The best recipe for mini taco bombs, aka a meatball, which are beef meatballs flavored like Mexican style tacos.

Cheeseburger bombs are one of my most popular recipes, and one of my favorites. I decided to reinvent the dish and combine it with one of my favorite - TACOS. Introducing taco bombs! These are ground beef (or sub chicken) meatballs, deliciously seasoned with my homemade taco seasonings blend. Then, they are perfectly cooked in the oven and smothered with cheese and taco sauce. Honestly, what could be better.

Taco bombs are basically just meatballs. However, these have the most delicious taco flavor to them.

Quick Tips from Allie Carte

  • Substitute ground chicken breast for a lighter dish (and more WW - weight watcher's friendly)
  • If you do not like things spicy, remove the minced/diced up jalapeรฑos from the mixture
  • I use an egg to make the meat more moist; however, if you do not have it or do not want to use an egg, you can skip that

What You Need For Taco Bombs

I use a big bowl to mix everything together. Then, I place the taco bombs aka meatballs on a baking tray and cook them in the oven.

Here is the list of ingredients that you will need to make these mini beef meatballs.

  • Ground beef
  • Egg
  • Breadcrumbs
  • Taco seasonings
  • Onion
  • Garlic
  • Jalapeรฑos
  • Shredded cheese
  • Taco sauce

However, we can go over some suggestions and substitutions.

Ground Beef

I do not use ground beef too often; however, there are some recipes that are amazing with ground beef. These taco bombs are one of them. I prefer to use extra lean ground beef, a 96% fat-free beef. However, you can use any fat content that you like. In addition, this recipe is amazing with ground sirloin as well.

In addition, you can substitute the chicken for ground beef in these taco bombs, ground turkey or another type of ground meat.

Egg

As I mentioned, I use an egg to make the meat more moist; however, if you do not have it or do not want to use an egg, you can skip that. You can also substitute an egg white or liquid egg whites if you do not want the yolk portion.

Breadcrumbs

It is preferable to use very finely ground breadcrumbs. I use the Schar breadcrumbs because I love how finely ground they are. In addition, they are gluten free! However, you really can use any type of breadcrumbs that you prefer.

Onion, Garlic, Jalapeรฑos

These Mexican meatballs are very flavorful by adding fresh ingredients such as onion, garlic and jalapeรฑos. I mince up some of those and work it into the meat. However, if you do not like things spicy, remove the minced/diced up jalapeรฑos from the mixture. In addition, if you do not prefer onion or garlic in there, remove that as well. Also, you can add anything else that you would like. If you find anything amazing, let me know in the comments!

Shredded Cheese

My preference is Trader's Lite Mexican Cheese Blend; however, you can substitute for a different cheese. I usually use a fat-free or reduced fat cheese; however, I know that not everyone likes to go that route.

Taco Sauce

Taco bombs need taco sauce. Yes, I love using Taco Bell sauce. Truly it is one of my favorite things ever and I love adding it to tons of meals, especially this recipe for Mexican meatballs.

Taco Seasonings

I always have my homemade taco seasonings on hand, I make them exactly how I like them and I think they are better than anything you can buy. Plus, when you buy a seasonings mix, you never really know what is in it. 

This is the taco seasonings recipe that I live and breathe for, hey, I love tacos, and is perfect to season the pork for this recipe. However, you can also buy a packet, just use 2/2.5 tablespoons of it!

  • ยผ teaspoon salt
  • 1 teaspoon chili powder
  • ยฝ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • ยผ teaspoon black pepper
  • ยฝ teaspoon oregano

Adjust any of these seasonings to your liking in this recipe for Mexican meatballs. This mix is not spicy; however, you can make it spicier with the addition of ground red pepper. However, if you are watching your salt, you can reduce that as well. But I do not think there is too much salt in this.

How to Make Taco Bombs

Let's make some mini beef meatballs!

Start by preheating your oven to 425 degrees. Line a baking sheet with aluminum foil (if preferred) and grease with cooking spray.

Grab a large bowl and spread the ground beef at the bottom of the bowl. Crack the egg in a separate bowl, in case of shells, then, add that egg to the beef. Mix the egg into the beef; however, do not over mix it.

Spread the beef back out into the bottom of the bowl. Sprinkle the seasonings over all the beef. Mince the garlic, onion and jalapeรฑo, then add that to the beef. Mix all of that into the beef, being sure not to over mix it.

Divide the beef into 16 equal pieces, about โ…› cup or so each. Roll each piece into a ball and place the taco bombs on the greased baking tray.

Bake for 8 minutes, then, flip the meatballs over. Squeeze them further together; however, not touching each other. Sprinkle evenly with the cheese then place back in the oven until done, about 6-7 minutes.

Once the meatballs are done, top evenly with the Taco Bell sauce and enjoy!

Mini Blooming Onion - Air Fryer White Pearl Onions

These frozen white pearl onions are roasted in the air fryer to create a mini blooming onion. Don't forget to serve this with my copycat sauce!

Did you know you can make mini blooming onions with some frozen white pearl onions!? I have been seeing it all over TikTok. They are so easy to make in the air fryer (you can also make them in the oven) and absolutely delicious served with my copycat sauce.

I love making these mini blooming onions because they are such a fun little bite-sized snack. They are perfectly coated in my seasonings mix making for optimal crunching.

What You Need for Roasted Pearl Onions

I prefer to make these in the air fryer as they come out crunchier; however, you can also make these in the oven. I prefer a basket style air fryer, such as this one, as it is easier to control these little onions and shake them up. However, a rack style air fryer will work as well, you will just have to be more careful.

Then, you will just need a couple of ingredients. This is my special blooming onion coating mix.

  • Frozen white pearl onions
  • Flour
  • Egg whites
  • Cornmeal
  • Panko
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
  • Paprika

That is everything you will need for the mini blooming onions; however, we can go over some suggestions and substitutions.

Frozen White Pearl Onions

I specifically use the Bird's Eye frozen white pearl onions; however, different brands will work. Just be sure that they are the frozen kind that you just pop in the microwave.

Flour

Just your typical flour. Nothing fancy here, no self-rising flour, no almond flour, just all purpose flour. However, you can substitute a cup for cup gluten free flour.

Egg Whites

Yes, I love using liquid egg whites. They are so easy and mess free. Plus, you don't have to deal with the yolk and whatnot. However, you can use a regular egg, just be sure to whisk it before starting.

Cornmeal

Okay, this one is very important. We need cornmeal. Not corn bread mix. Just plain cornmeal. This one is my favorite.

Panko

You can really use any type of breadcrumbs here. I prefer some that are ground up very finely as the mini blooming onions are, well, very mini.

Seasonings

For the seasonings, I use garlic powder, onion powder, salt, pepper and paprika. However, if there is something you want to add or take away, you can.

Copycat Blooming Onion Sauce

Now, let's get into the sauce. Here is what you need to make the sauce.

  • Plain, nonfat Greek yogurt
  • Sugar free ketchup
  • Honey mustard
  • Paprika
  • Salt
  • Oregano
  • Cayenne
  • Black pepper

Then, we can go over some suggestions and substitutions because this is not your typical copycat sauce. I make mine a bit healthier; however, you do not have to.

Plain, Nonfat Greek Yogurt

First, the base, plain nonfat Greek yogurt. I prefer using the yogurt as it is healthier and packed with protein; however, you can substitute a sour cream or mayo.

Sugar Free Ketchup

Remember, we are making this healthier. I use G Hughes sugar free ketchup; however, you can substitute a regular ketchup.

