.

Have you tried a Bulgogi ground beef recipe? I would call it more of a "neutral" dish. It is not too sweet, but not too spicy. It doesn't have any strong flavors such as orange chicken would.

I like to get as lean as a meat as possible. I typically do a 96% fat-free ground beef; however, you can also do any percentage that you like.

The corn starch is used if you need to thicken up the sauce. You will combine the corn starch with water to make a slurry and slowly stir that into the dish once done. But, if the sauce if thick enough for you, you can skip the slurry.

Making This Spicier

If you want to make this bulgogi ground beef dish spicy, add some chili flakes into the seasonings. You can also reduce the amount of brown sugar if you do not want it to be that sweet.

Cooking Frozen Chicken Breast in Instant Pot

Did you know that cooking frozen chicken breast in the instant pot is extremely easy and works great for tons of recipes?ย 

Ever forget to take your meat out of the freezer? Don't worry, I know the best way to make a frozen chicken breast. Plus, it only takes 12-ish minutes to cook in the instant pot! They come out so juicy and delicious.

Did you know that cooking frozen chicken breast in the instant pot is extremely easy and works great for tons of recipes?

What You Need for Instant Pot Frozen Chicken Breast

First things first is an instant pot of course. I use the original instant pot brand and I love using the non-stick bowl insert easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

  • A liquid
  • Frozen chicken breast, or breasts
  • Seasoning

You are going to need a liquid which will make the instant pot come to a pressure. This will also keep the chicken very moist and juicy. I typically go with a low sodium chicken broth; however, you can substitute water, pineapple juice or various other liquids.

Next, you will obviously need some frozen chicken breasts. I just grab a pack at Publix or Butcher Box and I usually have some in my freezer. But, you can buy a bag of them at Costco or really anywhere.

Finally, some seasonings. Use can keep it plain with some salt and pepper. Spice it up with some taco seasonings. I used a chicken seasonings blend that I got online; however, really anything will work.

How to Make Instant Pot Frozen Chicken Breast

You can add the wire rack that comes with the Instant Pot. However, I prefer to just put the chicken straight into the liquids at the bottom. This will make the chicken fall apart more easily; however, I really like that. If you want a more 'firm' chicken, use the wire rack.

Pour the broth at the bottom of the Instant Pot. Add the chicken on top and sprinkle on the seasonings.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 13 minutes and start it. If the chicken is stuck together, add an extra 2 minutes. However, please note that cooking times can vary widely depending on the side and thickness of your chicken breast.

Once completely cooked, let set for 1 minute, then vent and de-pressurize the instant pot then open the lid.ย 

If it is slightly underdone, you can always pop it in the microwave for a couple seconds.

Cooking Frozen Chicken Breast in Instant Pot

How Much Seasoning Should I Use?

For 1.25 pounds of frozen chicken, I typically use 2-3 tablespoons of seasonings as some will transfer off the chicken from the broth in the instant pot. However, it will really depend on exactly which seasonings you are using.

In addition, I like to also make my own blend. I find a really good blend is lots of garlic powder (1 tablespoon), lots of Italian (2 teaspoons), a bit of onion powder (ยฝ tablespoon), and some salt, pepper and paprika. However, modify or change as you see fit.

Making More Chicken

Always use at least 1 cup of broth, or liquid, as that is the minimum needed to not get the burn warning on your instant pot. I use 1 cup no matter how much chicken I am making. In addition, I usually keep the same time for different amounts of chicken.

What To Do With These Chicken Breasts

With your deliciously cooked chicken tenders, you can eat them with a fork and knife and dip them into some sauce, which is my favorite. I love to dip them in some sugar free G Hughes BBQ Sauce. However, you can make your own sauce as I have tons of recipes.

Alternatively, this is great as a meal prep as you can put an instant pot frozen chicken breast into a wrap or cut them up into a salad. I say you can leave them in your fridge, in an air tight container, for four days.

I also love to add some salsa to the instant pot and then shred the chicken up. Somewhat similar to my instant pot shredded taco chicken; however, this recipe is from a frozen chicken.

Another great way to use the chicken is to shred them! Add some BBQ sauce and you have a healthier version of a pulled BBQ sandwich. But, no matter how you eat them, I know you will love them.

Ingredients
 

  • 1 cup water or broth
  • 1 pound chicken breast frozen
  • 3 tablespoons seasonings

Instructions

  • You can add the wire rack that comes with the Instant Pot. However, I prefer to just put the chicken straight into the liquids at the bottom. This will make the chicken fall apart more easily; however, I really like that. If you want a more 'firm' chicken, use the wire rack.ย 
  • Pour the broth at the bottom of the Instant Pot. Add the chicken on top and sprinkle on the seasonings.ย 
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 13 minutes and start it. If the chicken is stuck together, add an extra 2 minutes. However, please note that cooking times can vary widely depending on the side and thickness of your chicken breast.ย 
  • Once completely cooked, let set for 1 minute, then vent and de-pressurize the instant pot then open the lid.ย ย

An air fryer is the absolute best way to make a turkey tenderloin, you can even put two tenderloins in there at once! I coat mine with maple syrup and it creates such a crispy and delicious crust.

Have you ever tried cooking your turkey tenderloin in the air fryer? Try brushing it with maple syrup too! It creates a crispy and sweet crust. Plus, the inside is so juicy and tender. The best of both worlds!

Where Did It All Begin?

I have been obsessed with crock pot pork tenderloin since I made it for New Year's. Someone asked if I made it with turkey tenderloin yet. I had never even heard of turkey tenderloin! I was so excited that I immediately started recipe testing.

That is where I created my crock pot turkey tenderloin. Then, I decided to make it easier and quicker with an instant pot turkey tenderloin. But, I couldn't stop there, I had to try out another cooking method and that is where we get air fryer turkey tenderloin.

I love how this makes such a delicious and crispy crust. I had to make it brown sugar and maple glazed really help crisp up the crust. It was AMAZING!

You can use this general recipe for air fryer turkey tenderloins and put your own spin on it. If you do not want something sweet, use a garlic and herb recipe or a BBQ recipe. But, this can just be your basis for cooking the turkey tenderloins in an air fryer.

What You Need to Make a Turkey Tenderloin

First off, you will need an air fryer, you can use a basket type air fryer; but, I really like a rack type air fryer as well. 

The ingredients are very simple as I like to let the maple syrup do all the talking.

  • Turkey tenderloin
  • Garlic salt
  • Brown sugar
  • Maple syrup

I absolutely love adding a little bit of garlic salt to sweet recipes. The mix of the salt and garlic to counteract the sweetness of the recipe is amazing. But, if you don't want to use that, you can just do some salt and pepper or just add a little but of onion powder.

I always, typically, use brown sugar replacement. It is easy grab a huge package from Amazonand that is what I always use. I do not mind using a replacement sugar. However, I know some people have concerns with that. You can substitute a brown sugar blend or just straight brown sugar. The sugar really helps caramelize the crust and make it super crispy!

Again, with the maple syrup, I use a sugar free substitute. However, you can certainly use the normal kind or another favorite.

I also like to grab grab a meat thermometer and have that on hand to make sure my tenderloin is fully cooked.

You can use this general recipe for air fryer turkey tenderloins and put your own spin on it. If you do not want something sweet, use a garlic and herb recipe or a BBQ recipe. But, this can just be your basis for cooking the turkey tenderloins in an air fryer.

Where to Find Turkey Tenderloin

I get this question A TON, where do I find turkey tenderloin in the grocery store? Well, in my grocery store, which is typically Publix, there is a whole tenderloin section. It is in the meat department, with all the other fresh meats; however, off to the side. There are mostly pork tenderloins; however, you can usually find a turkey one.

This is what it looks like. I can usually only find the Jennie-O brand.

How to Make a Turkey Tenderloin in the Air Fryer

Start by preheating the air fryer to 400 degrees.

Take the turkey tenderloin out of the bag and pat it dry, it is usually pretty damp. I use one turkey tenderloin; however, you can use both. They measure about 12 ounces each.

Sprinkle garlic salt onto both sides of the tenderloin. Then, pack the brown sugar onto all parts of the tenderloin.

Grease the air fryer tray and place the tenderloin in the air fryer. Air fry for 10 minutes.

Open the air fryer, brush on half the maple syrup. Then, flip the tenderloin over and brush on the remaining maple syrup. Air fry for another 8-10 minutes, until fully cooked.

