Have you tried Chuy's creamy jalapeno dip? Well, Chuy's is one of my favorite restaurants. It is a Tex Mex restaurant and they used to have the best happy hour! Free chips and dip with an order of a margarita. It was right by my work so my coworker and I would go there to gossip all the time. You know I am there!!

Anyways, they have a creamy jalapeรฑo dip that I have been absolute craving. A very similar version has become popular on TikTok and it has been all over the news. You know I had to recreate it, but, in a healthy way! This is where my jalapeno avocado dip was born!

I love a good dip. I have so many dip recipes already, but why would I ever stop. Some of my favorite and most popular ones are my greek yogurt buffalo chicken dip, fiesta corn dip, BBQ chicken dip, healthy jalapeรฑo popper dip, and my zero point onion dip.

Quick Tips

Use fresh jalapeรฑos or a spicier dip. Remove all the seeds or sautรฉ it on the stove if you do not want the jalapeรฑos to be too spicy. 

Add cheese on top and broil it 

Put some bacon inside - Bacon bits are easy but, but, real bacon is delicious 

Serve the dip inside a jalapeรฑo! But, for a less spicy version, try it out in a bell pepper or mini sweet pepper. However, you can also use these instead of chips

You can heat this up in the oven; however, I prefer serving it cold.

What You Need for the Best Jalapeรฑo Dip

No cooking is required for this recipe, which I love about it. But, you need a blender or food processor and a bowl to mix everything together and a fridge to let the dip set.

Yogurt

Yogurt is the base for my jalapeno dip. I use yogurt to keep this healthier, plus, yogurt has some added protein to keep you fuller for longer. However, you can substitute cream cheese or sour cream or a half and half mixture of the two. If you still want to keep it lighter, you can use reduced fat cream cheese and light sour cream.

It is not as thick using yogurt. While still creamy and able to be used as a dip, it has more of a salsa verde consistency. Adding a little cream cheese will thicken this dip up.

Pickled Jalapeรฑos

Picked jalapeรฑos come from a can and are less spicy than just using a full, fresh jalapeno for the dip. Use fresh jalapeรฑos or a spicier dip. Remove all the seeds or sautรฉ it on the stove if you do not want the jalapeรฑos to be too spicy. 

Avocado

Avocado is what is going to make this jalapeno dip super creamy. It will also cool the dish down a bit so it is not too spicy. Don't worry, I am not a huge avocado fan either; however, you really cannot taste it here. It just makes this Chuys creamy jalapeno dip extra creamy.

If you need a tip for picking out the best avocado - find the one that is the most squishy. Pick up the avocados, and if you can really squish it, that means it is ripe!

Lime Juice

You can do the juice from a lime But, if you are like me, I always have the bottle of lime juice in my fridge and I use that.

Seasonings

This is the taco seasonings recipe that I live and breathe for, hey, I love tacos, and is perfect to season the pork for this recipe; however, you can also buy a packet, just use 1-1.5 tablespoons of it! Then, add in the ranch afterwards.

  • โ…› teaspoon salt
  • ยฝ teaspoon chili powder
  • ยผ teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ยฝ teaspoon cumin
  • โ…› teaspoon black pepper
  • ยผ teaspoon oregano
  • 1 tablespoon ranch seasonings

Adjust any of these seasonings to your liking in your jalapeno dip. This mix is not spicy; however, you can make it spicier with the addition of ground red pepper. However, if you are watching your salt, you can reduce that as well. But I do not think there is too much salt in this.

Cilantro

The grocery store sells fresh cilantro by all the herbs and peppers. Grab a bunch!

how to serve jalapeno dip

This dip is great on its own with chips. However, I love placing it into a fresh jalapeรฑo. It is amazing with some extra shredded cheese on top. Then, broil that in the oven to get the cheese crispy and melty.

However, you can also serve jalapeรฑo slices on the side, for dipping. If you want something less spicy, serve this in some of those mini sweet peppers, in a bell pepper, or with bell pepper strips on the side. 

I serve this cold; however, you can also heat this in the oven for 10-20 minutes to get the cheese a little melty.

How to Make Chum's Creamy Jalapeno Dip

Add all your ingredients to a blender or food processor and blend until smooth.

Transfer the mixture to a bowl or Tupperware. Cover and store in the fridge for at least 30 minutes, to allow the flavors to form together.

Try out my creamy lasagna soup โ€“ it is a lazy, one pot recipe that is gluten free and Weight Watchers friendly. This is one fall recipe you do not want to miss out on! It is comforting, creamy but filling from the ground beef.

Lasagna Soup

To be honest, I am not the biggest soup fan. It must just be because I was born and raised in Florida, and we don't exactly have soup weather.

But, my first love of soup started several years ago when I made my healthy tomato soup. It is something that I crave every single fall.

A couple weeks ago, I decided to embark on my next soup, and that is this creamy, lazy one pot, gluten free, Weight Watchers friendly lasagna soup. It is a mouthful, but it really encompasses all of these categories.

I have been recipe testing and trying out different variations for weeks and I am constantly craving this recipe week after week. The richness from the cream and cheeses really makes this lasagna soup absolutely amazing. Plus, the meat keeps you full all night long.

I tried to keep this recipe as simple as possible. The ingredients list for my lasagna soup isn't too daunting and you only need one pot for an easy clean up. This is the perfect fall, weeknight recipe to cozy up to.

FAQs-

Do I have to make this gluten free? No! Of course not. I did use brown rice noodles to make this a gluten free lasagna soup recipe; however, you can substitute any noodles.

Should I really use one pot for this lasagna soup? Well, yes and no. The noodles will be okay if you are eating the soup immediately. If you plan on saving some for leftovers, cook the noodles separately and add into the individual servings before eating. If doing this, reduce the broth by one cup.ย 

Does ground beef need to be in this recipe? No, you do not have to add the ground beef. You can make this a vegetarian recipe by skipping the ground beef. However, if you want to make this a lighter dish, a more Weight Watchers friendly lasagna soup, substitute 99% fat-free ground turkey or ground chicken breast. But, if you want something more rich, use ground Italian sausage.

Can I freeze this soup? Well, the answer is yes; however, I do not recommend freezing the noodles or the cheese with the actual soup. If you want to freeze this, do not add in the cheeses or the noodles. Add that in right before you will be eating the meal. It will not be a one pot lasagna soup anymore; but, it will still be a really good recipe!

Ingredients Needed for a Lazy Lasagna Soup

You only need one pot for this lazy lasagna soup. Either a large pot or a Dutch oven.

  • Crushed tomatoes
  • Broth
  • Lasagna noodles
  • Half and Half
  • Parmesanย 
  • Basil
  • Ricotta
  • Seasonings
Onion and Garlic

You can buy pre-minced garlic; however, I love mincing my own withย this mini food processor. You can also use that for the onion, depending on how big you like the pieces.

Ground Beef

Does ground beef need to be in this one pot lasagna soup recipe? No, you do not have to add the ground beef. You can make this a vegetarian recipe by skipping the ground beef. However, if you want to make this a lighter dish, a more Weight Watchers friendly lasagna soup, substitute 99% fat-free ground turkey or ground chicken breast. But, if you want something more rich, use ground Italian sausage.