Honey Mustard

Have you tried Skinny Girl honey mustard dressing. I love Bethany Frankel and always love (loved) watching her on the Real Housewives. Anything she makes is absolutely amazing and I love trying her stuff. That is why I was so excited when I found out she had salad dressings. She has a couple and they are all amazing and low calorie.

For this mini blooming onion recipe, I use the skinny girl honey mustard dressing. However, you can substitute a different honey mustard. A more traditional blooming onion sauce would have minced horseradish; however, I like it better with honey mustard.

You can also substitute a minced ginger root instead.

Seasonings

For the seasonings, I use paprika, salt, pepper, oregano and cayenne pepper. I do not think this is too spicy, and I am a wimp; however, you can increase or decrease the spice as necessary.

How to Make a Mini Blooming Onion

Microwaving

Start by cooking the frozen white pearl onions according to the package instructions; however, only cook them halfway.

While those are cooking, prepare the batter. Grab three small shallow bowls. In one bowl, add half of the flour. With the second bowl, pour the liquid egg whites. In the third, add the rest of the flour, the cornmeal, panko and the seasonings.

When the pearl onions are halfway cooked, drain off any excess liquid.

Coating in Batter

Place the white pearl onions in the bowl with the flour, you may want to do just a few at a time, and cover with flour.

If all of the pearl onions do not fit in the air fryer, make them in batches and do not bread them until ready to cook.

When the pearl onions are covered in flour, add them to the bowl of liquid egg whites, covering them in egg whites. Again, you may want to do just a few at a time.

After they are covered in egg whites, add them to the bowl with all of the batter ingredients, covering them in batter. Again, you may want to do just a few at a time.

Air Frying

Once they are covered in the batter, place them in a greased air fryer. As much as possible, try not to let them touch. Air fry for 3 minutes, then open the air fryer and spray the onions with cooking spray.

Air fry for another 3 minutes. Then, open the air fryer, shake the onions, spray again with cooking spray, then continue air frying. Air fry for another 3 minutes.

Then, open the air fryer, shake the onions, spray again with cooking spray, then continue air frying until your desired crispness, another 3-5 minutes.

Making the Sauce

While those are cooking, prepare the sauce. Mix all the ingredients for the sauce together in a bowl. Store in the fridge until the roasted pearl onions are ready, to allow the flavors to form together. Then, dip a mini blooming onion in the sauce once cooked!

Making the Mini Blooming Onions Without Coating

You can also make the mini blooming onions without coating; however, they will taste very onion-y, if you like that. Follow all the same steps, except for the coating. Drain the onions, and season using the same seasonings blend. Then, put them straight in the greased air fryer and follow the same air fryer instructions. However, these will cook a little faster, therefore, cut a couple minutes off the air frying.

Making Roasted White Pearl Onions in the Oven

You can also make these in the oven. Follow all the same steps, until you get to the air frying. Preheat the oven to 375 degrees and grease a baking tray with cooking spray. Bake the battered pearl onions in the oven for 12-15 minutes, flipping and spraying halfway through. They will not be as crispy; however, this is a good alternative if you do not have an air fryer.

  • 2 teaspoons seasoned salt
  • ยผ teaspoon black pepper

Copycat Sauce

  • ยผ cup plain, nonfat Greek yogurt
  • 1 tablespoon sugar free ketchup
  • 1 tablespoon honey mustard skinny girl
  • ยฝ teaspoon paprika
  • ยผ teaspoon cayenne
  • โ…› teaspoon salt
  • โ…› teaspoon oregano
  • โ…› teaspoon black pepper

Instructions

  • Start by cooking the frozen white pearl onions according to the package instructions; however, only cook them halfway.ย

  • When the pearl onions are ready (halfway cooked), drain off any excess liquid.ย 
  • Place the white pearl onions in the bowl with the flour, you may want to do just a few at a time, and cover with flour.ย 
  • Then, add them to the bowl of liquid egg whites, covering them in egg whites. Again, you may want to do just a few at a time.ย 
  • Then, add them to the bowl with all of the batter ingredients, covering them in batter. Again, you may want to do just a few at a time.ย 
  • Then, place them in a greased air fryer. Air fry at 350 degrees for 3 minutes, then open the air fryer and spray the onions with cooking spray.ย 
  • Air fry for another 3 minutes. Then, open the air fryer, shake the onions, spray again with cooking spray, then continue air frying. Air fry for another 3 minutes.ย 
  • Then, open the air fryer, shake the onions, spray again with cooking spray, then continue air frying until your desired crispness, another 3-5 minutes.ย In total, this will be about 12-15 minutes; however, be sure to check on them as time starts to run out.
  • While those are cooking, prepare the sauce. Mix all the ingredients for the sauce together in a bowl. Store in the fridge until the roasted pearl onions are ready, to allow the flavors to form together.ย

Sausage Bolognese, made with bacon in a delicious tomato sauce, is the best pasta sauce recipe you will ever try.

I am not even kidding when I say I have THE BEST pasta sauce ever. It is an Italian sausage and bacon bolognese made with the most delicious creamy, tomato sauce base. This was simmering on my stovetop all day. I could not resist taking multiple samples every few minutes. This is a sauce you will be raving about!!

What exactly does this sausage bolognese sauce taste like? I use sweet Italian sausage; therefore, it has some sweetness to it. But, some tartness from the tomatoes. It is packed with a delicious Italian, herby flavor. However, also has a salty flavor from the bacon. To finish it off, the half and half and parmesan cheese give it a deliciously creamy texture. What is there not to love!?

To say I am in love with this Italian sausage would be an understatement. I use the Johnsonville mild Italian ground sausage. I love it so much and have used it for a couple recipes such as my spinach artichoke stuffed peppers, sausage spinach sun-dried tomato pasta or my instant pot sausage spinach pasta. Yes, it may be a bit of a splurge at 170 calories for 2 ounces; however, it is so worth it! I am telling you, best sausage ever.

What You Need for Sausage Bolognese

I make my sausage bolognese in a large pot on the stovetop; however, you can also make it in a crock pot.

  • Mild Italian sausage
  • Bacon
  • Crushed tomatoes
  • Seasonings
  • Half and Half
  • Parmesan cheese
  • Broth

We can also go over some suggestions and substitutions

Mild Italian Sausage

To say I am in love with this Italian sausage would be an understatement. I use the Johnsonville mild Italian ground sausage. Yes, it may be a bit of a splurge at 170 calories for 2 ounces; however, it is so worth it! I am telling you, best sausage ever.

Bacon

I made my own bacon here which usually does not happen. It is an extra step to cook the bacon; however, very much worth it. I love a good fully cooked bacon that you just pop in the microwave as well. Additionally, you can substitute a turkey bacon to keep the fat content down a little.

Crushed Tomatoes

As much as I would love to grow my own tomatoes and crush them myself, fresh, for this sausage Bolognese recipe, there is absolutely zero percent chance of that happening. I grabbed a 28 ounce can of crushed tomatoes from the store. We will be spicing it up and it will taste amazing!

I also use that for my homemade tomato sauce. It is just your classic red sauce, without all the meat.

Half and Half

I use fat free half and half for this. I mean hey, why not keep the fat content down just a little! Ha! You are more than welcome to substitute a different half and half or heavy cream. If you want to skip it all together, you can; however, it does make the sauce nice and creamy.