Let it rest before slicing. I like to cut this tenderloin into smaller pieces. I will do 9 pieces, which is 3 pieces per serving.

Potatoes and turkey tenderloin are the best combination! You can serve this with myย roasted red potatoes. However, it is really good with someย scalloped potatoesย orย air fryer baby potatoes.ย 

But, for the vegetable, try someย garlic parmesan zucchini chipsย or myย one point spaghetti squash Alfredo.

Frozen Chicken in the Crock Pot

One of the easiest recipes for a frozen chicken breast is to place it in a crock pot, cover with salsa, and cook it! That is really all it takes. A couple hours on low and you go from freezer to table with LITTLE effort.

What do I do with crock pot salsa chicken? I love shredding up the chicken and adding it to tacos, on rice bowls or in salads. You can even keep the chicken whole or slice it up.

You can use this recipe for fresh chicken breasts, a different cut of chicken or even with a different sauce/seasoning.

This crock pot chicken breast is one of the best recipes for tacos! I usually shred it and use it as the taco meat. Another one of my favorite (seen on the right) is my sweet asian taco meat.

What Do you need to make some frozen salsa chicken in the crock pot

First things first is a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

  • Frozen chicken breast
  • Salsa
  • Taco seasonings (optional)

Yes, that is all.

I use a pound of frozen chicken breast; however, you can make this recipe with fresh chicken breasts. In addition, you can substitute a different cut of chicken, such as tenderloins or thighs, if you prefer that.

I typically use store bought salsa to make this recipe. That is to keep it very easy and simple. I love grabbing a fresh salsa from the deli section or using my favorite jarred version. However, you can also make your own salsa. Try out my homemade skinny salsa recipe.

Seasonings

I typically will add taco seasonings onto the chicken because I love flavor and needs tons of flavor in all my dishes. However, if you find that just the salsa is good enough, you can skip the taco seasonings.

I always have my homemade taco seasonings on hand, I make them exactly how I like them and I think they are better than anything you can buy. Plus, when you buy a seasonings mix, you never really know what is in it. However, this frozen chicken in the crock pot recipe is supposed to be very easy so you can always buy a packet.

This is the taco seasonings recipe that I live and breathe for, hey, I love tacos, and is perfect to season the pork for this recipe. However, you can also buy a packet, just use 2/2.5 tablespoons of it!

  • ยผ teaspoon salt
  • 1 teaspoon chili powder
  • ยฝ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • ยผ teaspoon black pepper
  • ยฝ teaspoon oregano

Adjust any of these seasonings to your liking in this recipe, or just omit them. This mix is not spicy; however, you can make it spicier with the addition of ground red pepper. However, if you are watching your salt, you can reduce that as well. But I do not think there is too much salt in this.

How to make frozen chicken in the crock pot

I suggest using one of these crock pot liners for easy clean up, situate that on the crock pot first. You can add in 2 tablespoons of water or chicken broth to keep the chicken moist.

Add the frozen chicken breast to the bottom of the crock pot. Pour on the salsa and the seasonings, giving it a little stir.

Place the lid on the crock pot and cook on low for 2.5 to 3 hours. If using fresh chicken, cook for 1.5 to 2 hours. When the chicken has thawed enough (1.5 to 2 hours), I like to put in a meat thermometer to monitor the chicken. Make sure the chicken is fully cooked before removing it from the crock pot.

I like to shred my chicken (using a hand mixer) and use it in tacos, rice bowls or salads. Then, I will add it back into the salsa in the crock pot. to allow all the juices to absorb into the chicken. However, you can eat it whole or cut into slices.

Other Flavors to Try

You can also use this recipe to make the frozen chicken in the crock pot; however, try out different flavors. Try out a BBQ sauce flavor or an Italian flavor using jarred dressing.

Make frozen chicken tenderloins in the instant pot, the tenders come out juicy and delicious, itโ€™s the only way to make a chicken tenderloin. 

Ever forget to take your meat out of the freezer? Don't worry, I know the best way to make a frozen chicken tenderloin. Plus, it only takes 6 minutes to cook in the instant pot! They come out so juicy and delicious.

Make frozen chicken tenderloins in the instant pot, the tenders come out juicy and delicious, itโ€™s the only way to make a chicken tenderloin.ย 

What You Need for Instant Pot Frozen Chicken Tenderloins

First things first is an instant pot of course. I use the original instant pot brand and I love using the non-stick bowl insert easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

  • A liquid
  • Frozen chicken tenderloins
  • Seasoning

You are going to need a liquid which will make the instant pot come to a pressure. This will also keep the chicken very moist and juicy. I typically go with a low sodium chicken broth; however, you can substitute water, pineapple juice or various other liquids.

Next, you will obviously need some frozen chicken tenderloins. I just grab a pack at Publix and I usually have some in my freezer. But, you can buy a bag of them at Costco or really anywhere.

Finally, some seasonings. Use can keep it plain with some salt and pepper. Spice it up with some taco seasonings. I used a chicken seasonings blend that I got online; however, really anything will work.

How to Make Instant Pot Frozen Chicken Tenderloins

You can add the wire rack that comes with the Instant Pot. However, I prefer to just put the chicken straight into the liquids at the bottom. This will make the chicken fall apart more easily; however, I really like that. If you want a more 'firm' chicken, use the wire rack.

Pour the broth at the bottom of the Instant Pot. Add the chicken on top and sprinkle on the seasonings.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 6 minutes and start it. However, if using fresh chicken tenderloins, reduce the time by 2 minutes.

However, these are small to normal sized tenders, if your tenders are bigger, add a minute or two.

Once completely cooked, let set for 3 to 5 minutes, then vent and de-pressurize the instant pot then open the lid.

How Much Seasoning Should I Use?

For 1.25 pounds of frozen chicken tenders, I typically use 2-3 tablespoons of seasonings as some will transfer off the chicken from the broth in the instant pot. However, it will really depend on exactly which seasonings you are using.

In addition, I like to also make my own blend. I find a really good blend is lots of garlic powder (1 tablespoon), lots of Italian (2 teaspoons), a bit of onion powder (ยฝ tablespoon), and some salt, pepper and paprika. However, modify or change as you see fit.

Making More Tenders

Always use at least 1 cup of broth, or liquid, as that is the minimum needed to not get the burn warning on your instant pot. I use 1 cup no matter how much chicken I am making. In addition, I usually keep the same time for different amounts of chicken.

What To Do With These Chicken Tenderloins

With your deliciously cooked chicken tenders, you can eat them with a fork and knife and dip them into some sauce, which is my favorite. I love to dip them in some sugar free G Hughes BBQ Sauce. However, you can make your own sauce as I have tons of recipes.

Alternatively, this is great as a meal prep as you can put an instant pot frozen chicken tenderloin into a wrap or cut them up into a salad. I say you can leave them in your fridge, in an air tight container, for four days.

Another great way to use the tenders is to shred them! Add some BBQ sauce and you have a healthier version of a pulled BBQ sandwich. But, no matter how you eat them, I know you will love them.

Instant Pot Chicken Thighs

Make these delicious honey butter boneless chicken thighs in the instant pot, plus, you can even make them when frozen.

Have you ever made my honey butter chicken? I am stepping it up with some honey butter instant pot chicken thighs! They take less than 20 minutes to make and the skin comes out so crispy. Plus, you can even make these from frozen chicken thighs, in case you forgot to set your meat out.

Make these delicious boneless chicken thighs in the instant pot, plus, you can even make them when frozen.

What You Need for Instant Pot Chicken Thighs

First things first is an instant pot of course. I use theย original instant pot brandย and I love using theย non-stick bowl insertย easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

If you do not have an Instant Pot, try out my garlic butter chicken thighs.

  • Olive oil
  • Light margarine
  • Honey
  • Garlic salt
  • Boneless chicken thighs
  • Chicken broth
Olive Oil

You can use almost any type of oil here. However, I prefer to use a nice olive oil.

Light Margarine

Okay, I know these are honey butter chicken thighs, but I call anything similar to butter, well, butter. I use ICBINB Light for almost all of my recipes. I was born and raised on ICBINB; however, if you want to substitute butter or something similar, go ahead.

Honey

Just your normal honey that you find at the store. However, if you want to make this dish spicy, substitute Mike's Hot Honey.