Crushed Tomatoes

I just use one larger can of crushed tomatoes. You can add some tomato paste before adding the crushed tomatoes, for a more vivid flavor. Also, you can use fresh tomatoes and blend them. However, I am keeping this a lazy one pot lasagna soup and just using some crushed tomatoes from a can.

If you like your lasagna soup to have a little more tomato in it, use half crushed tomatoes and half diced tomatoes. Which would be a 14.5 ounce can of each.

Broth

I typically have chicken broth on hand. I used that for this recipe; however, you can use beef broth since we are adding ground beef. But, you can use a vegetarian broth if you are skipping the meat all together.

I prefer to use a low sodium broth as to not make this dish too salty. But, if you have regular broth, be mindful of adding in more salt.

Lasagna Noodles

A one pot lasagna soup recipes needs our key ingredient - lasagna noodles! Do you have to make this gluten free? No! Of course not. I did use brown rice noodles to make this a gluten free lasagna soup recipe; however, you can substitute any noodles.

Half and Half

This is going to make our lasagna soup recipe into a creamy lasagna soup recipe. I cannot enjoy a soup without it being super creamy. I love adding in half and half; however, you can skip that if you do not want a creamy soup.

Usually, I tend to use fat-free items; however, you can use regular half and half.ย There are many other milks that you can use instead of this; however, I have not tried them. You can try heavy whipping cream, milk, almond milk, or another substitute.ย 

You can also add more broth and melt some cream cheese into the liquids to make the broth creamy instead of using half and half.

Parmesan

This is to add some extra cheesy flavor into the one pot, creamy lasagna soup. Again, I tend to use reduced fat; however, you can use any variety that you like.

Basil

I prefer to use fresh basil to sprinkle on top; however, if you have dried basil, that will be fine as well.

Ricotta

I use a skim milk, reduced fat ricotta cheese to keep this one pot lasagna soup a little more Weight Watchers friendly. However, you can use a regular whole milk ricotta. This will make the lasagna soup extra creamy and I highly recommend this ingredient!

Seasonings

I use some basic seasonings with some Italian herbs in there too. I use dried herbs for all of my seasonings; however, if you have fresh herbs, you can use that too.

  • Garlic powder
  • Onion powder
  • Italian seasonings
  • Parsley
  • Basil
  • Rosemary
  • Thyme
  • Salt
  • Black pepper
  • Granular sugar

How to Make a Weight Watchers Friendly Lasagna Soup

Heat a large pot or Dutch oven over medium heat. Spray with cooking spray or add some oil or butter.

Add diced onion and cook until translucent, about 3 minutes. Add in the minced garlic and cook for another minute, until fragrant. 

Place the ground beef into the mixture and start breaking it up. Sprinkle on the seasonings and continue to breakup while cooking. Continue to break up and mix in the seasonings until the beef is fully cooked.

Pour in the crushed tomatoes and chicken broth. I only used crushed tomatoes as I do not like the soup chunky. If you want more of a tomato feel, use half crushed and half diced tomatoes (14.5 oz cans each).Bring to a simmer and simmer for 5 to 10 minutes, stirring occasionally.

Break lasagna noodles up into smaller pieces then add into the lasagna soup. The noodles will be okay if you are eating the soup immediately. If you plan on saving some for leftovers, cook the noodles separately and add into the individual servings before eating. If doing this, reduce the broth by one cup. 

Simmer the soup until the noodles are almost fully cooked, according to package instructions. Then, pour in the half and half and parmesan and finish cooking the noodles. 

Divide soup evenly among the bowls. Then, top with basil and a scoop of ricotta.ย 

Can I Freeze This Soup?

This one pot lasagna soup can be frozen; however, we are going to have to turn it into a two pot soup.

I do not recommend freezing the noodles or the cheese with the actual soup. If you want to freeze this, do not add in the cheeses or the noodles. Add that in right before you will be eating the meal.

How Can I Make this Recipe Healthier?

You can make this a vegetarian recipe by skipping the ground beef. However, if you want to make this a lighter dish, a more Weight Watchers friendly lasagna soup, substitute 99% fat-free ground turkey or ground chicken breast. But, if you want something more rich, use ground Italian sausage.

You can also add baby spinach into the soup, as the pasta noodles are finishing cooking. Make sure you cook the spinach to wilt it down. That will add a delicious vegetable into the soup.

  • 28 ounces crushed tomatoes or half diced tomatoes

  • 8 pieces lasagna noodles
  • 1 cup fat-free half and half
  • ยผ cup reduced fat parmesan cheese grated
  • ยฝ cup part skim milk ricotta cheese
  • basil fresh
  • 2 tablespoons Italian seasoning
  • 1 tablespoon basil dried
  • 1 teaspoon parsley
  • ยฝ teaspoon rosemary
  • ยผ teaspoon thyme
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon granular sugar replacement

Instructions

This recipe is really not hard to make, at all. It just requires lots of simmering to thicken up the sauce.

Easily substitute the pasta for potatoes, rice, or a vegetable.

What You Need for the best Chicken Breast Recipe

These are the essential ingredients to make a creamy garlic chicken pasta; however, we can go over some suggestions and substitutions.

Chicken Broth

This creamy garlic chicken breast recipe just screams chicken. We are going to put so much chicken flavor into this and the recipe is really going to shine!

The broth will provide a base for the sauce, without overdoing it on the cream. I use reduced sodium broth, as to not make this dish too salty. However, you can substitute a different broth if you wish.

Fat-Free Half and Half

This is what will really make this dish creamy. I tend to use fat-free items; however, you can use regular half and half.

There are many other milks that you can use instead of this; however, I have not tried them. You can try heavy whipping cream, milk, almond milk, or another substitute.

You can also add more broth and melt some cream cheese into the liquids to make the broth creamy.

Better Than Bouillon

This is going to add a ton of extra chicken flavor into your dish. This will help flavor the chicken broth while also helping it thicken up.

Shallot and Garlic

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. You can also use that for the shallot, depending on how big you like the pieces.

Pasta

I use penne pasta because it is my favorite pasta shape. However, you can use any type of pasta that you wish. This creamy garlic chicken pasta recipe would be amazing with spaghetti too.

I did use pasta; however, you can substitute your carb for rice, potatoes, or a vegetable.

Chicken Cutlets

This recipe is perfect for chicken cutlets since we will be cooking them on the stovetop. You want your chicken to be thinner, so it can cook without burning. Insta Cart brought me the thickest biggest cutlets; however, I worked around it.

You can use a chicken breast, or other cut of chicken; however, you will want to slice or pound them thinner to cook properly.

Quick Substitutions

Substitute the half and half for your favorite milk or cream.

Use any carb you like, to pour the sauce over. But, you can also try it with vegetables.

Try a different cut of chicken; however, be sure it is cut thin to cook properly.

How to make This Creamy Garlic Sauce for Chicken Recipe

Cook pasta according to package instructions. Drain well and set aside. 

Preheat the oven to 400 degrees.

Season both sides of the chicken cutlets with the chicken seasonings blend, being sure to press into the chicken. 

Heat a pan over medium heat. Grease with cooking spray or drizzle some olive oil.