Parmesan Cheese

I typicallyย use Kraft reduced fat parmesan cheeseย for the parmesan seasoning. Yes, the bottles stuff that is found in the pizza sauce aisle. Hey, I can't be perfect all the time and I do love this stuff. However, you can substitute any type of parmesan that you love or skip it.

Broth

I just use low sodium chicken broth. It helps to thin out the sausage bolognese sauce a little, if you want it to be thinned out. You can substitute a different broth or skip it, if you like your sauce thicker. However, as mentioned, I use low sodium so adjust your salt accordingly if you use a normal sodium broth.

Seasonings

The seasonings are just your classic Italian seasonings that you know and love.

  • Garlic (minced)
  • Oregano
  • Italian seasonings
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper
  • Granular sugar replacement (Swerve or sub real sugar)
  • Lemon juice

However, I do have to say that the Italian sausage is very flavorful. I cut back a bit on the seasonings as compared to if I were to use just chicken. If you are using an unflavored meat, I would also flavor the meat while cooking that.

How to Make Sausage Bolognese

How do you make sausage Bolognese, with bacon, in a tomato sauce, then added to pasta!? I know it sounds crazy; however, it is one of the best pasta sauce recipes I have tried! It honestly does not take long. I simmered in on the stove for a couple hours; however, you can skip that step.

Tomato Sauce

I like to start by getting the base ready, the actual tomato sauce. Grab a large pot, large enough that if the sauce starts to splatter, it won't go everywhere.

Grab a large pot and grease the bottom with cooking spray, or drizzle in a little olive oil. Heat the pot to a medium heat. Once heated, add the minced garlic and cook for about a minute, until fragrant.

Once the garlic is ready, pour in the crushed tomatoes. Add all of the seasonings (including the lemon juice, parmesan and sugar, just not the half and half), and stir to combine. Bring the sauce up to a boil then reduce the heat to low and keep it at a simmer.

Meats

We will need to move on to cooking the meats, this will be the sausage and the bacon.

Heat a pan over medium high heat, greased with cooking spray. Add the sausage and break it up while cooking. Once fully cooked, add it to the tomato sauce.

As mentioned, the Italian sausage is very flavorful. I cut back a bit on the seasonings as compared to if I were to use just chicken by not seasonings the meat. If you are using an unflavored meat, I would also flavor the meat while cooking that.

Bring the pan back up to a medium / medium high heat and add the bacon. Cook the bacon to your desired wellness then cut up the bacon as much as you would like. I tried to get the pieces as small as I could. Then, add the bacon to the tomato sauce and sausage, giving it a stir.

Bolognese

Make sure the sauce is still at a simmer and simmer for 30 minutes to 4 hours. About 10 minutes before ready to eat, add the half and half and stir that to combine into the sauce. However, if you do not have much time to simmer the sauce, do not worry about it. While the sauce will taste a little more flavorful after simmering, you can skip it.

This recipe does not include the pasta; however, I love serving this sausage bolognese tomato sauce over some spaghetti or any type of pasta you love!

Start off adding just a very small amount of broth until your desired thickness/thinness. Let it simmer with the rest of the sauce and add more as you need it. You can even skip the broth if you do not like your sauce thinned out.

Summer BBQ Recipes

Happy Summer! Which is 51 weeks out of the year in Florida. However, I know summer doesn't start until Memorial Day for most of the Country. I have compiled a list of all my favorite summer BBQ recipes. Not all of these are actually made on the BBQ; however, just remind me of a summertime gathering outdoors.

Have you ever seen those pre-marinated, pre-seasoned pork tenderloins in your meat section? I absolutely love having one of those on hand. They last in the fridge for about a month. They are perfect for those days when I do not know what to cook, or forgot to set my meat out of the freezer.

The hormel pork tenderloin is very easy to make and super quick in the oven. However, I highly suggest cooking the tenderloin in the slow cooker. It takes less than two hours (even just 90 minutes usually) and comes out extremely tender.

There are tons of different brands and flavors to choose from. I have tried almost all of them; however, this recipe will feature the apple bourbon. It is a fan favorite!

For anyone who has not seen this tenderloin before, here is what the apple bourbon hormel pork loin looks like. As I said, there are different brands, I also love Prairie Fresh, and flavors.

What You Need to Make the Hormel Tenderloin

First things first is a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

Then, of course, you will need the Hormel pork tenderloin. You can also use another brand or any flavor that you wish.

I am not even kidding, the only ingredient you will need is some broth; however, you can substitute that with some water if you do not have any. This just keeps the pork moist as it cooks.

If you find that any of the flavors are too spicy or smokey for you, which they can be, you can also sprinkle some brown sugar on top.

How to Cook a Hormel Marinated Pork Tenderloin in a Slow Cooker

Cooking the Hormel pork tenderloin in the slow cooker is very easy. Add the broth or water to the bottom of the crock pot first. Then, add in the pork tenderloin. Stick the meat thermometer into the largest part of the pork. Then, set the crock pot on low for 90 to 120 minutes. When the pork is done, slice into pieces.

If you do not have that long, or want to try out the oven version, preheat the oven to 435 degrees. Add the pork tenderloin to a greased baking tray and bake for 25-30 minutes.

You can also cook the hormel pork tenderloin in the air fryer for about 10 minutes, using the same technique and the slow cooker with the broth.

The secret is out, garlic and parmesan cheese broccoli in an air fryer is the best vegetable to try!

Air fryer broccoli Parmesan can get a little dry and a little messy. It is no doubt that an air fryer can make almost anything crispy; however, it can also make it dry. Plus, with all the extra parmesan and garlic hanging around, it can really get your air fryer dirty. However, I will help walk you through all these solutions.

What You Need for Air Fryer Broccoli Parmesan

Make sure you grab an air fryer, I like using a rack type air fryer for this. In addition, I like to use air fryer liners as this recipe can get a bit messy with all the extra garlic and parmesan.

Now, for the actual ingredients.

  • Cooking spray
  • Broccoli
  • Minced garlic
  • Parmesan
  • Garlic salt

I typically use Kraft reduced fat parmesan cheese for the parmesan seasoning. Yes, the bottles stuff that is found in the pizza sauce aisle. Hey, I can't be perfect all the time and I do love this stuff. However, you can substitute any type of parmesan that you love.

I mean come on, who doesn't love garlic!? Lately, I have beenย buying whole, peeled, garlic clovesย and mincing them myself withย a mini food processor. Typically, I do a whole bunch of them at one time. Then, I store themย in a mason jarย in the fridge. However, use a pre-minced garlic or an alternative. Spice World also makes a great pre-minced garlic.

If you think the broccoli is too dry, toss with some oil instead of cooking spray.

Air Fryer Broccoli Parmesan

How to Make Air Fryer Broccoli with Parmesan Cheese

First, preheat the air fryer to 350 degrees. Grease the air fryer rack with cooking spray. I like to add an air fryer liner to keep the mess down; however, you can skip it.

Cut the head of the broccoli up into bite-sized pieces and add to a large bowl.

Spray with cooking spray, tossing to coat. Then, sprinkle with the parmesan, garlic and salt, tossing to coat.

Add broccoli to the greased air fryer rack. Air fry for 10-12 minutes, flipping halfway. Any longer and the garlic will burn.

I like the spray the broccoli with some more cooking spray when it is done as the broccoli can get a bit dry. Alternatively, you can toss the broccoli with oil in the beginning.

However, if you do not have an air fryer, you can make this in the oven. Preheat the oven to 400 degrees. Line a baking tray with cooking spray. Repeat all the same steps to season the broccoli. Then, bake in the oven for 20-25 minutes, flipping halfway.