Garlic Salt

I use garlic salt to make these Boneless chicken thighs in the instant pot. I like to add a little bit of garlic into almost all of my dishes and I love some salt. However, you can pick different seasonings if you want. You can do more herb-y seasonings or more spicy seasonings.

Boneless Chicken Thighs

I specifically used boneless, skin on, chicken thighs. However, if you use bone-in or skinless, we can go over some suggested cooking times later on.

You can also use this recipe with a more lean cut of meat.

Instant pot chicken thighs

How to Make Instant Pot Chicken Thighs

We can go over two different methods for cooking these chicken thighs in the Instant Pot, plus, how to cook them frozen. The first method is my favorite, because you only need one tool; however, the second method makes a great crispy skin and only needs an added oven.

Set the Instant Pot to the sautรฉ method. Add the oil and allow it to heat up.

Sprinkle the chicken thighs with the garlic salt.

Add in the chicken thighs, skin side down, and sautรฉ 3-4 minutes, until browned. Flip over and sautรฉ for another minute. Turn the Instant Pot off. Add ยผ cup of chicken broth.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 8 minutes and start it. If using frozen chicken thighs, add an extra 5 minutes. If the chicken is skinless, deduct a minute from the cooking time.

While the chicken is cooking, mix the honey and butter together in a small bowl.

Once completely cooked, let set for 5 minutes, then vent and de-pressurize the instant pot then open the lid.ย 

Plate the chicken thighs and top with the honey butter mixture, while still hot.

Oven Method

Sprinkle the chicken thighs with the garlic salt. Add the chicken thighs to the instant pot, skin side down. Add ยผ cup of chicken broth.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 8 minutes and start it. If using frozen chicken thighs, add an extra 5 minutes. If the chicken is skinless, deduct a minute or two from the cooking time.

Once completely cooked, let set for 5 minutes. While the Instant Pot is de-pressurizing, preheat the broiler on the oven. Then vent and de-pressurize the instant pot then open the lid.ย 

Grease a baking tray with cooking spray. Then add the chicken thighs, skin side up. Broil in the oven for 5-10 minutes, or until browned and completely cooked.

While the chicken is cooking, mix the honey and butter together in a small bowl. Plate the chicken thighs and top with the honey butter mixture, while still hot.

Need an easy but flavorful dish? Try out my pesto chicken! All it takes is two ingredients as less than 20 minutes. Serve it with the tomato and feta pasta and you have a delicious caprese meal.

My mom and I came up with this recipe when we first started doing Weight Watchers. Pesto Sauce was always a staple in our home but, as you know, it is not very healthy. So, we decided to lighten it up!

Lightened Up Pesto Sauce

My mom always has fresh basil in her garden so we experimented until we found the perfect recipe. I use this for a ton of different dishes. It is great on pasta, on mac and cheese, to dip veggies or bread.

  • Basil
  • Chicken broth, fat-free
  • Garlic, minced
  • Lemon juice
  • Salt
  • Garlic powder
  • Onion powder
  • Oregano
  • Black pepper

All you have to do it add all ingredients to a blender and blend until smooth.

What You Need for This Chicken

All you need is pesto and a chicken breast! You can use my low calorie, reduced fat pesto recipeย or buy a jarred version (this is my favorite) of your favorite pesto. You will need 5 tablespoons on pesto, or almost a โ…“ cup.

Then, grab your favorite cut of chicken. I use chicken cutlets as they are thin and the perfect size for this recipe. However, if you use a different cut of chicken, you may need to adjust cooking times.

I also love drizzling some balsamic vinegar over the chicken; however, it is not necessary.

My favorite thing to pair this pesto chicken with is some tomato and feta pasta! You know, the TikTok trend. It makes a caprese dish!

How to Make Pesto Chicken

Start by preheating the oven to 400 degrees and lining a baking tray with cooking spray.

Spread the pesto sauce on all sides of the chicken breast cutlets, about 1 tablespoon for each piece.

Place on the greased baking tray. Bake for 15-16 minutes, flipping halfway. Be sure the chicken is fully cooked before removing it from the oven.

I also love drizzling some balsamic vinegar over the chicken; however, it is not necessary.

Pair this with the TikTok feta tomato pasta for a caprese dish. You can grab the full recipe here. But, basically all you do is add feta and tomatoes to a casserole dish. Bake that in the oven at 425 degrees, until the tomatoes are soft and the cheese is melt-y. Mush everything together and add in some cooked pasta!

Try grilling or air frying the chicken as well.

Air Fryer Chicken Tenderloins

These air fryer chicken tenders are breadless, non breaded, or have no breading, whatever you call it, and are the most delicious way to make chicken tenderloins.

Making chicken tenderloins in the air fryer is the easiest, and best, way to do it! They come out perfectly cooked and super moist on the inside. Plus, it takes less time than the traditional oven or stovetop way.

I made these chicken tenderloins in the air fryer with a buffalo BBQ sauce to create a super delicious glazing on the outside.

Air fryer chicken tenders are breadless, non breaded, or have no breading, whatever you call it, and are the most delicious tenderloins.

I served these with a delicious creamy honey mustard, to tone down a little bit of the heat. To make this, I combined equal parts of G Hughes honey mustard and plain, nonfat Greek yogurt.

What You Need to Make Chicken Tenders in the Air Fryer with no Breading

First off, you will need an air fryer, you can useย a basket type air fryer; but, I really likeย a rack type air fryerย as well.ย However, you can also make them in the oven. I will go over both directions.ย 

  • Chicken tenderloins
  • Seasoned salt
  • Buffalo sauce
  • BBQ Sauce

I love using this recipe to make chicken tenderloins; however, you can use another cut of chicken. Try out chicken nuggets (cutting up some chicken), chicken breast or chicken thighs. However, be mindful of cooking times and cook the chicken completely.

I add some seasoned salt because I love salt. The buffalo sauce and BBQ sauce provide lots of flavor; however, I just like to add a little more. You can use or skip the seasoned salt. In addition, you can use different seasonings like some paprika, pepper, or anything else you may like.

I make these air fryer chicken tenderloins buffalo style; however, I added some BBQ sauce for some more flavor and to keep it a little less spicy. You can use any brand of either sauce that you love, I typically use G Hughes for the BBQ sauce. However, any brands will work.

How to Make Non-Breaded Chicken Tenders

Start by preheating your air fryer to 400 degrees. Grease your air fryer with cooking spray.

Combine the BBQ sauce and buffalo sauce together in a small bowl.

Season the chicken tenderloins with seasoned salt, on both sides. Brush on a generous amount of the sauce to both sides of the chicken tenderloins.

Place in the air fryer and cook for 5-6 minutes. Flip the chicken over and brush with any remaining sauce. Air fry again for 5-6 minutes, or until fully cooked.

Breadless Chicken Tenders in the Oven

You can also make these in the oven. Preheat the oven to 425 degrees. Repeat the same steps to season and sauce the chicken. Place chicken on a greased baking tray. Cook chicken for 12-15 minutes, flipping halfway.

Non breaded chicken tenders

You can also use this recipe with any flavor that you love. I did a buffalo BBQ; however, you can do just buffalo or just BBQ sauce. In addition, you should try lemon and herb, garlic and parmesan, or pretty much anything else.

BBQ Chicken Dip

Make this delicious green onion dip using BBQ chicken, ranch seasonings, Greek yogurt and cheese.ย That is really all it takes. It is packed with protein and flavor!

If you know me, you know I LOVE a good greek yogurt dip. It is a great substitute for sour cream or mayo. Plus, if you do it right, you hardly even taste the yogurt. Some of my most popular dips are my greek yogurt buffalo chicken dip, zero point onion dip and fiesta corn dip.

Make this delicious green onion dip using BBQ chicken, ranch seasonings, Greek yogurt and cheese.

  • Don't like yogurt? Sub sour cream!
  • Let the dip set in the fridge for at least an hour to allow for all the flavors to mend togetherย 
  • Add bacon, buffalo sauce or diced jalapeรฑo

What You Need for BBQ Chicken Dip

What exactly do you need to make this dip?

  • Plain, nonfat Greek Yogurt
  • Shredded chicken
  • BBQ sauce
  • Ranch seasonings
  • Shredded cheese
  • Green onions

I typically have most of this stuff on hand, except for the chicken. I grabbed a rotisserie chicken and shredded about half of the white meat, without the skin.

You can also make your own chicken. Use about a quarter pound of skinless, boneless chicken breast. Bake those in the oven, on the stove, in the Instapot, whatever you prefer. Then just shred it up and add it to the rest of the ingredients. Itโ€™s okay if itโ€™s cold or warm.