Add chicken cutlets and cook thoroughly, about 5 minutes per side. Then, remove to a clean plate. 

Drizzle the pan with oil or grease again. Add diced shallot and cook for about 2-3 minutes, until turning translucent. Add the minced garlic and cook for another 1-2 minutes, until golden and fragrant. 

Pour in the chicken broth and Bouillon. Mix together and bring to a simmer. Allow the mixture to simmer for five minutes, scraping the bottom occasionally.

Pour in the half and half. Allow the mixture to simmer for five minutes, scraping the bottom occasionally.

Add in the cooked pasta and bring to a simmer again. Allow the mixture to simmer for five minutes, until thickened, scraping the bottom occasionally.

Place the pasta with the creamy garlic sauce into a casserole dish. Add the cooked chicken breast pieces on top of the creamy garlic pasta and top with cheese, if desired. 

Bake in the oven for 10 minutes, to allow all the flavors to combine.

Crispy Almond Chicken Breast Panda Express

Copycat recipes are what I do best and today we have the Panda Express crispy almond chicken breast recipe! Better than takeout!

Crispy Almond Chicken Breast Panda Express

If you know me, you know my top two food categories are takeout dishes and copycat dishes. I started my blog withย takeout dishesย andย copycat recipes!ย You may know me from myย air fryer sweet and sour chicken,ย orange chicken, orย general tso chicken. If you are aย Chick-fil-Aย lover, you probably know me from myย copycat nuggetsย andย sauce. These are some of my most popular recipes and my favorites!

Therefore, I put the two together and made some Panda Express crispy almond chicken breast! This comes after myย Panda Express honey sesame chicken, Panda Express teriyaki chicken, and my Panda Express sweet fire chicken recipes.

The recipe can be easily doubled, tripled, quadrupled, etc. It also makes great lunch leftovers! And donโ€™t worry, I always build in extra sauce in my recipes to pour over your rice!

Why Do I Love Crispy Almond Chicken

If you have tried this dish at Panda Express, the nugget pieces are a bit larger than their normal nuggets. This makes them very moist and delicious. You can more chicken in each bite but it still has all the delicious flavoring.

FAQs

Almond flour does not get as crispy as regular flour, without actually frying it. However, I still love this recipe so much and my husband said it was his favorite takeout dish of mine.

If you want some extra crisp, try doing half regular and half almond flour, or, add in some bread crumbs.

Essential Ingredients

You will obviously need an air fryer.ย I love my Ninja double basket. The one side is the perfect size to cook half the recipe. You can also use a rack or toaster oven style air fryer; however, I do prefer the basket kind for this one.

Almond Flour

You need almond flour. Hence the name, crispy almond chicken.

Almond flour does not get as crispy as regular flour, without actually frying it. However, I still love this recipe so much and my husband said it was his favorite takeout dish of mine.

Chicken Tenderloins

I typically use chicken tenderloins when I need nugget sized chicken, but you can use other cuts of chicken. Chicken tenderloins are already thin, so minimal cutting is required, which is why I like them.

However, chicken breasts or chicken thighs can work well too. But, you can use beef, pork or even tofu if you are vegetarian. Any kind of protein will work great in this recipe. Remember to cut the chicken, or your preferable substitution, in the same size, so they are all cooked simultaneously.

Egg

I do prefer egg whites as they are not as goopy as real eggs. They are also easier to work with as you just have to pour them into the container. However, you can substitute real eggs if you whisk them first. Which I happened to do during this recipe.

Soy Sauce

The soy sauce will be used to make the sauce for the Panda Express crispy almond chicken breast recipe.

As the almond flour is gluten free, I went with gluten free soy sauce. This is a great recipe if you have an intolerance or celiac disease as everything can be easily made gluten free. You can use regular soy sauce if you wish.

This soy sauce is also low sodium as things can get a little salty with regular soy sauce. However, if you want to use regular soy sauce, be mindful of the added salt.

Minced Garlic

You can buy pre-minced garlic; however, I love mincing my own withย this mini food processor.ย 

Seasonings

The seasonings keep it simple with items you may already have in your pantry.

  • Garlic powder
  • Onion powder
  • Garlic salt
  • Ground ginger
  • Paprika

How to Make Panda Express Chicken

Slice chicken tenderloins into small pieces, a little over one inch by one inch.ย Sprinkle with a little of the seasonings mix, about a quarter of the seasonings.

Grab two small shallow bowls; however, I do like to use shallow Tupperware containers.ย 

In one, add the almond flour and seasonings, stirring to combine. Pour the eggs into the second bowl, whisking to make them smooth.

Step 1

First step will be making the actual chicken breast for the Panda Express crispy almond chicken recipe.

Preheat the air fryer to 400 degrees and grease the rack with cooking spray.ย 

One by one, dredge chicken piece in the egg white, being sure to shake off any excess. Finally, cover the chicken in the flour mixture.ย 

Place each battered chicken piece on the greased air fryer, trying not to let them touch.ย 

Step 2

Air fry for 3 minutes. Spray the chicken with cooking spray and then air fry for another 3 minutes.ย 

Flip the chicken over and spray any raw flour with cooking spray. Air fry for another 4 minutes, or until fully cooked and crispy.

Sauce

While the chicken is cooking, we will make the sauce for the Panda Express crispy almond chicken breast recipe! Heat a small saucepan over medium heat. Drizzle with a little oil or spray with cooking spray.

Add the minced garlic and let it cook until it has a nice darker golden color. It should take a few minutes.

Then, pour in the soy sauce and bring that to a simmer. Reduce the heat a little and let the sauce simmer until thickened. Be sure to stir and scrape the bottom every minute or so.

When the sauce is thickened, add in a sliced green onion and let that cook down for a minute or two.

When the chicken is fully cooked, carefully toss the pieces in the sauce.

step 4: Panda Express crispy almond chicken breast

You can cook this in the oven; however, it definitely will not be as crispy. Cook it in the oven, using the same steps as the air fryer. But, set the temperature to 425 degrees and add an extra 2-4 minutes on the cooking time.

I suggest lining a baking tray with aluminum foil. Then, putting an oven safe cooling rack on top and cooking the chicken on that. This will mimic more of what the air fryer does.

What to serve with Panda Express crispy almond chicken breast

This recipe is just for the chicken, but, I have to serve it with some rice! I cannot have takeout without a little rice. You can use my Instant Pot or stovetop rice recipe. But, you can also buy a rice cooker.

For the vegetables, we served it with some green beans and bell pepper slices but I also have some other recipes for you to try.

It is a super easy and filling weeknight dinner recipe. Plus, I guarantee your whole family will love this one!

This really does not require much cooking and is pretty much three steps: cook tater tots, cook meat, then, put everything together!

You can add tons of different taco items such as beans, corn, chili, enchilada sauce or so much more.

This recipe can be easily substituted for some of your favorite items. Plus, it is great with a lot of toppings. I prefer adding some pickles or jalapeรฑos if you want some spice.

It makes me very excited for lunch leftovers the next day.

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. You can also use that for the onion, depending on how big you like the pieces.

Ground Chicken

Our second layer is going to be the meat. I use ground chicken breast; however, you can use ground beef (or another meat). This recipe is great if you add some beans into the meat too.