Truffle Roasted Potatoes

These truffle potatoes are roasted to perfection with a spicy parmesan seasoning.ย This combines everything I love, from potatoes, to truffle oil, to a nice parmesan crispy crust. Plus, make it spicy or keep it chill, whatever you love!

I absolutely love making potatoes. They are one of my favorite sides and never get old. I typically make a garlic herb version, which are amazing. However, I was feeling adventurous and invented these spicy, truffle, parmesan, roasted potatoes.

Roasted potatoes are some of the easiest sides you can make. Plus, customize any of the ingredients and use what you love.

If you do not like truffle, you can substitute out a regular olive oil. Then, this recipe will make spicy parmesan potatoes. Alternatively, if you do not like it spicy, skip the crushed red pepper. This recipe would then make truffle parmesan potatoes.

What You Need for Truffle Roasted Potatoes

Roasted potatoes are some of the easiest sides you can make. Plus, customize any of the ingredients and use what you love.

  • Potatoes
  • Truffle oil
  • Parmesan
  • Garlic
  • Crushed red pepper
  • Seasonings

Let's go over some suggestions and substitutions

Potatoes

You can really make this with any type of potatoes. I typically go for baby red potatoes; however, my Instant Cart driver told me they were all out of stock...

I use mini baby potatoes; however, you can use any potato you like. Either cut it up to about the same size as I did or adjust the cooking times. While on the topic, be sure to try and cut the potatoes as close in size as possible. This will allow them to all cook at the same time.

Truffle Oil

Fun fact, I am actually allergic to mushrooms, yes, truffle oil does count. However, I love the taste of truffle fries or truffle potatoes. Therefore, I have to make an except for these roasted potatoes and eat some truffle. Someone grab the Benadryl!!

While you have the truffle oil, make some of my truffle parmesan fries next time!

If you do not like truffle, do not have truffle oil, or are simply allergic, you can substitute out a regular olive oil. Then, this recipe will make spicy parmesan potatoes. Which are still amazing!

Parmesan

Garlic

Crushed Red Pepper

The spice for these truffle roasted potatoes comes from crushed red pepper. Alternatively, if you do not like it spicy, skip the crushed red pepper. This recipe would then make truffle parmesan potatoes. In addition, you can substitute out a different spicy seasonings such as ground red pepper.

Seasonings

For the seasonings, I keep it simple. Some garlic salt, because who does not love some more garlic and some salty potatoes. Then, some paprika, mostly for color, and a little bit of rosemary for a nice herb flavor. However, you can substitute out the seasonings for anything that you love.

Truffle Roasted Potatoes

I top it off with some parsley for color as well.

How to Make Truffle Roasted Potatoes

Start by preheating the oven to 425 degrees. Line a baking tray with aluminum foil, if desired, and spray with cooking spray.

Make sure the potatoes are thoroughly washed and dried. Then, cut the potatoes up into bite-sized, even, pieces.

Add cut potatoes to a large bowl and drizzle with the truffle oil, tossing to evenly coat. Sprinkle on the remaining seasonings and toss to evenly coat.

Add the potatoes to the baking tray and bake in the oven for 25 to 30 minutes, or until desired wellness. Be sure to flip the potatoes halfway through, or three times if starting to get too browned.

Alternatively, air fry at 400 degrees for 12-14 minutes.

Doritos Bake

This Doritos nachos bake is made in a one pot casserole dish with Mexican ground chicken and the only nachos recipe you will need. Plus, it is weight watchers friendly and completely customizable!

If you have tried my famous queso smothered chicken casserole, or nacho casserole, I have a new version for you - DORITOS BAKE! This combines nacho cheese Dorito chips, cheesy rice, perfectly cooked chicken and then all your favorite nacho toppings. Such a fun and easy way to eat all the delicious food that you love.

This Doritos nachos bake is made in a one pot casserole dish with Mexican ground chicken and the only nachos recipe you will need.

As I mentioned, this recipe is completely customizable. Use any chips that you love, substitute out the meat, switch up the cheese or yogurt and use any of your favorite taco toppings.

What You Need for a Doritos Bake

To make this Doritos nachos recipe, you will cook the chicken on the stove, the rice in the Instant Pot, then combine everything you need for the casserole and bake that in the oven.

For the ingredients, I will let you know what I use. However, we can go over substitutions and suggestions.

  • Ground chicken breast
  • Salsa con queso
  • Rice (Add some riced cauliflower too!)
  • Dorito nacho cheese chips
  • Taco toppings
  • Taco seasonings

Substitutions and Suggestions for Ingredients

Ground Chicken Breast

I am truly a chicken person. Chicken is my favorite meat and I will not change my mind. I prefer fat-free ground chicken breast; however, you can use any ground chicken.

In addition, you can substitute the chicken for ground beef, ground turkey or another type of ground meat.

Salsa Con Queso

Now what is salsa con queso you ask? Salsa con queso is in the grocery store and is near the tortilla chips in my local Publix. It is a jarred sauce/dip that consists of salsa and queso, hence, salsa con queso. No, it is not refrigerated before opening. I loving having salsa con queso in my house as it is pretty low calorie for what it is, cheese.

There are a variety of different brands but I use the generic one, it is cheaper! However, you can also make your own using Velveeta, or a similar cheese, and salsa. Purchase a pre-made salsa or make my homemade skinny salsa recipe. In addition, you can also substitute queso blanco.

Rice

I use Publix extra long grain rice, always. It is just what I have on hand and what I use for every dish. However, you can use a different rice, just be mindful of cooking times.

In addition, I will be making Instant Pot rice for this recipe. However, you can make your rice any which way that you wish. I have a great stovetop rice recipe as well.

(Add some riced cauliflower too!)

Doritos

Come on, this Doritos bake has to call for some Dorito nacho cheese chips! I had some extra bags of Doritos, they said nacho on them, it was really a no brainier. However, you can substitute a different type of chip, such as tortilla chips. But, this Doritos casserole is amazing with some Dorito chips!

I had the Family Size Doritos and I estimated that I used about 20% of the bag, which is 3 servings or 35 chips (84 grams). The ratio of chips to meat was perfect for me. Very meaty but lots of chips. You can add more or less chips, if you wish. In addition, you can crumble some fresh chips on your bowl after serving.

Do the Doritos stay crunchy? Yes and no. Some are crunchy, some are soft, some are right in the middle. Kind of like normal nachos! If you want just fresh Doritos, make this recipe without the dorito and then crumble some on top!

Taco Toppings

The taco toppings I pick for my Mexican chicken casserole are obviously Doritos. Along with nonfat Greek yogurt, onion, tomato, corn and shredded Mexican cheese. However, you can pick any toppings that you like. I also use Taco Bell sauce; however, you can substitute out another brand or some salsa too.

You can easily substitute the Greek yogurt for sour cream; however, I like using yogurt as it is very light and has added protein.

Adding beans straight in with the cooked meat is amazing. Then, top it off with anything else you see fit such as shredded lettuce, jalapeรฑos or olives.

In addition, I just gave my suggestions and what I did in regard to the amount of taco toppings used. Please feel free to use as much or as little of the taco toppings in the recipe.

Taco Seasonings 

I always have my homemade taco seasonings on hand, I make them exactly how I like them and I think they are better than anything you can buy. Plus, when you buy a seasonings mix, you never really know what is in it. 

This is the taco seasonings recipe that I live and breathe for, hey, I love tacos, and is perfect to season the pork for this recipe. However, you can also buy a packet, just use 2/2.5 tablespoons of it!