Trust me, you really cannot tell that there is yogurt in this. It is a great substitute for sour cream or mayo. Plus, if you do it right, you hardly even taste the yogurt. However, you can substitute a sour cream or a regular yogurt as well.

With the BBQ sauce, I choose to use a sugar free one.ย G Hughes is usually my go-to.ย However, you are more than welcome to use any of your favorite BBQ sauces. I want this recipe to be something you, enjoy and love, and that just speaks you.

For this green onion, BBQ chicken Ranch dip, I usually use a lower fat shredded cheese. However, you can use any cheese that you like. I have used cheddar, Mexican and Colby jack. All are great.

If you want to make this dip spicy, try adding some buffalo sauce or diced jalapeรฑos. You can also add some bacon bits or diced up bacon as well.

How to Make BBQ Chicken Dip

Shred the chicken as finely as you can, until you get about a half cup.

Combine all ingredients in a bowl. However, you can also add bacon bits, buffalo sauce or diced jalapeรฑos, if you like it spicy. But, it is really good without all of that.

Store in the fridge for at least an hour, to allow the flavors to form together. However, if you are short on time, you can serve this immediately.

I usually serve this cold, with the shredded cheese just as shredded cheese. However, you can also dice up the shredded cheese, so it is not in such big pieces. You can also bake this in the oven for 20 minutes, at 350 degrees, if you want to serve it warm with a big more of a melted cheese.

I save some of the ingredients to use as a topping to make it pretty for my guests. But, I am very extra and have to do that haha!

what to do with leftover BBQ Chicken dip

Now, do you really think you are going to have leftovers!? I'm just kidding, this can make a lot of food and you might! Just store it in a sealable container in the fridge. You can eat it just like that, from the fridge, and it will be good for about four days.ย However, just keep an eye out for when you opened the yogurt, they are typically good for about 5 days after opening.

You can also make stuffed chicken breasts with the dip, just cut open the center of your chicken breast, stuff some of the dip inside and bake. This technique also works for stuffed peppers or stuffed zucchini boats. Give it a try!

Cook these chicken meatballs in the air fryer and cover them in my Asian style sweet and sour sauce for the best meal!

I have been on a sweet and sour kick lately! From my air fryer sweet and sour chicken to my sweet and sour chicken thighs, I cannot get enough. But, what I haven't done yet is sweet and sour chicken meatballs. I love making meatballs because they are little bite-sized bursts of flavor.

Cook these chicken meatballs in the air fryer and cover them in my Asian style sweet and sour sauce for the best meal!

For my lunch meal prep lately, I have been making frozen meatballs and covering them in a store bought sweet and sour sauce. Why? Convenience. However, my sweet and sour sauce is one of my favorite things ever. So, I had to start making my own for meal prep.

They are very east to make. Just cook these chicken meatballs in the air fryer and cover them in my Asian style sweet and sour sauce. Then, you have the best meal prep! Serve it with some rice and/or some broccoli.

Quick Tips from Allie Carte

  • I like to use ground chicken for mine, but you can use ground pork or ground beef instead.
  • If you need to add some veggies into your meat, grate some zucchini into the chicken mixture.
  • I like to make these in the air fryer; however, you can make these in the oven as well.
  • Use this air fryer meatball recipe to make other flavors of meatballs. If you do not want a sweet and sour style meatball.

What You Need for Sweet and Sour Chicken Meatballs

First off, you will need an air fryer, you can use a basket type air fryer; but, I really like a rack type air fryer as well. However, you can also make them in the oven. I will go over both directions. 

Here are the ingredients for the chicken meatballs:

  • Ground chicken
  • Breadcrumbs
  • Liquid egg whites
  • Seasonings

However, we can go over some suggestions and substitutions.

Ground Chicken Breast

I am truly a chicken person. Chicken is my favorite meat and I will not change my mind. I prefer fat-free ground chicken breast; however, you can use any ground chicken.

In addition, you can substitute the chicken for ground beef, ground turkey or another type of ground meat.

Breadcrumbs

I prefer to use a plain, finely ground breadcrumb. However, different ones will work fine.

Liquid Egg Whites

Use the egg whites to help bind the meatballs together. I prefer liquid egg whites as they are a no mess solution to a whole egg. In addition, they are very liquid whereas a whole egg can get clumpy. However, you can substitute a whole egg, just whisk it first. 

If you are allergic to eggs, or do not have any, you can skip the egg.

Seasonings

I kind of keep it simple, yet, a little asian style for the chicken meatballs. I like to use ginger and basil. Along with some garlic, onion, salt and pepper. I keep it more simple as the sweet and sour sauce is very flavorful. However, you can also add some red pepper if you like things spicy.

For the sweet and sour chicken sauce
  • Brown sugar replacement
  • Apple cider vinegar
  • Soy sauce
  • Ketchup 

Brown sugar replacement is a staple in my household, it is great on so many dishes. I use the Swerve brand; however, Splenda has a brown sugar blend, and, alternatively, you can use regular brown sugar.

For this recipe, grab your apple cider vinegar; however, if you have white vinegar, you may substitute that. This recipe calls for low sodium soy sauce, but if you have regular soy sauce, just adjust the amount of additional salt added to the sauce. Finally, the sauce calls for sugar free ketchup, which is why we add some brown sugar back in. If you have and want to use regular ketchup, be mindful about how much brown sugar you put in. 

for the slurry

What is a slurry? It is a liquid-y mixture that makes the sauce thick! It just combines corn starch with some water. Add that into the sauce, after it is made, until you reach your desired thickness. 

How to Make Sweet and Sour Chicken Meatballs

First, we will go over the air fryer version.

Air Fryer Version

Preheat the air fryer to 400 degrees, greasing the rack with cooking spray.

In a large bowl, add all the ingredients for the meatballs, mixing together with your hands.

Divide into 16 equal sized pieces, about โ…› cup each. Place those on the greased air fryer rack, trying not to let them touch.

Air fry for 10-12 minutes, spraying with cooking spray and flipping halfway through. Make sure the chicken is fully cooked before taking the meatballs out of the air fryer.

Oven Version

how to make the sweet and sour chicken sauce

While the meatballs are cooking, make the sauce. Add all sauce ingredients (brown sugar, vinegar, soy sauce, ketchup, garlic powder, salt) to a small pan over medium/low heat. Stir together and bring to a slight boil. Allow it to simmer for 5-10 minutes.

Combine the slurry ingredients together in a small bowl. If needed, slowly stir the slurry into the sauce until your desired thickness is reached.

When the meatballs are done, add them to the saucepan with the sauce and toss to coat.

There will be enough sauce to have some rice, you can either make my instant pot rice or my stovetop rice.

Dump and go recipes are the best, right!? Especially with this Coke pulled pork recipe, made in the slow cooker. No precooking is required, just place everything in your crock pot and then you are ready for a pulled pork sandwich, nachos, or anything else.

Let's get into more of the juicy details. Get it, juicy details, because this pork is so juicy and tender.

What Do You Need To Make Coke Pulled Pork

First things first for this coke pulled pork recipe is a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock. I think food like ribs, and many types of pork, are perfect in the crock pot but that is up to you!

You can also crisp up the pulled pork on the stove or in the oven.

To make this recipe, just grab a couple ingredients and press go.

  • Pork shoulder or butt
  • Seasonings
  • Coca Cola
  • BBQ sauce
Suggestions and Substitutions

The meat I chose for this was pork shoulder, it is boneless. Using a shoulder of pork for pulled pork is delicious. However, different types of pork work great too, pork butt is another great option. Don't forget, you can also use chicken to keep this a lower fat or calorie recipe.

For the seasoning, I like my pork garlic-y and sweet, with a hint of onion; however, you can use any seasonings that you like, add or remove any, or reduce or add some more of what I use. This is what I like, and I think it is a pretty basic recipe that we can all get behind. Pulled pork seasoning mixes are also available for convenience.

With the BBQ sauce, I choose to use a sugar free one, which is why I add brown sugar replacement back in. I know, this is shredded crock pot pork, its not healthy, but I feel just a little bit better about myself by using sugar free, okay! You are more than welcome to use any of your favorite BBQ sauces, skip the brown sugar replacement or use regular brown sugar. I want this recipe to be something you, enjoy and love, and that just speaks you.