Shredded Cheese

Feel free to use whatever type of shredded cheese that you like. I prefer low fat or fat-free.

All I add to the top, in this recipe, is shredded cheese; however, there are tons of toppings you can include such as pickles, jalapeรฑos, tomatoes and much more!

How to Make this Cheesy, Taco Casserole

This really does not require much cooking and is pretty much three steps: cook tater tots, cook meat, then, put everything together!

Add tater tots to the bottom of an 8x8 glass casserole dish, in a single layer. Cook them according to package instructions. If you want them crispier, air fry them.

Meanwhile, start cooking the meat. Heat a large pan over medium high heat. Drizzle with oil or grease with cooking spray. Once heated, add the diced onion and cook for 2-3 minutes, until softening. Add the minced garlic and cook for another minute, until fragrant.

Add the ground chicken and start breaking it up. Sprinkle on the seasonings and continue to breakup while cooking. Continue to break up and mix in the seasonings until the chicken is fully cooked. 

Add in half the shredded cheese, mixing to allow it to melt. You can also add in 2 ounces of cream cheese here for an extra creamy dish. Beans are also a great addition in this step.

Pour in the taco sauce (sub enchilada sauce) and allow it to come to a simmer for one minute.

Once the chicken is cooked, add it to the tater tots in an even layer. Finally, sprinkle with the remaining shredded cheese.

Then, broil or cook in the oven until the cheese is melted, about 3 to 5 minutes.

Divide in four pieces, add your favorite toppings and enjoy!

I make stuffed peppers all the time. There are so many different flavor combinations and ingredients that you can add. Plus, it is easy to make a big batch because these make amazing leftovers!

I absolutely love stuffed peppers. They are the perfect meal prep or easy weeknight dinner. Plus, there areย tons of flavor combinations to try. You can chose from myย famous pizza stuffed peppers. Why Do I Love these Stuffed Peppers

These peppers have a version of my healthy, greek yogurt buffalo chicken dip. Also known as hot wing dip. My dip is delicious and creamy while keeping it a skinny recipe, perfect with weight watchers, any diet. Adding the peppers gives you some vegetables, what could be better!

I could seriously devour the entire dip. Iโ€™ve brought it to many tailgates and parties and people love this version more than the normal way! So, you know this is a good one!

Essential Ingredients

You can make the peppers in the oven (the yellow ones were in the oven). But, you can also make them in the air fryer, which is my personal favorite. The red ones were made in the air fryer and I think they come out so good!ย I love my Ninja double basket.ย 

  • Peppers
  • Ground Chicken Breast
  • Ranch Seasoning
  • Cream Cheese
  • Shredded Cheese
  • Hot Wing Sauce / Buffalo Chicken Sauce

For my buffalo chicken stuffed peppers, I use bell peppers; however, you can also substitute a different pepper. The mini sweet peppers or jalapeรฑo peppers are amazing with this recipe. But, cook those for less time as they are smaller.ย 

I used some red bell peppers and some yellow/orange bell peppers. However, you can use any color of bell pepper or substitute your pepper some spaghetti squash, eggplant, zucchini or another vegetable that you love.

I like to add minced garlic and you can also add some diced onion. You can buy pre-minced garlic; however, I love mincing my own withย this mini food processor. You can also use that for the onion, depending on how big you like the pieces.

Ranch Seasoning

I buy that big jar because I use it all the time. It is a much more cost effective way, if you use it a lot.

Cream Cheese and Shredded Cheese

There is nothing better than some cream cheese stuffed peppers. I typically opt for the lower fat or fat-free versions of my cheeses; however, you can use whichever cheese you like. Typically, I do use cheddar cheese here; however, from the photo above, you will see mozzarella as I filmed this during a hurricane..

Really, any type or flavor of cheese will work fine, Mexican cheese, cheddar cheese, Colby jack, whichever you prefer.

Buffalo Sauce

Buffalo chicken stuffed peppers need this one key ingredient. Usually, I stick with Sweet Baby Ray's or Frank's Red Hot. As you can see here, I went with Frank's; however, if you like a different brand, you can use that.

I do like to add a little rice into this recipe; however, it is not necessary. You will need to make your own rice and this recipe is not going to teach you how. For this recipe, I find that 1 cup or so of cooked rice works the best. That will be ยฝ cup dry. You can followย my stovetop rice recipe, myย instant pot rice recipeย or you can justย use a rice cooker.

For a low carb dish, skip the rice or substitute the rice for riced cauliflower. Plus, it adds more vegetables. But, I also like to use riced cauliflower and rice together.

Let's make some stuffed peppers! I typically get the peppers started first. Then, work on the meat and add the cooked meat into the peppers right before they are done, as to not overcook the chicken.

Cook the peppers in the oven or in the air fryer.

Air Fryer Method

Preheat the air fryer to 360 degrees. If you like the peppers softer/toasty, preheat to 375 degrees. Cut the tops off of the pepper. Then, remove the seeds and the core. 

Cook the peppers in the air fryer for 10 to 14 minutes, depending on how soft you like your peppers. Try not to let the peppers touch as they need as much air flow as possible.

Oven Method

Preheat the oven to 425 degrees. Then, remove the seeds and the core.ย Cook the peppers for 20 to 30 minutes, depending on how soft you like your peppers.

Meanwhile, heat a large pan over medium high heat. Drizzle with oil or grease with cooking spray. Once heated, add the minced garlic and cook for another minute, until fragrant.ย 

Add the ground chicken and start breaking it up. Sprinkle on the seasonings and continue to breakup while cooking. Continue to break up and mix in the seasonings until the chicken is fully cooked.

Once cooked, add in the cream cheese and half the shredded cheese, this will make for a very creamy stuffed pepper. Stir together until the cheeses are melted.

Pour in the buffalo sauce and mix together, until everything is combined. Add in the rice, if using rice, and stir together.

Once the peppers are almost done, stuff the meat mixture into each pepper. Top with shredded cheese and air fry or broil for another 3 minutes, until the cheese is melted.

tips for the best stuffed peppers

  • Adjust the timing depending on how soft you like the peppers
  • To cook them quicker, cut them in half instead of cutting the tops off
  • If the peppers do not sit flat, shave off the bottom a little to create a base
  • Try not to let the peppers touch in the air fryer as they need as much air flow as possible
  • Increase the temperature when melting the cheese if you want it browner

storing and leftovers

You can store cream cheese stuffed peppers in the fridge for up to three to four days in an air tight container. To heat it up, I typically pop it in the microwave for a few minutes. But, you can also add it back to the air fryer or place it in the oven.

Instant Pot Pork Chops

Did you know you can make boneless pork chops in your instant pot / pressure cooker? It is the quickest, most delicious way to make them! I made my brown sugar garlic pork chops (my favorite way to make pork chops); but, this time, in the instant pot! It was so much quicker this way and the clean up was a breeze.

If you do not have an instant pot, you can also make pork chops using my classic brown sugar garlic recipe or my honey balsamic recipe.

Why Do I Love Brown Sugar Garlic Pork Chops

This is a one-pot meal with minimal clean up. It can be done in no time and doesn't require too many ingredients.