  • ยผ teaspoon salt
  • 1 teaspoon chili powder
  • ยฝ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • ยผ teaspoon black pepper
  • ยฝ teaspoon oregano

Adjust any of these seasonings to your liking in your Mexican chicken that would go great with nacho cheese Doritos. This mix is not spicy; however, you can make it spicier with the addition of ground red pepper. However, if you are watching your salt, you can reduce that as well. But I do not think there is too much salt in this.

How to Make Doritos Bake

How do you make this Doritos nachos recipe? Preheat the oven to 350 degrees. Grease a casserole dish (I use an 8x8 glass dish) with cooking spray and set aside.

Rice

Add rice to the bottom of the Instant Pot. Either use a nonstick bowl insert or grease the bottom first. Level out the rice.

Add water to the top of the rice, trying not disturb the rice. It is okay if some pieces come up and float.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it. Not the rice setting, I just use the pressure cook setting. However, you can also make the rice on the stovetop or use an alternative rice.

When the time is up let the pot sit for 5-6 minutes and then move the valve to venting. Remove the lid and add in the salsa con queso, mixing to combine. Then, set aside. (Add some riced cauliflower too!)

Chicken

Heat a medium sized pan, greased with cooking spray, over medium/high heat. Add minced garlic and sautรฉ for a minute. Add in the ground chicken and start breaking up the chicken. If you like it browned and crispy, let the chicken set, whole, on the stove about 1-2 minutes per side before breaking up.

Once the chicken is starting to break up, sprinkle on the seasonings. Continue to break up and mix the chicken until fully cooked. Reduce the heat to medium and pour in the Taco Bell sauce and lime juice. Mix for a minute then remove from heat.

Doritos Bake

In the casserole dish, add in half of the Doritos and break up into smaller pieces. Layer evenly with the rice mixture, then the ground chicken. Spread on the yogurt, then sprinkle on your taco toppings. Be careful as to which taco toppings you are putting on right now as it will have to go in the oven. Not all toppings should be heated up such as shredded lettuce.

Add the other half of the Doritos on top, slightly crushed, then, sprinkle with cheese. Bake in the oven for about 10 minutes to allow the cheese to melt. Add any additional taco toppings or more chips, then, divide into 4 pieces.

Leftovers

I am going to be honest here, this Mexican chicken casserole does not make for the best leftovers and the problem is with the Doritos. The reason for this is that the Doritos get soggy. The nacho cheese sauce does keep the meat moist, which keeps the Doritos moist.

I did eat a serving as leftovers the next day. It was amazing but not highly recommended to make as leftovers or a meal prep. However, if you do want this as a meal prep, do not add the Doritos into this dish. Instead, have them on the side and crumble them into your bowl when you are ready to eat.

You can also use this recipe as a starting guide to make some typical nachos with Doritos.

Starbucks Sweet Cream

How to make a healthier Starbucks vanilla sweet cream which is the perfect creamer for your cold brew coffee.

I love a little splash of sweet cream in my Starbucks cold brew. But, what I do not love is the extra $1.25 and really how unhealthy it can be. I did what I do best and made my own, healthier, Starbucks sweet cream! Yes, this is different than the sweet cream cold foam, it is more of a creamer that you mix into your coffee.

I love making a big container of this to use in my coffee in the mornings.

How to make a healthier Starbucks vanilla sweet cream which is the perfect creamer for your cold brew coffee.

You will normally see this with half and half, sweetened condensed milk and vanilla; however, I am making it a little healthier.

What You Need for Starbucks Sweet Cream

Typically, this is made with half and half, sweetened condensed milk and vanilla; however, I am making it a little healthier.

  • Fat-free half and half
  • Coconut cream unsweetened
  • Vanilla extract

If you like it sweet, you can add a tablespoon or two of Splenda, or an alternative sweetener, into the mixture as well.

I will probably get this question a lot, does it taste like coconut? I would say only slightly and I really do not notice the coconut too much. Plus, it is dairy free, vegan and gluten free. However, you can still substitute for sweetened condensed milk.

I probably will also get this question, where do I find coconut cream. I grabbed it at Publix; however, I also see that WalMart has it as well. A quick google search should help you locate some.

If you want to skip the coconut, you can substitute heavy cream. It will not be as "light"; however, be more authentic.

How to Make Starbucks Sweet Cream

All you need to do is add all the ingredients to a bowl, mason jar, or something similar, and stir together. I love putting everything into a mason jar so I can close up the lid and shake it together.

If the coconut cream is chunky, blend or mix it together very well to form an even liquid. However, the next day, you may need to stain the mixture if the coconut cream is too chunky.

I definitely suggest the mason jar if you are making more than one serving. Seal the mason jar and place it in the fridge to keep the sweet cream fresh. Plus, when you need to use it, give it a shake to make sure everything is still combined.

If you like it sweet, you can add a tablespoon or two of Splenda, or an alternative sweetener, into the mixture as well. I typically just put my Splenda right into my coffee.

I make my coffee with my Ninja coffee maker on the iced setting with Target's vanilla coffee grounds.

What To Do With Starbucks Sweet Cream

My favorite thing to do with Starbucks vanilla sweet cream is to just use it as a creamer. However, you can also froth it and pour that over your coffee.

This makes about 1.25 cups of sweet cream. I typically use ยผ cup of coffee in my coffee each morning; therefore, this will last me five days. I do not like keeping in the fridge for more than a week.

Who doesn't love a good one pan me!? Especially when it is this easy to throw together, contains tons of veggies and is seriously so delicious! That is why I love making my sheet pan chicken caprese. Is the balsamic glaze for the caprese chicken your favorite, because it is mine! So tasty, so delicious and so EASY!

Make this recipe on a sheet pan, like I do. However, you can make it in a casserole dish or in a shallow, oven safe, pot.

What You Need to Make Sheet Pan Caprese Chicken

Make this dish in your oven with no fancy tools required. As mentioned, make this chicken caprese on a single sheet pan with nothing else required. However, you can make it in a casserole dish or in a shallow, oven safe, pot.

  • Chicken cutlets
  • Seasonings
  • Spinach
  • Basil
  • Tomatoes
  • Mozzarella cheese
  • Balsamic glaze

We can go over some suggestions and substitutions as well.

Chicken

For my sheet pan chicken caprese recipe, I use very thin chicken cutlets. I buy them from the store, already very thin. I think that having a very thin chicken is key here as you do not want to over bake and burn the cheese. You can thinly slice your own chicken, or use another cut of chicken. Just be mindful of the cheese or put it in a little later in the cooking process.

Seasonings

I use the classic Italian seasonings for this dish such as Italian seasonings, basil, garlic powder, onion powder, salt. You know the drill. Season with your favorite seasonings and add some spice if you love a spicy meal. Crushed red pepper would be amazing with this if you love some spice.

Spinach

You will want to use fresh spinach for this recipe as frozen spinach will be too watery and ruin the dish. In addition, add any of your favorite greens to the spinach. I love adding some arugula to the dish.

Basil

Use fresh basil if you can, I love how it really elevates the flavor and makes it feel so fancy. However, if you kill any basil plant like I do, you can use the dried kind, just like I do. Welcome!

Tomatoes

A classic chicken caprese has tomatoes and my sheet pan version is no different. Any type of tomatoes will work well here. Pick your favorite tomato; however, I just prefer the tiny ones. I get some sweet cherry tomatoes from Publix and they are amazing in this dish as I like a little sweetness to mine.