The Coke makes for an amazing flavor. You can also substitute Pepsi or a generic brand. I also use Coke Zero.

How to Make Coke Pulled Pork

Let's make some Pulled Pork in Crock Pot with Coke using a shoulder of pork.

Slow cooked coke pulled pork is quite easy to make. The hardest part is trying not to devour the pork as the amazing smell fills your home all day long but that's another story.

I suggest using one of these crock pot liners for easy clean up, situate that on the crock pot first.

In a small bowl, combine all of the seasonings. Pat dry the pork shoulder, if there is any excess liquid. Then press the seasonings into all sides of the pork. Pour the coke into the bottom of the slow cooker then add in the pork. If there is a fat cap, put the fat cap placing up.

I use a meat thermometer to know exactly when the pork is ready. At this point, place your probe into the pork shoulder then cover the pot and cook on low for four hours, or until the pork reaches 205 degrees. At 205 degrees, the pork becomes very tender and it is easy to cook because the collagen has broken down. Science stuff, we are not here for that.

Let the pork cool for a couple minutes, so it is not too hot to the touch, then shred with a hand mixer or two forks. Add in the BBQ sauce, mixing to combine.

Crisping the Pork

Let the pork cool for a couple minutes, so it is not too hot to the touch. As the pork is cooling, heat oil in a pan over medium high heat. I like to use a pot with tall sides as this can get messy.

Once the pork has slightly cooled, shred with a hand mixer or two forks. Combine the pork with the BBQ sauce, mixing to coat. Add the shredded pork to the pan with the heated oil, cover, and let crisp for a couple minutes.

Once that side is crisped to your likeness, toss the pork and repeat this crisping process. Crisp the pork on the stovetop until it reaches your desired wellness. Remove from heat once ready.

Instead of crisping the pork on the stovetop, do it in the oven. Add the shredded pork to a baking tray. Place under the broiler and broil for 5 minutes, or until desired crispness.

What To Do With Crock Pot Coke Pulled Pork Recipe

I typically just eat this on its own for my first go around. It is really good in a sandwich as well. As leftovers, I love to do a pulled pork sandwich. This time, I made nachos! I used thin and crispy tortilla chips, placing them on a baking tray. Then I covered them in salsa con queso, the pork, and some more shredded cheese. Don't forget to add your favorite toppings.

Making More Pork

This recipe calls for 1 pound of pork, which is not that much, it feeds about 4 people. To increase the amount of pork, it needs to be cooked a lot longer. I will chart some common poundage and their cook times, but again, a meat thermometer is your best friend. I pull it out when it hits 205 degrees.

  • 1 pound of pork - 4 hours
  • 2.5 pounds - 7 hours
  • 4 pounds - 9 hours
  • 5 pounds - 10 hours

Cooking times may vary depending on the shape and thickness of the pork butt, be sure to use a meat thermometer.

Alternative Cooking Methods

Coke pulled pork in the slow cooker is amazing. There is nothing like pulled pork in the crock pot. However, this can also be made in the instant pot.

Instant Pot

Repeat the same recipe steps for the pork, except place the pork in the instant pot. You will need to grease the bottom of the instant pot and/or use a non-stick bowl insert.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 15 minutes and start it. (It will take about 15 minutes per pound to cook).

Once completely cooked, let it set for 5-7 minutes. Then, vent and de-pressurize the instapot then open the lid.

Repeat the same steps for the crisping parts. Crisp the pork on the stovetop until your desired wellness.

Using Chicken Instead

Coke pulled pork in the slow cooker is the best. Using a shoulder of pork for pulled pork is delicious. But I get it, not everyone loves pork. If you prefer to use chicken, that is great! You can still make my recipe; however, just modify it a little. I use two chicken breasts, that equal one pound total.

Crock Pot

Follow the majority of the recipe steps for the pork; however, the chicken will only need to cook for about 1.5-2 hours. Make sure to also use a meat thermometer. Chicken cooks to 165 degrees.

Follow the same steps to crisp the chicken; however, be careful not to dry out the chicken. Add a bit of chicken broth if it starts to dry out.

Instant Pot

Again, follow the majority of the same steps. But, put the chicken in the instant pot. You will need to grease the bottom of the instant pot and/or use a non-stick bowl insert.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 15 minutes and start it. (It will take about 15 minutes per pound to cook).

Once completely cooked, let it set for 5-7 minutes. Then, vent and de-pressurize the instapot then open the lid.

These tortilla chip crusted chicken breast tenders are breadless as they are coated in tortilla chips. 

It is no doubt that my favorite food ever is chips. Yes, tortilla chips. Specifically Tostitos Thin and Crispy. I am telling you, they are the superior chip. But, you know what is better than an at home chip, Mexican restaurant unlimited chips with salsa. OMG the best! I could go on and on, forever, about my love for tortilla chips; however, I will spare you and stop there.

Anyways, I used my favorite food ever to create these tortilla crusted chicken tenders! They are salty and sweet, from the chips, yet crispy and delicious. Paired perfectly with some salsa, taco sauce or queso!

I always have tortilla chips on hand; therefore, this is a great recipe to have when I need to whip up some dinner on a short notice.

  • Substitute your favorite chip. This recipe is great with Doritos, flavored Lay's, or just about any of your other favorite chips.

What You Need for Tortilla Chip Crusted Chicken Breast Tenders 

I made these in the oven because I was making a ton of servings (meal prep); however, these are really good in the air fryer. If making these in the oven, you will need an oven safe cooling / wire rack, aluminum foil and a baking tray slightly larger than the rack.

Now, for the ingredients:

  • Tortilla chips
  • Flour
  • Seasonings
  • Egg whites
  • Chicken tenderloins
  • Cooking spray

However, we can go over some suggestions and substitutions.

Tortilla Chips

This is a breadless chicken tenders recipe; therefore, we will be breading the chicken in tortilla chips!

It is no doubt that my favorite food ever is chips. Yes, tortilla chips. Specifically Tostitos Thin and Crispy. I am telling you, they are the superior chip. However, you can use any brand of tortilla chip for crusted chicken. I prefer these as they are thin and easy to ground finely.

I used approximately 30 chips or 56 grams of chips, which equaled just under a half cup of crushed up chips.

Another substitution is to use your favorite chip. This would be amazing with Doritos or a flavored Lay's. Lay's has so many flavors from cheddar to jalapeรฑo; image how delicious that would be for this chicken.

Flour

Use flour to help the tortilla chips bind to the chicken. You should use all purpose flour; however, you can substitute a cup for cup gluten free flour or another type of flour.

Egg Whites

Again, use the egg whites to help bind the tortilla chips to the chicken. I prefer liquid egg whites as they are a no mess solution to a whole egg. In addition, they are very liquid whereas a whole egg can get clumpy. However, you can substitute a whole egg, just whisk it first.

If you are allergic to eggs, or do not have any, you can substitute water, melted butter or almond milk.

Chicken Tenderloins

This recipe is specifically for tortilla chip crusted chicken breast tenders. However, you can use this recipe to make chicken nuggets, by cutting up the tenderloins. In addition, you can use whole chicken breasts or another alternative.

Seasonings

For the seasonings, I am keeping them pretty neutral with a touch of Mexican flare.

  • Seasoned salt
  • Garlic powder
  • Onion powder
  • Cumin
  • Paprika
  • Chili powder

However, you can substitute or adjust the seasonings as you see fit.

How to Make Tortilla Chip Crusted Chicken Breast Tenders

Start by preheating the oven to 425 degrees. Line a baking tray with aluminum foil, then, add the wire rack on top. Grease the wire rack with cooking spray.

Place the tortilla chips in a sealed baggie and crush them as much as you can, until they form a fine crumb. This will act as the coating as these are breadless chicken tenders.

Sprinkle both sides of the chicken tenderloins with just a little bit of the seasoned salt.

Grab two small shallow bowls. In one, pour the liquid egg whites. In another, combine the tortilla chips, flour and seasonings.

One by one, cover a chicken tenderloin in the egg whites. Then, press all sides of the chicken into the tortilla chip mixture, creating tortilla crusted chicken. Place the crusted chicken on the wire rack. Repeat for each chicken tenderloin trying not to let them touch.

Breadless chicken tenders

Bake in the oven for 5 minutes, then, spray with cooking spray. Bake again for 5 more minutes.

Then, flip the chicken over and spray again with cooking spray. Bake again for 10 minutes, or until fully cooked.