Essential Ingredients

First things first is an instant pot of course. I use theย original instant pot brandย and I love using theย non-stick bowl insertย easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

  • Garlic salt
  • Brown sugar

I specifically used lean and thin pork chops. It came in a pack of five at one pound total. That is a little more than 3 ounces each. If you are using a bigger pork chop, you will need to increase the time a little.

This recipe is very simple and only needs some garlic and garlic salt. I love mincing my own fresh garlic withย this mini food processor. However, you can use pre-minced garlic. I also love putting some finely diced onion into this mixture as well. It provides an elevated flavor; however, I know not everyone loves onion.

Finally, some brown sugar. I always, typically, use brown sugar replacement and bulgogi ground beef is no exception. It is easyย grab a huge package from Amazonย and that is what I always use. I do not mind using a replacement sugar. However, I know some people have concerns with that. You can substitute a brown sugar blend or just straight brown sugar.ย 

You can use some oil or cooking spray to coat the bottom of the instant pot, when cooking the pork chops.

Lastly, you will need a liquid. You need at least one cup of liquid in the instant pot to not get the burn notification. I use a chicken broth; however, water does work well too.

How to Make Instant Pot Boneless Pork Chops

First things first is to grab an instant pot of course. I use theย original instant pot brandย and I love using theย non-stick bowl insertย easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

An Instant Pot recipe goes very quick so you need to make sure you have everything measured and ready to go.

Combine all of the seasonings in a small bowl and sprinkle evenly over both sides of each pork chop, pressing the sugar in.

Drizzle the olive oil into the bottom of the instant pot. Set the Instant Pot to the sautรฉ method. Add the oil and allow it to heat up.ย 

Once heated, add the pork, with the garlic, and cook for about a minute or two per side. You may need to do this in batches.

Then, remove onto a clean plate and turn the instant pot off. I like to grab as much of the garlic as I can and add it back onto the tops of the pork.

Immediately pour in the chicken broth or water (to prevent the garlic from burning) and scrape up the bottom of the pot with a wooden spatula.

Add the pork back into the instant pot, spreading it out as much as you can.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 3 minutes and start it.ย 

Once the instant pot is done cooking, let stand for 3 minutes then de-pressurize.

Pour some of the remaining juices and garlic back onto the pork chops when serving.

  • Use water or broth; however, be sure you have at least one cup of liquid before ever starting your instant pot.
  • These are very thin and lean pork chops. These only take three minutes to cook; however, if you have thicker pork, it will need longer.
  • Use your favorite seasonings or sauce!

  • Immediately pour in the chicken broth or water (to prevent the garlic from burning) and scrape up the bottom of the pot with a wooden spatula.
  • Add the pork back into the instant pot, spreading it out as much as you can.ย 
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 3 minutes and start it.ย 
  • Once the instant pot is done cooking, let stand for 3 minutes then de-pressurize.ย 
  • Pour some of the remaining juices and garlic back onto the pork chops when serving.

Pumpkin Curry

Fall means pumpkin spice and I am incorporating those flavors into every meal I eat like this curry chicken recipe! Marinate the chicken in a delicious sauce. Then, create a fall twist to a curry sauce. The pumpkin replaces cream for a lighter and delicious sauce.

What is Curry

I do have to preface, this is not the most authentic take on a curry; however, I did mention that.

Curry is a dish in South Asian cuisine known for having a lot of spices. You can make it with coconut milk, some with different meats (or vegetarian versions), some with lots of sauce and some with little sauce. But, it can be more of a soup-y type of dish, a chicken and sauce dish or just some heavily seasoned chicken.

My pumpkin curry recipe takes on the classic chicken curry and gives it some fall flavors.

Why Do I Love Pumpkin Curry

It reminds me of fall! In Florida, we don't get much of a fall season so I try to make the most out of it.

This pumpkin curry is such a fun take on a classic recipe.

Quick Substitutions

I use tomato sauce, which I think is kind of cheating. But, I always have it open in my fridge and use it when I just need a little tomato taste. You can substitute crushed tomatoes or something similar.

Any type of milk works; however, I do use almond milk as that is what I always have.

Essential Ingredients

These are the essential ingredients that you will need to make the best pumpkin curry.

We can subdivide the ingredients into two categories, the marinade/chicken and the sauce.

Marinade Ingredients:
  • Plain, nonfat Greek yogurt
  • Chicken tenderloins
  • Ginger
  • Garlic
  • Chili powder
  • Salt
Sauce Ingredients:
  • Diced onions
  • Minced garlic
  • Tomatoes
  • Ginger
  • Cumin
  • Curry powder
  • Cinnamon
  • Butter
  • Milk
  • Pumpkin
Plain Nonfat Greek Yogurt

You can really use any yogurt to marinate the pumpkin curry; however, I always use plain, nonfat greek yogurt as it has extra protein and is pretty good for you.

Chicken Tenderloins

Use any type of chicken; however, I really prefer chicken tenderloins. These are very tender, hence the name. I love using little cut up piece of chicken; however, you can also use full pieces. You can also try chicken thighs, chicken breasts, or another type of meat.

Diced Onions and Minced Garlic

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. You can also use that for the onion, depending on how big you like the pieces.

Tomatoes

I use tomato sauce, which I think is kind of cheating. But, I always have it open in my fridge and use it when I just need a little tomato taste. You can substitute crushed tomatoes or something similar.

Ginger

I just use ground ginger; however, you can also use fresh ginger and sautรฉ it a little with the garlic.

Cinnamon

I love the pinch of cinnamon because it adds sweetness to the pumpkin curry; however, you can skip it.

Butter

By butter.. I mean margarine. I always use ICBINB light margarine. But, you can use real butter.

Milk

Any type of milk works; however, I do use almond milk as that is what I always have.

Pumpkin

You are going to need pure pumpkin, not pumpkin pie mix.

How to Make Chicken with a Pumpkin Sauce

Start by marinading the chicken. Slice chicken up into bite-sized pieces. Then, season the chicken with the 'marinade' seasonings.

Place into a bowl, baggie or container and add in the yogurt. Then, toss to combine. Place a lid on the container (or seal the bag) and store in the fridge for 30 minutes to allow the chicken to marinade in the sauce.

Once the chicken is done marinading, heat a large pan over medium / high heat. Drizzle with oil or spray with cooking spray.

Add chicken (without rinsing or rubbing off the marinade) and sautรฉ until fully cooked. I move around and flip the chicken every few minutes. Then, set the pumpkin curry chicken aside on a clean plate.

In the same pan, add the butter and allow it to melt. Then, add the diced onions and sautรฉ for 2-3 minutes. Add the minced garlic and cook for another minute.

Combine with the remaining sauce ingredients and bring the heat down to low/medium. Then, stir everything together and allow it to come to a slight simmer.

Once simmering, remove from heat, add the chicken back in, then, toss the pumpkin curry to coat.

There is tons of sauce to serve over rice or veggies!

FAQs

You can store pumpkin curry in the fridge for up to three to four days in an air tight container. To heat it up, I typically pop it in the microwave for a few minutes; however, you can also add it back to the stovetop.