Mozzarella

I use just your normal sliced mozzarella. In fact, I even bought it pre-sliced for an easier dish. However, you can use shredded mozzarella or any other cheese that you prefer. Substitute with a fat-free or reduced fat mozzarella as well.

Balsamic Glaze

Balsamic glaze on this chicken caprese is the best thing ever!! I absolutely love it; however, you can skip it or use something else. But, it is so much better with it on top!

How to Make Sheet Pan Chicken Caprese

Preheat your oven to 350 degrees. Line a baking tray with foil and spray with cooking spray, it is easier for clean up. If the sheet pan is quite large, use the foil to create a smaller working space by folding up the edges.

Season both sides the chicken cutlets with the seasonings. Slice the tomatoes and mozzarella cheese into thin slices, then, set aside.

On the sheet pan, add the spinach. You want to make the spinach just about the same size as the chicken. Layer the chicken on top of the spinach, trying not to overlap the pieces too much.

Layer the chicken with the tomatoes, then the basil, and finally, the mozzarella slices. Drizzle the balsamic glaze on top.

Place in the oven for about 30 minutes, until the chicken is fully cooked, and the cheese is bubbly.

What I Love About This Recipe

What I love about sheet pan chicken caprese is mostly that it is so easy to make and only requires me to clean on pan. Well, really none if you line with aluminum foil. But, also, what I love about this dish is that it is so easy to make one serving or 20! This dish goes great with so many different sides and veggies, the combinations are endless. Plus, this really allows you to get in so many vegetables in such a yummy way.

Teriyaki broccoli is my favorite recipe to make as it combines the best bottled teriyaki sauce with a sweet roasted broccoli. I am not kidding when I tell you my teriyaki broccoli is the best and easiest way to eat broccoli. Not many ingredients are required and little cooking is actually done. I actually grew up eating something very similar to this, almost every night. My mom would serve us this broccoli no matter what we were eating.

Teriyaki broccoli is my favorite recipe to make as it combines the best bottled teriyaki sauce with a sweet roasted broccoli.

Making takeout food is one of my absolute favorite things to make! I have made tons of takeout recipes from sweet and sour chicken, to orange chicken, to General Tso chicken and much more. But, one thing I have not hit was that classic teriyaki broccoli.

I honestly cannot believe I have not shared this recipe. Mostly because it is so simple, I never thought it needed a recipe. However, it was time to bring it on here as it is one of my favorite ways to eat broccoli.

My mom would serve us this broccoli, almost every night, no matter what we were eating. Burgers? Teriyaki broccoli. Spaghetti and meatballs? Teriyaki broccoli.

What You Need for Teriyaki Broccoli

Teriyaki broccoli combines a salty, yet sweet, sauce on top of perfectly roasted broccoli heads.

  • Broccoli
  • Teriyaki sauce
  • Honey

I always have teriyaki sauce in a jar on hand. I use a gluten free stir fry marinade and sauce from San J. It is also low sodium; however, you can use a different version. They have tons of sauces that I LOVE. I usually get the teriyaki at Publix; however, you can grab their whole line on Amazon, or use this as a reference photo.

As mentioned, this recipe uses teriyaki sauce; however, you can substitute for just soy sauce or use a combination.

I also use honey to make the sticky sauce. However, you can do a brown sugar as well. I also love this love calorie agave substitute that is great to use instead of honey in so many recipes!

For the seasonings, I do not use any. My mom did not and I do not. The teriyaki sauce and honey have plenty of flavor for the broccoli. However, you can use many seasonings including garlic powder and ground ginger. However, if you want something spicy, try adding some crushed red pepper.

How to Make Teriyaki Broccoli

This recipe is done in under 30 minutes which is why it is one of my favorite recipes to make.

To start, preheat your oven to 425 degrees. Then, cut up the broccoli heads into bite-sized pieces; however, I also like to use pre-cut broccoli heads. Place those in a bowl with the teriyaki sauce and honey, stirring to coat.

Line a baking tray with aluminum foil, this dish can get messy. Then, spray the foil with cooking spray. Add the broccoli to the pan, shaking off any excess sauce. Bake in the oven for about 20-25 minutes, flipping halfway.

Once done, place back in the bowl of sauce and toss to absorb any extra flavor.

I serve this broccoli with my sticky chicken and instant pot rice! I cannot have takeout chicken without broccoli and rice.

Plus, it really is that easy to make and takes about 15 minutes!

Making takeout food is one of my absolute favorite things to make! I have made tons of takeout recipes from sweet and sour chicken, to orange chicken, to General Tso chicken and much more. But, one thing I have not hit was that classic teriyaki chicken.

It reminds me of being younger, walking through the mall. This one takeout place would always hand out samples of teriyaki chicken. I would walk around I circles many times, trying to get as many samples as possible. Those are usually made with chicken thighs; however, I am going lighter with chicken tenderloins.

I also substituted honey to make the sticky soy chicken, instead of brown sugar. However, you can do a classic brown sugar as well.

This recipe calls for try chicken tenderloins; however, it really does not matter which cut of chicken that you use. I love using chicken tenderloins as they are a very tender piece of chicken, hence the name, and easier to cut as they are already slim. This recipe is amazing with chicken breast, chicken thighs, chicken cutlets, just about anything.

Sticky chicken needs a key ingredient and that is teriyaki sauce. I always have teriyaki sauce in a jar on hand. I use a gluten free stir fry marinade and sauce from San J. It is also low sodium; however, you can use a different version. They have tons of sauces that I LOVE. I usually get the teriyaki at Publix; however, you can grab their whole line on Amazon, or use this as a reference photo.

I also substituted honey to make the sticky soy chicken, instead of brown sugar. However, you can do a classic brown sugar as well. I also love this love calorie agave substitute that is great to use instead of honey in so many recipes!

For the seasonings, I use seasonings to get that classic teriyaki chicken flavor including garlic powder and ground ginger. If you want something spicy, try adding some crushed red pepper.

How to Make Sticky Teriyaki Chicken

This recipe is done in under 15 minutes which is why it is one of my favorite recipes to make. You can marinade the chicken in the sauce; however, I do not. I turn the marinade into a sauce anyways; therefore, I do not find it too necessary.

To start, cut up the chicken tenderloins into bite-sized pieces, about one inch by one inch. Place those in a bowl with the teriyaki sauce and honey, stirring to coat.

Let that chicken set. Then, heat a medium sized pan over medium high heat. Once heated, add the chicken (with the sauce) and bring that to a simmer. Simmer and cook the chicken until it reaches an internal temperature of 165 degrees and is fully cooked.

At this point, the sauce should be thickened enough to stick to the chicken, hence the sticky teriyaki chicken. Remember that it will continue to thicken as it cool. However, if you find that the sauce is not thick enough, combine one teaspoon of corn starch with an equal portion of water and slowly add into the sauce and chicken until your desired thickness is reached.

You can, alternatively, cook the chicken in the oven or the air fryer; however, the sauce does not thicken up those ways.

I serve this sticky teriyaki chicken with my teriyaki broccoli and instant pot rice! I cannot have takeout chicken without broccoli and rice. There is a little bit of sauce left for the rice. However, if you want more sauce, you need to make my yum yum sauce. It is one of my most popular recipes.

  • Add any of your favorite pasta salad toppings
  • Substitute the Splenda for any sugar or sugar substitute of your choosing
  • Trust me, if you do not like Greek yogurt, you will still love this. You really do not taste it.
  • I think chilling is essential; however, you can skip the chilling if time does not permit
  • Double, triple, quadruple or more this recipe
  • Yes, this is a very acid forward sauce. You can also replace the apple cider vinegar with lite Italian dressing if you want something with a lot less acidity.