Air Fryer Version

Start by preheating the air fryer to 400 degrees. Grease the air fryer with cooking spray.

Place the tortilla chips in a sealed baggie and crush them as much as you can, until they form a fine crumb. This will act as the coating as these are breadless chicken tenders.

Sprinkle both sides of the chicken tenderloins with just a little bit of the seasoned salt.

Grab two small shallow bowls. In one, pour the liquid egg whites. In another, combine the tortilla chips, flour and seasonings.

Tortilla Crusted Chicken

Sauce

So, what sauce should you pair with these chicken tenders? These are paired perfectly with some salsa, taco sauce or queso! I chose a salsa con queso. They are amazing with different G Hughes sauces, they are my favorite. Try the Polynesian sauce, BBQ sauce, honey mustard, or sweet chili sauce.

If you want to make your own sauce, I have tons! Try out some copycat sauces such as my copycat Chick-fil-A Polynesian sauce, copycat Cane's sauce, or my copycat Chick-fil-A sauce. In addition, you can try some of my homemade sauce like my Nashville hot chicken sauce, firecracker sauce, or a classic ranch dressing.

Sides

Now, what side should you pair with the chicken? For our carb-y side, try my Instant Pot Mexican rice, air fried fries, or herb roasted fries.

For the vegetable side, try air fryer crispy corn, spicy sugar snap peas, or some carrot fries.

The best way to make an artichoke is with parmesan, garlic, and Italian herb breadcrumbs, to mimic a fried taste and create tender hearts.

Have you ever had a stuffed artichoke? This is my favorite way to make one! It is baked with a buttery, garlic, and parmesan sauce. Then, coated in breadcrumbs, to kind of mimic a fried taste. The artichoke is roasted in the oven and served with my garlic and herb cream sauce.

Plus, artichokes are absolutely beautiful and really look like a flower!

What You Need For Artichoke Parmesan

The artichoke is first boiled on the stove, in a large pot. Then, transferred to the oven to finish baking and crisping up!

Here are the ingredients that you will need.

  • An artichoke
  • Olive oil
  • Minced garlic
  • Light margarine
  • Parmesan
  • Italian breadcrumbs
  • Basil
  • Garlic salt

Then, I serve the artichoke with a garlic and herb cream sauce. Here is what you will need for this.

  • Plain, nonfat greek yogurt
  • Minced garlic
  • Italian seasonings

The artichoke, olive oil, minced garlic, and seasonings are pretty self explanatory. However, for the others, we can go over some suggestions and substitutions.

Light Margarine

You are more than welcome to use butter; however, I love ICBINB Light Margarine. Any butter or butter substitute will work here. If you are vegan, you can also go with a vegan substitute.

Parmesan

Artichoke Parmesan needs some parmesan! I typicallyย use Kraft reduced fat parmesan cheeseย for the parmesan seasoning. Yes, the bottles stuff that is found in the pizza sauce aisle. Hey, I can't be perfect all the time and I do love this stuff. However, you can substitute any type of parmesan that you love.

Garlic

I mean come on, who doesn't love garlic!? Lately, I have been buying whole, peeled, garlic cloves and mincing them myself with a mini food processor. Typically, I do a whole bunch of them at one time. Then, I store them in a mason jar in the fridge. However, use a pre-minced garlic or an alternative. Italian Breadcrumbs

I use Ian Italian Breadcrumbs for this recipe. However, you can substitute a different brand of Italian breadcrumbs. However, you can also use plain breadcrumbs and add some Italian seasonings.

Plain, Nonfat Greek Yogurt

The plain, nonfat Greek yogurt is for the garlic and herb cream sauce. You can easily substitute the Greek yogurt for sour cream or mayo; however, I like using yogurt as it is very light and has added protein.

Artichoke parmesan

This is truly the best recipe, look how tender the artichoke hearts can get! Plus, the Italian breadcrumbs and parmesan mimic a fried artichoke taste.

How to Make Artichoke Parmesan

Start by boiling 2 inches of water in a pot that has a lid. I used a 2.5-3 quart pot. Make sure to salt the water.

While the water is coming to a boil, trim the stem off the bottom of the artichoke, leaving about a half inch. Cut off the top half inch of the artichoke, exposing the heart. Then, using scissors, cut off the thorns of the exterior leaves and pick off the bottom layer or two of leaves.

When the water has begun boiling, place the artichoke in the pot. Cover and cook for about 20 minutes, until the artichoke is tender.

Meanwhile, preheat the oven to 350 degrees.

Heat the oil over medium heat in a small saucepan. Once heated, add the garlic and cook for about a minute or two, until fragrant. Add two tablespoons of margarine and let that melt, mixing to combine.

Pour in the parmesan, breadcrumbs, basil and garlic salt, mixing to combine everything. Let the mixture cook for about a minute.

Italian fried artichoke

Line a baking tray with aluminum foil, placing the boiled artichoke on top. Carefully pull apart the leaves, trying to exposure as much of the artichoke as possible.

Stuff the artichoke with the parmesan and breadcrumb mixture, getting into all of the leaves and down into the heart. With the last tablespoon of margarine, spread it all over the top of the artichoke.

Bake the artichoke for 15-18 minutes, until desired crispness is reached.

While the artichoke is baking, combine all the ingredients for the garlic cream sauce. Let that set in the fridge until the artichoke is ready. You can also substitute garlic powder for the minced garlic is eating garlic like that is not preferred.

This pulled BBQ turkey recipe is made in the crock pot or slow cooker and is your heathy take on a pulled BBQ sandwich.ย 

I have been obsessed with tenderloins lately. From my first, crock pot pork tenderloin. Then my turkey version, turkey tenderloin slow cooker. Finally, of course, my Instant Pot turkey tenderloin as well, if you need something quick.

I have been making them whole, and eating them in slices. But, what I haven't done yet, is shred it up and make pulled BBQ turkey! I mean why not!? It is a healthier take on a classic pulled pork sandwich.

This is a perfectly seasoned turkey tenderloin, covered in bacon and a sweet BBQ sauce. Then, it is slow cooked to a tender and juicy perfection. Finally, shred it up and cover it in a delicious BBQ sauce.

You know this was a good one when my husband had a comment! He was pulling into the driveway and said "wow it smells amazing out here". Literally our entire house, even outside, was filled with the delicious aromas of a pulled bbq sandwich.

Quick Tips from Allie Carte

  • Use a meat thermometer - I cannot stress it enough, you need a meat thermometer. You can find them almost anywhere and they are very affordable. Be sure to get one that can go in a crock pot (or oven).
  • Cook on low - poultry like turkey tenderloin does not work out as well on the high setting in a slow cooker
  • Remove the turkey right when it finishes cooking - you do not want to overcook the turkey as it can get tough

What You Need for Pulled BBQ Turkey

First things first is a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

Then, grab your ingredients

  • Turkey breast tenderloin
  • Spices
  • Bacon
  • BBQ Sauce
  • Brown sugar replacement
  • Honey mustard
Turkey Tenderloin

For my turkey tenderloin recipes, I use a Jennie O turkey breast tenderloin. I believe Hormel or Butterball makes one as well? There is a very limited market for turkey tenderloins; therefore, there are only a couple of brands.

My Jennie O turkey tenderloin came in a package with two tenderloins. Each tenderloin was 12 ounces; however, I only made 1 piece. The single piece was enough for 3 servings which was perfect. However, you can certainly make both, we can go over adjusted cooking times.

If you are on Weight Watcher (WW) or just watching your calories / fat, this is a very lean cut of meat, as compared to a pork tenderloin.

Spices / Seasonings

This is the seasonings blend that I have perfected for really good, slow cooker, turkey tenderloin. It is not spicy. It is a little sweet, but not too sweet, just a hint of sweet.

  • Brown sugar replacement
  • Garlic powder
  • Onion powder
  • Salt
  • Oregano
  • Paprika
  • Chili powder
  • Nutmeg
  • Black pepper

However, you can certainly adjust the seasonings to your liking for this pulled turkey recipe. If you are not a fan of one of the spices, you can omit it; however, you can also add more of one of the spices if you want to as well. Make this how you want to, it is your turkey loin.

BBQ Sauce

With the BBQ sauce, I choose to use a sugar free one. G Hughes is usually my go-to. You are more than welcome to use any of your favorite BBQ sauces. I want this recipe to be something you, enjoy and love, and that just speaks you.