Why do I Love Cheeseburger Tater Tot Casserole

It is a super easy and filling weeknight dinner recipe. Plus, I guarantee your whole family will love this one!

This really does not require much cooking and is pretty much three steps: cook tater tots, cook meat, then, put everything together!

This recipe can be easily substituted for some of your favorite items. Plus, it is great with a lot of toppings. I prefer adding some pickles or jalapeรฑos if you want some spice.

It makes me very excited for lunch leftovers the next day.

Quick Substitutions for a Tater Tot Casserole

For my cheesy bacon cheeseburger tater tot casserole recipe, I make it with tater tots, ground chicken, bacon and cheese. However, there are many substitutions you can make.

The base layer is tater tots; however, you can substitute that for any similar potato such as hash browns or French fries.

Our second layer is going to be the meat. I use ground chicken breast; however, you can use ground beef (or another meat). The chicken is topped with bacon, to make this a bacon cheeseburger casserole; but you can skip the bacon.

All I add to the top, in this recipe, is shredded cheese; however, there are tons of toppings you can include such as pickles, jalapeรฑos, tomatoes and much more!

Essential Ingredients

Chicken tater tot casserole  ingredients
  • Tater tots
  • Diced onion
  • Minced garlic
  • Ground chicken
  • Bacon
  • Shredded cheese
Tater Tots

Minced Garlic and Diced Onion

How to Make this Cheesy, Bacon Casserole

This really does not require much cooking and is pretty much three steps: cook tater tots, cook meat, then, put everything together!

Add tater tots to the bottom of an 8x8 glass casserole dish, in a single layer. Cook them according to package instructions. If you want them crispier, air fry them.

Meanwhile, start cooking the meat. Heat a large pan over medium high heat. Drizzle with oil or grease with cooking spray. Once heated, add the diced onion and cook for 2-3 minutes, until softening. Add the minced garlic and cook for another minute, until fragrant.

Add the ground chicken and start breaking it up. Sprinkle on the seasonings and continue to breakup while cooking. Continue to break up and mix in the seasonings until the chicken is fully cooked. 

Add in half the shredded cheese, mixing to allow it to melt. You can also add in 2 ounces of cream cheese here for an extra creamy dish.

Pour in the Worcestershire sauce and ketchup. Then, mix together and allow it to simmer for 1 to 2 minutes. 

Once the chicken is cooked, add it to the tater tots in an even layer. Chop bacon into small pieces and add over the chicken. Finally, sprinkle with the remaining shredded cheese.

Then, broil or cook in the oven until the cheese is melted, about 3 to 5 minutes.

Divide in four pieces, add your favorite toppings and enjoy!

What to Serve with a Chicken Casserole

Cheeseburger casserole is almost a complete dish, in my mind. It is just missing some vegetables! Since this dish is already cheesy and you can make it slightly spicy, I love serving this with a sweeter vegetable like my maple bacon Brussels sprouts, my candied carrot chips or crunchy crack broccoli.

What is Crock Pot Crack Chicken

Basically, this dish is perfectly slow cooked chicken, covered in Ranch and garlic flavors. It is smothered in a cheesy and bacon sauce. Then, once cooked, it is shredded and served over any side dish. It is creamy, it is moist and it is OH SO GOOD.

It is based off a really popular recipe, crack dip. Which uses all the same ingredients, but, in a dip form. You can really make this recipe into the dip form by adding more cream cheese, sour cream, mayo and/or greek yogurt.

If you don't like Ranch, bacon and cheese combining into one perfect dish, come on!

Why Do I Love Crockpot Ranch Chicken

This dish is the most effortless dish that turns out absolutely amazing. Just place everything into a crock pot and press cook. I even use the liners for easy clean up. I typically have all these ingredients on hand. Making this the perfect dish for a weeknight when I do not know what to cook.

It makes for great leftovers. I make a big batch to not have to worry about lunch the next days. Crack chicken is great on a ton of different side dishes and is very kid friendly.

Quick Substitutions and Tips for Crack Chicken Recipe

I use chicken breast; however, different cuts of chicken work very well. I suggest using something boneless, such as a bones chicken thigh, since you will shred it. However, if you want to serve it whole, you can cut around a bone while eating.

You can use your favorite type of bacon. I typically use fully cooked bacon; however, you can try bacon bits, real bacon or some diced up ham.

Essential Ingredients for Crack Chicken in the Crockpot

These are the essential ingredients to make the best crock pot crack chicken.

First things first is a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

Chicken

I use chicken breast for crock pot crack chicken; however, different cuts of chicken work very well. I suggest using something boneless, such as a bones chicken thigh, since you will shred it. However, if you want to serve it whole, you can cut around a bone while eating.

Ranch Seasonings

I always find it easier to grab the big jar; however, you can also use the little packages.

Garlic Powder

Since we are not sautรฉing this recipe, I used garlic powder instead of minced garlic.

Cream Cheese

Typically, I do use โ…“ less fat cream cheese; however, you can use the real thing. To make this recipe creamier, double the cream cheese or add ยผ cup of plain, nonfat Greek yogurt.

Shredded Cheese

I use the Trader Joe's lite Mexican cheese blend; however, you can use any type of shredded cheese that you want to.

Bacon

Okay, no one get mad at me for this one. Fully cooked bacon is my absolute favorite thing. It is so easy. It comes out squishy, which I love. Plus, it has less fat.

You can use your favorite type of bacon. I typically use fully cooked bacon; however, you can try bacon bits, real bacon or some diced up ham.

Plain, Nonfat Greek Yogurt

This is not necessarily an essential ingredient but I think it adds a step up to the recipe. To make the dish creamier, double the cream cheese or add โ…› cup to ยผ cup of plain nonfat Greek yogurt into the mix after shredding the chicken.

How to Make Crack Chicken

Grab a crock pot or slow cooker of course. I use the original crock pot brand and I love using the liners for easy clean up; however, you do not have to. Make sure you grab a meat thermometer too, that can stay in a closed crock.

Add โ…› cup of water or chicken broth to the bottom of the crock pot, to keep the chicken moist.

Place the chicken at the bottom. Then, top it with Ranch, garlic powder, half the shredded cheese, the bacon (I reserve some for garnishing), and the cream cheese.

Place the lid on the crock pot and cook on low for two hours, until chicken is fully cooked.

Once cooked, shred the chicken. You can do this right in the crock pot or in a separate bowl. Add the chicken back into the crock pot. If adding yogurt, add that in now and mix to combine.

Sprinkle with the remaining cheese and place the lid back on the crock pot. Let it cook, on high, for another five minutes, or until the cheese is melted.

  • 1 tablespoon garlic powder
  • ยฝ cup shredded lite Mexican cheese
  • 6 slices fully cooked bacon

  • ยผ cup plain, nonfat Greek yogurt optional, for extra creaminess

Instructions

  • Add โ…› cup of water or chicken broth to the bottom of the crock pot, to keep the chicken moist.ย

  • Once cooked, shred the chicken. You can do this right in the crock pot or in a separate bowl. Add the chicken back into the crock pot.
  • Sprinkle with the remaining cheese and place the lid back on the crock pot. Let it cook, on high, for another five minutes, or until the cheese is melted.ย 
  • For extra creaminess, double the cream cheese used or add in โ…›-1/4 cup of yogurt or sour cream when shredding the chicken.