What You Need for this Pasta Salad Recipe

As mentioned, this is a pasta salad with no mayo. We will substitute that with Greek yogurt. Trust me, I am not a Greek yogurt fan on its own; however, you do not taste it in this and it is REALLY GOOD. Did you know that Greek yogurt has protein. Added protein is always great!

If you are on ww, this is a fun way to make a skinny pasta salad recipe and stay within your points. All the ingredients are light and bright with the addition of the pasta for some carbs. Macaroni salad can be hard on weight watchers but when substituting the mayo for Greek yogurt, you can make a very light version.

  • Macaroni

  • Italian seasonings / basil

Let's go over some suggestions and substitutions

This is my macaroni salad with greek yogurt recipe; therefore, we will need some plain, non-fat Greek yogurt. I get it, not everyone loves Greek yogurt; however, you really do not taste it here. We will be seasoning and combining lots of ingredients. Plus, did you know that Greek yogurt has protein. Added protein is always great!

However, you can substitute that yogurt for mayo if you really want to.

I have also found that adding just 1 tablespoon of Mayo into the yogurt cuts the tartness.

Yes, this is a very acid forward sauce. You can also replace the apple cider vinegar with lite Italian dressing if you want something with a lot less acidity.

For the sugar in this pasta salad recipe, I use Splenda. However, you can use a different sugar substitute or just plain sugar.

Macaroni Salad with Greek Yogurt

Toppings:

You can see the toppings that I used; however, I will also suggest some additional ones. But, use any toppings that you love.

  • Turkey pepperoni
  • Red onion
  • Bell pepper
  • Celery
  • Cherry tomatoes
  • Parmesan
  • Pickles
  • Olives

I did not use the last two ingredients; however, I think they would taste very good in a pasta salad. Feel free to use any ingredients that you love.

How to Make Macaroni Salad with Greek Yogurt

It may seem like it takes a lot of time to do all the chilling; however, I find that layering and chilling works the best. But, if you are low on time, just mix it all and serve.

First, cook pasta according to the package instructions. Drain well and rinse under cold water until pasta is no longer warm. Shake the pasta in the strainer to get off as much water as possible. Place in an air-tight container in the fridge for at least 30 minutes. If worried about the pasta sticking, add a little oil and toss to coat.

Meanwhile, combine all the ingredients for the sauce in a large bowl, the yogurt, vinegar, Splenda and seasonings. Let that set in the fridge until ready to combine.

When the pasta is cold, pour the sauce into the pasta container and toss to coat. Let set in the fridge for another 30 minutes, to allow the pasta to absorb the sauce and flavors.

While the pasta is chilling, chop up all the ingredients into bite-sized pieces, as small as you like. When the pasta is done chilling, combine the ingredients into the pasta container, tossing to coat. Let that all set in the fridge for another 30 minutes to allow the toppings with the macaroni salad to absorb the Greek yogurt sauce.

I know it seems like a lot to keep chilling the pasta after every step; however, this really allows each ingredient to absorb all of the flavors. But, as mentioned, you can skip this chilling process if short on time.

If you are like me, you are obsessed with Chick-fil-A. I travel a ton for work so a quick 8-count grilled nugget is my go-to. What are your favorite sauces? My usual is the honey roasted BBQ (tastes like the chickfila sauce but healthier). However, my guilty pleasure is definitely the Polynesian. I just really think it is too oily to really enjoy a lot of it. 

So, here we have it, COPYCAT CHICK-FIL-A POLYNESIAN SAUCE. Tastes like the real deal but better since it is not as thick and oily as the classic. I did a comparison and even tried it with some real chickfila and it really held up!

Did you know that one little packet at Chick-fil-A is SIX weight watchers points. No no no thank you! Mine is only 1 point for about 2.5 tablespoons and that is definitley more feasible for me.

Have you ever wanted to spice up the classic jalapeรฑo popper recipe!? Well, me too! That is why I created these jalapeรฑo popper meatballs which are literally EXPLODING in flavor. They are the healthier, protein packed version of your favorite appetizer. This dish was voted best dish of the year!

If you are scared of spice, do not worry, you can still make these jalapeno popper balls and just add less jalapeรฑo. You can also skip the jalapeno entirely and make just some cheese stuffed meatballs.

What You Need for Jalapeno Popper Meatballs

You will need all of the basics of a jalapeรฑo popper, plus some extra ingredients as we are forming them into meatballs.

  • Ground beef
  • Jalapeรฑo
  • Breadcrumbs
  • Worcestershire sauce
  • Seasonings
  • Shredded cheese
  • Cream cheese

However, we can go over some substitutions and suggestions.

I am truly a chicken person. However, my husband always asks me for beef recipes and I do enjoy my occasional beef. These jalapeno popper meatballs seemed like the perfect recipe to use beef; however, you can use ground chicken, turkey or anything else. I do use extra lean ground beef, which is 96% fat-free, to keep it lighter. Since I am on weight watchers, I like to keep the ground beef fat as low as possible in these poppers. However, you can use any fat percentage that you like.

Jalapeรฑo

If you do not want this dish to be too spicy, remove the jalapeno or use less. Fresh jalapeรฑo tends to be more spicy than the bottled version which is also something to keep in mind. Plus, the seeds are the very spicy part so be mindful of how many you are using.

As always, after touching a jalapeno with your bare hands, please wash your hands. The jalapeno spice will stick to your hands and will get in your eyes or on your mouth if you touch that after.

Breadcrumbs

Breadcrumbs help keep the meat together. You can also plop an egg in there too; however, I do not think it is necessary in these jalapeno popper meatballs.

Worcestershire Sauce

Just add it in, you will not taste it!

Seasonings

I keep my seasonings on the less spicy side as we will add in some minced jalapeno; however, you can spice up the seasonings as much as you like. In addition, some minced onion or garlic would be good in this too; however, I was keeping it simple and easy.

Shredded Cheese

I use fat free shredded cheddar cheese; however, you can substitute that for any cheese that you like. I usually keep fat-free or reduced fat on hand and that is just what I use.

Cream Cheese

Finally, for the main attraction. You cannot have a jalapeno popper without some cream cheese and these meatballs are no exception. I do not season the cream cheese, I just put it straight from the fridge into the balls; however, you can do with it as you please.

I also use โ…“ less fat cream cheese. You can use any type that you want or try a flavored cream cheese.

How to Make Jalapeno Popper Meatballs

To start, preheat the oven to 425 degrees. Line a baking tray with aluminum foil and grease with cooking spray.

Mince or dice the jalapeรฑos as small as you want them. I use this mini food processor. It is great for garlic too. Add the ground beef to a bowl. Sprinkle with all the ingredients (except the cream cheese) and toss to evenly mix.

Divide the meat mixture into 6 equal sized pieces, flattening them out into circles. Scoop one teaspoon of cream cheese, in a ball shape, and place in the middle of a flatten meat circle. Bring up the edges, pinching closed, and roll together to form a ball. Repeat for each meatball, placing on the baking tray.

Bake these jalapeno popper balls in the oven for 10-12 minutes, flipping halfway.

Alternative Meatball Recipes

If you still want to make a meatball recipe; however, do not want something this spicy, I have a couple of suggestions.