Just be cautious as I do add brown sugar back into the sauce. If you are using a BBQ sauce with sugar, it may be too sweet for you.

Brown Sugar

I always, typically, use brown sugar replacement. It is easy grab a huge package from Amazon and that is what I always use. I do not mind using a replacement sugar. However, I know some people have concerns with that. You can substitute a brown sugar blend or just straight brown sugar.

Honey Mustard

I just use generic honey mustard for this recipe. Yes, it has sugar. It is pretty thick and makes a nice glazing for the slow cooker turkey tenderloin. However, you can use a sugar free honey mustard if you wish. However, to keep it less sweet, substitute regular mustard.

How to Make BBQ Pulled Turkey in the Crock Pot or Slow Cooker

First things first for pulled turkey is to grab a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

I like to add two tablespoons of broth in the bottom of the crock pot. I think it keeps the turkey moist but who knows. However, you can also use water. Pour it into the crock pot first.

If the turkey is really moist, blot with a paper towel to absorb any excess moisture.

Then, combine all of the seasonings in a small bowl, whisking together. Press the spices into the turkey tenderloin, being sure to coat all the sides. Place the turkey loin at the bottom of the crock pot.

Then, pour ยผ cup of the BBQ sauce on top of the turkey tenderloin. If using a meat thermometer, this is the time to place it into the largest area of the tenderloin; however, you do not need to.

Cooking the Pulled Turkey Recipe

Place the lid on the crock pot and cook on low for 1 hour 45 minutes to 2 hours, until the turkey reaches an internal temperature of 165 degrees. It will take about 8 to 10 minutes per ounce. However, still monitor the time on the thermometer.

Once the turkey tenderloin is fully cooked, remove from the crock pot, place in a large bowl, and shred with a hand mixer, two fork or a meat chopper. Add the remaining BBQ sauce, honey mustard and brown sugar. Then, toss to coat.

Add the turkey to a greased baking tray. Broil in the oven for 5 minutes.

Making More Slow Cooker Turkey Tenderloin

The Jennie O turkey tenderloin My Jennie O turkey tenderloin came in a package with two tenderloins. Each tenderloin was 12 ounces; however, I only made 1 piece. The single piece was enough for 3 servings which was perfect. However, you can certainly make both, we can go over adjusted cooking times. Everything is on low.

  • 12 ounces: 105 to 120 minutes
  • 16 ounces: 140 to 160 minutes
  • 24 ounces: 200 to 240 minutes

However, as I have been saying, the meat thermometer is your best friend. Cooking times can vary so much depending on the thickness and shape of the turkey loin or the specific slow cooker. Cook until the internal temperature reaches 165 degrees.

Alternative Cooking Method (Pressure Cooker)

Looking for some more Jennie O turkey tenderloin recipes? If you need this quicker, make my instant pot turkey tenderloin. It only needs to cook for 10 minutes!

Pour โ…“ cup low sodium chicken broth into the bottom of the pot. This will keep the turkey moist and help bring the pot to pressure.

Then, repeat the same steps as you would with the crock pot, seasoning and saucing the loin. Place the turkey loin at the bottom of the pot.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 10 minutes and start it. Once completely cooked, let set for 5 minutes, then vent and de-pressurize the Instant Pot then open the lid.

If the turkey is thinner, it may only need 9 minutes. However, be sure it comes up to temperature.

This is the best chicken fajita seasoning mix, it is homemade, yet authentic, and gluten free as well!

Fajitas are one of my favorite recipes to make. You know me, I love anything Mexican style. My husband and I absolutely love making and enjoying them together. I have perfectly nailed down the BEST fajita seasoning mix. It is completely homemade, yet authentic, and gluten free as well!

I hate when those seasoning packets put in so many additives, and you don't know what is in them. That is why I typically make my own seasonings mixes.

You can grab my taco seasonings mix in this recipe. But, this one is for my fajita mix. Yes, they are different.

So, what is the difference between taco seasonings and fajita seasonings? Taco seasonings tend to have more chili powder and are a bit spicier. Fajita seasonings are a bit sweet and more cumin forward. However, you can make your seasonings spicy, if that is what you prefer.

Homemade chicken fajita seasoning

You can tell how fresh this seasonings mix is. I love making homemade chicken fajita seasoning because I know exactly what is in it! This is a gluten free fajita mix; however, be mindful as some herbs and spices may have hidden gluten. Use a certified gluten free brand.

What You Need For Authentic, Homemade Chicken Fajita Seasoning

Yes, I am more of a chicken fajita person; however, this fajita mix can be used on pretty much any meat, as well as, the vegetables.

  • Salt
  • Chili powder
  • Paprika
  • Garlic powder
  • Onion powder
  • Cumin
  • Black pepper
  • Granulated sugar 

So, what is the difference between taco seasonings and fajita seasonings? Taco seasonings tend to have more chili powder and are a bit spicier. Fajita seasonings are a bit sweet and more cumin forward. However, you can make your fajita seasonings spicy, if that is what you prefer.

This fajita mix will make about 2.5 tablespoons of mix and I typically use that for 1 to 1.5 pounds of meat. However, you can adjust that to your liking!

Also, I always use a granulated sugar replacement; however, you can use actual sugar in this recipe.

How to Make Fajitas

So, how exactly do you make a fajita using my authentic seasoning blend. When my husband and I make them, we typically do steak and chicken, as I am a chicken gal and he is a steak guy. For steak, you can use NY Strip or flank. However, you can make just one of those meats or a different type of meat.

Again, my seasonings mix is for 1 to 1.5 pounds of meat. You can use one pound of a single meat or a half pound of two different types of meat.

For just chicken fajitas, I use two chicken breasts which equal a total one pound, half pound per breast. I use most of the best fajita seasoning for it, but I leave some for veggies. However, pick your type of meat, we will just be discussing chicken.

Slice the chicken breasts in half longwise. Then, slice the chicken breast into thin strips. Add the chicken strips to a bowl and sprinkle on the seasonings. Save some of the seasonings if making vegetables. Mix in the seasonings very well. Cover and store in the fridge for 30 minutes, until ready to cook.

Cooking

I prefer to cut the chicken into strips first, as chicken breasts are very uneven, one side is small and thin, while the other is long and tall. Therefore, it tends to cook unevenly.

For fajitas, I like to use two bell peppers and one red onion. When you are about ready to cook, slice those up into thin strips. We will add some of the fajita seasoning on those veggies.

We like to make the fajitas on the BBQ grill, we use a Blackstone; however, you can make them in the oven or on a cast iron.

Heat up the grill, greasing with oil, then add the meat and veggies and grill until they are fully cooked and the veggies are soft. Sprinkle any remaining seasonings on the veggies. I like to combine everything in a cast iron skillet for the full experience.

What To Serve with Fajitas

My favorite taco shell are Mission street corn tortillas. For those on weight watchers, they are only 1 point! Plus, they are gluten free too. Of course, you can use any tortilla that you love.

For toppings, I love substituting plain, nonfat Greek yogurt for sour cream. Then, I typically use Trader's lite Mexican cheese blend, and my zero point, skinny salsa.

This makes the perfect leftovers as well. I will typically eat the meat and veggies as a rice bowl. You can make my Instant Pot rice, perfect stovetop rice, cilantro lime rice or Mexican rice.

Don't forget, you are going to need an appetizer while you let the meat set. Try my fiesta corn dip, meaty queso dip or my skinny salsa. OH! And of course, you are going to need a skinny margarita!!

Bacon Wrapped Turkey Tenderloin

There is nothing like wrapping something in bacon, and slow cooking it all day, that is why you have to try my bacon wrapped turkey tenderloin. 

I have been obsessed with tenderloins lately. From my first, crock pot pork tenderloin. Then my turkey version, turkey tenderloin slow cooker. Finally, of course, my Instant Pot turkey tenderloin as well, if you need something quick.

I had to keep making these, but, I had to step up the game. Turkey tenderloin wrapped in bacon is everything you have dreamed about. Perfectly seasoned turkey tenderloin, covered in bacon and a sweet BBQ sauce. Then, it is slow cooked to a tender and juicy perfection.

There is nothing like wrapping something in bacon, and slow cooking it all day, that is why you have to try my bacon wrapped turkey tenderloin.

Also, make sure you try my pulled turkey.

You know this was a good one when my husband had a comment! He said "this really puts the tender in tenderloin". We were basically cutting the turkey loin with a fork it was so tender. But, there are some tips and trick you will need to follow to ensure you get the same tender turkey that I have achieved.