Honey Roasted Carrots

These are my garlic and honey glazed roasted carrots, which is the only side dish you will ever need! They make eating vegetables so fun and will be the talk of your whole family.

What are your favorite vegetables? Mine are broccoli and carrots, but, I am pretty basic. I always have a bag of carrots in my fridge. They last long and can taste really good if you spice them up.

Carrots are one of the staple vegetables, but that is my opinion. Lots of people like them and they can be used in so many ways.

These garlic and honey glazed roasted carrots take only minutes to prepare and will certainly wow a crowd. I also make a huge batch of them to have my dinner vegetable prepped for the week. However, they can also be fancied up, which is perfect for a dinner party or a holiday gathering.

Ingredients for Honey Roasted Carrots

This recipe requires just a couple of ingredients that you probably already have in your cabinet. However, if you are missing any, we can go over some substitutions.

  • Garlic salt

And that is it! But, I can also let you in on some substitutions.

Olive Oil

I use olive oil because it is the easiest. However, you can substitute any type of oil or use melted butter (which tastes even better)

Honey

These are honey roasted carrots after all. Maple syrup is a great substitute for honey. However, you can also substitute brown sugar or a brown sugar replacement such as Swerve.

Minced Garlic

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. 

Garlic Salt

Yes, garlic and garlic salt. Trust me, one cannot have too much garlic.

Carrots

You can really use any type of carrot, you will just have to adjust the cooking time. I love using the big carrots for a holiday gathering as they look fancier. However, I typically just do baby carrots as they are easier. When it is just me eating them, this is what I prefer.

Tips for Honey Garlic Carrots

Baking times depend on how big the carrots are and how soft you want them to be. I use baby carrots, which take about 30-40 minutes. However, smaller carrots will take less time while larger carrots take more time.

How to Make Honey Glazed Roasted Carrots

There are really just five very simple instructions: preheat oven, toss with oil, mix in sauce/seasonings, bake and flip.

Step 1

Preheat your oven to 450 degrees and line a baking tray with aluminum foil. I like to spray it with a little cooking spray; however, you might not need to.

Step 2

Add the carrots to a bowl. Drizzle olive oil over the carrots and toss to evenly coat.

Add the remaining ingredients (garlic, garlic salt and honey) and toss to evenly coat.

Add the carrots to the baking tray, in a single layer. Bake in the oven for 30 to 40 minutes, flipping halfway. But, if you are using a different carrot, adjust your cooking time.

I like mine sweet. Therefore, I drizzle another tablespoon or two of honey on top, when they are done cooking. However, if you do not want the extra sweetness, skip this step.

Variations of Roasted Glazed Carrots

For a sweeter dish, add more honey. But, you can also combine the carrots with some brown sugar or a brown sugar replacement such as Swerve.

This dish is pretty sweet; however, if you like things spicier, try Mike's Hot Honey or adding some spice to the seasonings mix. But, you can also try some pumpkin pie spice or cinnamon.

For my garlic lovers, add more garlic! Come on, you can never have too much.

Try making this recipe with other vegetables like broccoli.

Air Fryer Stuffed Peppers

Bell peppers stuffed with ground beef and cooked in the air fryer are the absolute best weeknight dinner or meal prep. I make stuffed peppers all the time. There are so many different flavor combinations and ingredients that you can add. Plus, it is easy to make a big batch because these make amazing leftovers!

I absolutely love stuffed peppers. They are the perfect meal prep or easy weeknight dinner. Plus, there are tons of flavor combinations to try. You can chose from my famous pizza stuffed peppers. Try out my Mexican stuffed peppers or enchilada stuffed peppers. Keep it more Italian with my lasagna stuffed peppers recipe or Italian stuffed peppers. But, I don't typically make them with ground beef so I used my favorite stuffed pepper recipe and reinvented it in the air fryer.

Why Do I Love Air Fryer Stuffed Peppers

I typically cook my peppers in the oven; however, it takes a very long time. Cooking anything in the air fryer usually takes a lot less time. I also love the texture the air fryer creates.

I typically make my stuffed bell peppers with ground chicken; however, this time I decided to switch it out for some beef. Stuffed peppers are great because you can really make them your own. You can use ground chicken, ground beef, pieces of meat or really just anything.

They are an entire meal wrapped up in one cute package. You get the meat, carbs, vegetables and fat, all in one! But, if you want to skip any ingredients, you can!

Essential Ingredients

You will obviously need an air fryer. I love my Ninja double basket. If you do not have an air fryer, you can check out my other stuffed pepper recipes or you can modify this recipe to bake the peppers in the oven.

These are the essential ingredients that you will need to make the best air fryer stuffed peppers.

  • Tomatoes
  • Rice
  • Shredded Mexican cheese
Bell Peppers

These air fryer stuffed peppers are made with bell peppers; however, you can also substitute a different pepper. The mini sweet peppers or jalapeรฑo peppers are amazing with this recipe. But, those will be cooked for less time as they are smaller.

I used some green bell peppers for these air fryer stuffed peppers. However, you can use any color of bell pepper or substitute your pepper some spaghetti squash, eggplant, zucchini or another vegetable that you love.

Minced Garlic and Diced Onion

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. You can also use that for the onion, depending on how big you like the pieces.

Ground Beef

I typically make my stuffed bell peppers with ground chicken; however, this time I decided to switch it out for some beef. Stuffed peppers are great because you can really make them your own. You can use ground chicken, ground beef, pieces of meat or really just anything.

If you want to keep this a lighter dish, use ground chicken breast. For a vegetarian dish, you can swap out for a meat replacement or more vegetables or beans.

Taco Seasonings

This is the taco seasonings blend that I live and breathe for, but, hey, I am biased. However, you can also buy a packet, just use 2/2.5 tablespoons of it!

  • ยผ teaspoon salt
  • 1 teaspoon chili powder
  • ยฝ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • ยผ teaspoon black pepper
  • ยฝย teaspoonย oregano

Taco Sauce

I add Taco Bell sauce to keep the air fryer stuffed peppers flavorful and moist. However, there are many taco sauce brands you can buy too.

Tomatoes

I just use a can of crushed tomatoes or sauce. However, you can substitute Rotel if you like the dish a little more spicy.

Rice

You will need to make your own rice and this recipe is not going to teach you how. For this recipe, I find that 1 cup or so of cooked rice works the best. That will be ยฝ cup dry. You can follow my stovetop rice recipe, my instant pot rice recipe or you can just use a rice cooker.

Shredded Mexican Cheese

I use the Trader Joe's lite Mexican cheese blend; however, you can use any type of shredded cheese that you want to.

Variations to my stuffed bell peppers with ground beef recipe

To keep it lighter, swap out the ground beef for ground chicken breast.

For a low carb dish, substitute the rice for riced cauliflower. Plus, it adds more vegetables. But, I also like to use riced cauliflower and rice together.

Step by Step Instructions for Air Fryer Stuffed Peppers

Let's make some stuffed peppers in the air fryer! I typically get the peppers started first. Then, work on the meat and add the cooked meat into the peppers right before they are done. I do not like to keep the cooked ground beef in the air fryer for too long as it can get dried out.