  • Cheeseburger bombs are one of my most popular recipes. If you want the ground beef but not the jalapeno, try this. Very similar to this recipe but not spicy and more burger-y.
  • You can also try my buffalo ranch chicken meatballs. These will be a tiny bit spicy; however, not as spicy as these jalapeno popper meatballs. In addition, they are made with chicken instead of beef.
  • Try for a classic turkey meatball recipe. Then, you can add any sauce that you want with it.

This delicious Mexican nacho casserole is made with queso Blanco cheese sauce and Dorito chips, plus, it is weight watchers friendly and completely customizable!

If you have tried my famous queso smothered chicken casserole, or Doritos bake, I have a new version for you - NACHO CASSEROLE! This combines nacho cheese Dorito chips, cheesy beef and then all your favorite nacho toppings. Such a fun and easy way to eat all the delicious food that you love.

As I mentioned, this recipe is completely customizable. Use any chips that you love, substitute out the meat, switch up the cheese or yogurt and use any of your favorite taco toppings.

This delicious Mexican nacho casserole is made with queso blanco cheese sauce and Dorito chips, plus, it is weight watchers friendly.

What You Need for a Nacho Casserole

To make this nacho casserole, you will cook the beef on the stove, then combine everything you need for the casserole and bake that in the oven.

For the ingredients, I will let you know what I use. However, we can go over substitutions and suggestions.

  • Ground beef
  • Queso Blanco
  • Dorito nacho cheese chips
  • Taco toppings
  • Taco seasonings

Substitutions and Suggestions for Ingredients

Ground Beef

I am truly a chicken person. However, my husband always asks me for beef recipes and I do enjoy my occasional beef. This seemed like the perfect recipe to use beef; however, you can use ground chicken, turkey or anything else. I do use extra lean ground beef, which is 96% fat-free, to keep it lighter. Since I am on weight watchers, I like to keep the fat as low as possible in this Mexican casserole. However, you can use any fat percentage that you like.

Queso Blanco

I specifically use Queso Blanco cheese sauce for this nacho casserole. It has a slight spice to it, yet, it is creamy and refreshing. It is basically just a white cheese melted with some salsa. You can make that yourself at home. Additionally, you can substitute salsa con queso which is essentially just melted Velveeta and salsa.

Doritos

Come on, this Mexican nacho casserole has to call for some Dorito nacho cheese chips! I had some extra bags of Doritos, they said nacho on them, it was really a no brainier. However, you can substitute a different type of chip, such as tortilla chips. But, this Mexican casserole is amazing with some Dorito chips!

I had the Family Size Doritos and I estimated that I used about 20% of the bag, which is 3 servings or 35 chips (84 grams). The ratio of chips to meat was perfect for me. Very meaty but lots of chips. You can add more or less chips, if you wish. In addition, you can crumble some fresh chips on your bowl after serving.

Do the Doritos stay crunchy? Yes and no. Some are crunchy, some are soft, some are right in the middle. Kind of like normal nachos! If you want just fresh Doritos, make this recipe without the dorito and then crumble some on top!

Taco Toppings

The taco toppings I pick for my nacho casserole are plain, nonfat Greek yogurt, onion, tomato, corn and shredded Mexican cheese. However, you can pick any toppings that you like.

You can easily substitute the Greek yogurt for sour cream; however, I like using yogurt as it is very light and has added protein.

Adding beans straight in with the cooked meat is amazing. Then, top it off with anything else you see fit such as shredded lettuce, jalapeรฑos or olives.

In addition, I just gave my suggestions and what I did in regard to the amount of taco toppings used. Please feel free to use as much or as little of the taco toppings in the recipe.

Taco Seasonings 

I always have my homemade taco seasonings on hand, I make them exactly how I like them and I think they are better than anything you can buy. Plus, when you buy a seasonings mix, you never really know what is in it. 

This is the taco seasonings recipe that I live and breathe for, hey, I love tacos, and is perfect to season the pork for this recipe. However, you can also buy a packet, just use 2/2.5 tablespoons of it!

  • ยผ teaspoon salt
  • 1 teaspoon chili powder
  • ยฝ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • ยผ teaspoon black pepper
  • ยฝ teaspoon oregano

Adjust any of these seasonings to your liking in your nacho casserole. This mix is not spicy; however, you can make it spicier with the addition of ground red pepper. However, if you are watching your salt, you can reduce that as well. But I do not think there is too much salt in this.

How to Make a Nacho Casserole

Preheat the oven to 350 degrees. Grease a casserole dish (I use an 8x8 glass dish) with cooking spray and set aside.

Heat a medium sized pan, greased with cooking spray, over medium/high heat. Add minced garlic and sautรฉ for a minute. Add in the ground beef and start breaking up the beef. If you like the beef browned and crispy, let it set on the stove about 1-2 minutes per side before breaking up.

Once the beef is starting to break up, sprinkle on the seasonings. Continue to break up and mix the beef until fully cooked. Drain the excess liquid then reduce the heat to medium. Pour in the Queso Blanco cheese sauce, mix up, then remove from the heat.

In the casserole dish, add in the Doritos and break up into smaller pieces. Layer evenly with the beef mixture, spread on the yogurt, then sprinkle on your taco toppings and cheese. Be careful as to which taco toppings you are putting on right now as it will have to go in the oven. Not all toppings should be heated up such as shredded lettuce.

Bake in the oven for about 10 minutes to allow the cheese to melt. Add any additional taco toppings or more chips, then, divide into 4 pieces.

Leftovers

I am going to be honest here, this does not make for the best leftovers. The reason for this is that the Doritos get soggy. While the excess liquid is drained, the nacho cheese sauce does keep the meat moist, which keeps the Doritos moist.

I did eat a serving as leftovers the next day. It was amazing but not highly recommended to make as leftovers or a meal prep. However, if you do want this as a meal prep, do not add the Doritos when making this Mexican casserole dish. Instead, have them on the side and crumble them into your bowl when you are ready to eat.

All you need are three ingredients to make this protein lemonade drink, just a premier protein shake and lemonade, without any protein powder. 

Need a little summer-time pick me up? Grab just two ingredients and blend them together with some ice to make a copycat frosted lemonade but with added protein! The best little treat to start your day bright!

All you need are three ingredients to make this protein lemonade drink, just a premier protein shake and lemonade, without any protein powder.

How fun and summery is this drink!? Even if it is not summery where you are, I am in Florida where we have summer all the time. So make this drink and pretend like we are sipping a protein lemonade out by the beach.

What You Need

For this recipe, you really only need two ingredients: a Premier Protein protein shake and a small packet of Crystal Light lemonade mix. Of course, some ice as well but I am sure you already have that one.

I used Premier Protein for this lemonade because that it what my InstaCart driver brought me; however, you can use any vanilla flavored protein shake that you prefer. In addition, I used a Crystal Light lemonade; however, if there is another one out there that you prefer, try that. Someone suggested True Lemonade because it does not have aspartame. That does not bother me and I have never tried that other lemonade but you can make your own choice.

While you can make this protein shale without protein powder, you can make it with protein powder. All you will need is protein powder, lemonade and some liquid. Substitute the protein shake for 1.33 cups of water or plain, unsweetened almond milk and use two scoops of vanilla protein powder.

By the way, I use Orgain protein powder, it is my favorite. You can use code 'alliecarte30' for a 30% off discount on their website.

How to Make This Shake

To make this protein lemonade, you really just need to blend those two ingredients together with a cup of ice. Add more of less ice depending on how thick you like it but I kept it pretty thin.

If doing the protein powder and water method, just do the same thing by blending everything together.