Quick Tips from Allie Carte

  • Use a meat thermometer - I cannot stress it enough, you need a meat thermometer. You can find them almost anywhere and they are very affordable. Be sure to get one that can go in a crock pot (or oven).
  • Cook on low - poultry like turkey tenderloin does not work out as well on the high setting in a slow cooker
  • Remove the turkey right when it finishes cooking - you do not want to overcook the turkey as it can get tough

What You Need for Bacon Wrapped Turkey Tenderloin

First things first is a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

Then, grab your ingredients

  • Turkey breast tenderloin
  • Spices
  • Bacon
  • BBQ Sauce
  • Brown sugar replacement
  • Honey mustard
Turkey Tenderloin

For my turkey tenderloin recipes, I use a Jennie O turkey breast tenderloin. I believe Hormel or Butterball makes one as well? There is a very limited market for turkey tenderloins; therefore, there are only a couple of brands.

My Jennie O turkey tenderloin came in a package with two tenderloins. Each tenderloin was 12 ounces; however, I only made 1 piece. The single piece was enough for 3 servings which was perfect. However, you can certainly make both, we can go over adjusted cooking times.

If you are on Weight Watcher (WW) or just watching your calories / fat, this is a very lean cut of meat, as compared to a pork tenderloin.

If you prefer pork instead of turkey loin, I also have an amazing crock pot turkey tenderloin recipe, or make both!

Spices / Seasonings

This is the seasonings blend that I have perfected for really good, slow cooker, turkey tenderloin. It is not spicy. It is a little sweet, but not too sweet, just a hint of sweet.

  • Brown sugar replacement
  • Garlic powder
  • Onion powder
  • Salt
  • Oregano
  • Paprika
  • Chili powder
  • Nutmeg
  • Black pepper

However, you can certainly adjust the seasonings to your liking. If you are not a fan of one of the spices, you can omit it; however, you can also add more of one of the spices if you want to as well. Make this how you want to, it is your turkey loin.

Bacon

Bacon wrapped turkey tenderloin is going to need some bacon. I use 6 pieces of just your average, generic bacon. That will be two pieces of bacon per serving. However, you can cut that in half or skip the bacon all together.

BBQ Sauce

With the BBQ sauce, I choose to use a sugar free one. G Hughes is usually my go-to. You are more than welcome to use any of your favorite BBQ sauces. I want this recipe to be something you, enjoy and love, and that just speaks you.

Just be cautious as I do add brown sugar back into the sauce. If you are using a BBQ sauce with sugar, it may be too sweet for you.

Brown Sugar

I always, typically, use brown sugar replacement. It is easy grab a huge package from Amazon and that is what I always use. I do not mind using a replacement sugar. However, I know some people have concerns with that. You can substitute a brown sugar blend or just straight brown sugar.

Honey Mustard

I just use generic honey mustard for this recipe. Yes, it has sugar. It is pretty thick and makes a nice glazing for the slow cooker turkey tenderloin. However, you can use a sugar free honey mustard if you wish. Alternatively, to keep it less sweet, substitute regular mustard.

How to Make Bacon Wrapped Turkey Tenderloin

First things first is to grab a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

I like to add a tablespoon or two of broth in the bottom of the crock pot. I think it keeps the turkey moist but who knows. Pour it into the crock pot first.

If the turkey is really moist, blot with a paper towel to absorb any excess moisture.

Then, combine all of the seasonings in a small bowl, whisking together. Press the spices into the turkey tenderloin, being sure to coat all the sides. Place the turkey loin at the bottom of the crock pot.

Spread the pieces of bacon across the turkey, making sure the middle of the bacon pieces are at the middle of the turkey. Wrap the bacon under the turkey, tightly, crossing the bacon pieces over under the turkey. Pack the rest of the brown sugar on to the bacon.

In a bowl, stir together the BBQ sauce and honey mustard. Then, pour the sauce on top of the turkey tenderloin. If using a meat thermometer, this is the time to place it into the largest area of the tenderloin; however, you do not need to.

Place the lid on the crock pot and cook on low for 1 hour 45 minutes to 2 hours, until the turkey reaches an internal temperature of 165 degrees. It will take about 8 to 10 minutes per ounce.

Once the turkey tenderloin is fully cooked, remove from the crock pot and let sit for 10 minutes. Then, cut the turkey tenderloin into 6 equal slices, 2 slices per serving.

Making More Slow Cooker Turkey Tenderloin

The Jennie O turkey tenderloin My Jennie O turkey tenderloin came in a package with two tenderloins. Each tenderloin was 12 ounces; however, I only made 1 piece. The single piece was enough for 3 servings which was perfect. However, you can certainly make both, we can go over adjusted cooking times. Everything is on low.

  • 12 ounces: 105 to 120 minutes
  • 16 ounces: 140 to 160 minutes
  • 24 ounces: 200 to 240 minutes

However, as I have been saying, the meat thermometer is your best friend. Cooking times can vary so much depending on the thickness and shape of the turkey loin or the specific slow cooker. Cook until the internal temperature reaches 165 degrees.

Alternative Cooking Method (Pressure Cooker)

Looking for some more Jennie O turkey tenderloin recipes? If you need this quicker, make my instant pot turkey tenderloin. It only needs to cook for 10 minutes!

Pour โ…“ cup low sodium chicken broth into the bottom of the pot. This will keep the turkey moist and help bring the pot to pressure.

Then, repeat the same steps as you would with the crock pot, seasoning and saucing the loin. Place the turkey loin at the bottom of the pot.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 10 minutes and start it. Once completely cooked, let set for 5 minutes, then vent and de-pressurize the Instant Pot then open the lid.

If the turkey is thinner, it may only need 9 minutes. However, be sure it comes up to temperature.

What to Serve with a Turkey Tenderloin

Potatoes and crock pot tenderloin are the best combination! I served this with my roasted red potatoes. However, it is really good with some scalloped potatoes or air fryer baby potatoes.

For the vegetable, try some garlic parmesan zucchini chips or my one point spaghetti squash Alfredo.

Summer Berry Salad

This berry salad recipe is made with fruit, in red, white, and blue colors, for the summer holidays, and the perfect sweet treat.ย 

Nothing says summer more than a berry fruit salad. To honor the three summer holidays, Memorial Day, Independence Day and Labor Day, I used red, white and blue fruits for the salad. The dressing is a sweet, cilantro and lime coating that is perfect touch for this summer salad.

This berry salad recipe is made with fruit, in red, white, and blue colors, for the summer holidays, and the perfect sweet treat.

How gorgeous is this red, white and blue fruit salad. The perfect sweet treat and such a yummy way to eat some fruit.

What You Need for Summer Berry Salad

For this summer berry fruit salad recipe, I used three types of fruits and made a sweet, cilantro lime dressing to go on top.

  • Strawberries
  • Blueberries
  • Apple
  • Lime
  • Cilantro
  • Agave or honey
  • Garlic salt

For the coloring, I use strawberries, blueberries and an apple. I used a whole, small, container of blueberries, about โ…” of a normal sized container of strawberries and a whole apple. However, you can adjust this depending on how much of each fruit you want to use.

I specifically chose a red apple, as opposed to green, to keep the similar colors in this summer berry salad. Strawberries and blueberries are also some of my favorite fruits; therefore, it worked out perfectly.

However, you can also substitute any red, white or blue fruit that you prefer. In addition, if you do not need the color scheme, use any fruit that you live. A great substitute for the apples would be Jicama as well.

I love the addition of cilantro and lime in this summer berry salad. It helps play up the fresh flavors of the salad. I added a pinch of garlic salt to help balance out the flavors.

For this recipe, I use this agave stuff that is a good replacement for corn syrup and honey in pretty much anything that you need. Plus, it is really good to sweeten a margarita! Grab some on amazon to make this recipe.

Also, you can use just some honey if you donโ€™t want to use this!

How to Make Summer Berry Salad

Summer berry salad is easy to make and can be done in about 5 minutes.

Chop/mince the cilantro. In a large bowl, combine the cilantro, lime, agave and garlic salt.

Cut the strawberries and apple up into bite-sized pieces. Add those, and the blueberries, to the bowl with the dressing, tossing to coat.

Refrigerate for at least 30 minutes before serving, to allow the flavors to form together. However, you can skip this step if you run out of time.