Step 1: Making the Peppers

Preheat the air fryer to 360 degrees. If you like the peppers softer/toasty, preheat to 375 degrees. Cut the tops off of the pepper. Then, remove the seeds and the core.

Cook the peppers in the air fryer for 10 to 14 minutes, depending on how soft you like your peppers. Try not to let the peppers touch as they need as much air flow as possible.

Step 2: Making the Filling

Meanwhile, heat a large pan over medium high heat. Drizzle with oil or grease with cooking spray. Once heated, add the diced onion and cook for 2-3 minutes, until softening. Add the minced garlic and cook for another minute, until fragrant.

Add the ground beef and start breaking it up. Sprinkle on the seasonings and continue to breakup while cooking. Continue to break up and mix in the seasonings until the beef is fully cooked. 

Once cooked, add in the sauce, tomatoes and cooked rice. Then, toss everything together and bring to a slight simmer. Simmer for 3 minutes.

Step 3: Putting the Stuffed Peppers Together

Once the peppers are almost done, stuff the meat mixture into each pepper. Top with shredded cheese and air fryer for another 3 minutes, until the cheese is melted.

Tips for the Best Stuffed Peppers

  • Adjust the timing depending on how soft you like the peppers
  • To cook them quicker, cut them in half instead of cutting the tops off
  • If the peppers do not sit flat, shave off the bottom a little to create a base
  • Try not to let the peppers touch as they need as much air flow as possible
  • Drizzle queso or salsa con queso over the peppers before eating
  • Increase the temperature when melting the cheese if you want it browner

Making Peppers in the Oven

If you do not have an air fryer, you can make the peppers in the oven. Follow the same steps, except, cook the peppers in the oven at 425 degrees for about 20 to 30 minutes, depending on how soft you like the peppers.

You can store stuffed peppers in the fridge for up to three to four days in an air tight container. To heat it up, I typically pop it in the microwave for a few minutes. But, you can also add it back to the air fryer or place it in the oven.

  • Preheat the air fryer to 360 degrees (375 degrees if you like the peppers toasty/softer). Cut the tops off of the pepper. Then, remove the seeds and the core.ย 
  • Cook the peppers in the air fryer for 10 to 14 minutes, depending on how soft you like your peppers.ย Try not to let the peppers touch as they need as much air flow as possible.ย 
  • Meanwhile, heat a large pan over medium high heat. Drizzle with oil or grease with cooking spray. Once heated, add the diced onion and cook for 2-3 minutes, until softening. Add the minced garlic and cook for another minute, until fragrant.ย 
  • Add the ground beef and start breaking it up. Sprinkle on the seasonings and continue to breakup while cooking. Continue to break up and mix in the seasonings until the beef is fully cooked.ย 
  • Once cooked, add in the sauce, tomatoes and cooked rice. Then, toss everything together and bring to a slight simmer. Simmer for 3 minutes.ย 
  • Once the peppers are almost done, stuff the meat mixture into each pepper. Top with shredded cheese and air fryer for another 3 minutes, until the cheese is melted.ย

The easiest, creamiest and most delicious recipe is this rotel chicken spaghetti made with lots of cheese. Only a couple ingredients come together to make this protein packed weeknight meal.

The easiest, creamiest and most delicious recipe is this rotel chicken spaghetti made with lots of cheese.

Velveeta and Rotel is the ultimate combo. I love making a creamy, meaty dip or fiesta corn dip with the duo as well. But I also loving making full casserole meals with them like my famous queso smothered chicken casserole, Doritos bake, chicken con queso, or nacho casserole.

It is usually just me and my husband eating this meal; however, it is very kid friendly as well. When we make it, we eat half of it for dinner and half for lunch leftovers the next day. This recipe makes amazing leftovers that reheat very well.

  • You can cook your own cheese sauce and chicken; however, you can purchase a pre-made version.

Is this recipe kid friendly? This recipe is very kid friendly; but, if your child does not like Rotel, or thinks it is too spicy, substitute a can of diced tomatoes.

Spaghetti

I use Banza spaghetti, which has added protein. However, you can use another protein pasta or regular spaghetti.

Minced Garlic and Diced Onion

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. You can also use that for the onion, depending on how big you like the pieces.

Ground Chicken

Typically, I will use a 99% fat-free ground chicken breast for chicken spaghetti; however, you can also substitute a different fat percentage. This dish is great with chicken breast, chicken tenderloins, or another cut of chicken. You will just need to shred or chop it after cooking.

In addition, this recipe is fantastic with other types of meat and is really good with ground beef. However, if you want to try the easier route, use rotisserie chicken and give it a little shredding.

Taco Seaosnings

This is the taco seasonings blend that I live and breathe for, but, hey, I am biased. However, you can also buy a packet, just use 2/2.5 tablespoons of it!

  • ยผ teaspoon salt
  • 1 teaspoon chili powder
  • ยฝ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • ยผ teaspoon black pepper
  • ยฝ teaspoon oregano

Velveeta

I used the 2% milk type for this recipe; however, you can use the regular. I believe Velveeta has some white queso blocks as well, if you want to try that too. If you want an extra creamy dish, add in a block of cream cheese as well.

Rotel

This recipe calls for Rotel because it is so easy! This is a quick and easy Rotel dip recipe and we are not trying to make it complicated. Rotel is kind of like a salsa, you could say, but not quite. It is basically petite tomatoes, green chilies and spices.

However, you are more than welcome to substitute salsa in this recipe but I prefer it with Rotel. Just be cautious as it can get a bit spicy, I am a wimp. Another alternative is to do half Rotel, half mild salsa, if you find the Rotel to be too spicy.

For a more kid friendly dish, if they do not like the Rotel, substitute a can of diced tomatoes.

Shredded Mexican Cheese

I use the Trader Joe's lite Mexican cheese blend; however, you can use any type of shredded cheese that you want to.

Step by Step Instructions

Let's make this Rotel chicken spaghetti recipe!

I typically start with the pasta, strain that, and then continue with the rest. It is not as chaotic this way and there is less cleaning.

Preheat the oven to 425 degrees or a high broil.

Pasta

Start by splitting the spaghetti into thirds. Then by cooking the pasta according to the package instructions, leaving it very slightly al dente. Reserve one cup of pasta water. Then, drain well and set aside.

Chicken

Heat a large pan over medium/high heat. Grease with cooking spray or a drizzle of olive oil.

Add the diced onions and cook for 1-2 minutes. Place the minced garlic into the pan. Cook for another minute or two, until fragrant.

Add the ground chicken and start breaking it up. Sprinkle on the seasonings and continue to breakup while cooking. Continue to break up and mix in the seasonings until the chicken is fully cooked.

However, you can also use pre-cooked chicken, such as rotisserie chicken. But, just shred it into small pieces.

Sauce

Reduce the heat to medium. Then, add the Velveeta cheese and begin to warm up the cheese. Continue to stir together and melt the cheese into the chicken.

Add the Rotel and stir together. Allow it to come to slight simmer, to heat up.

Spoon the drained spaghetti into the meat mixture and stir together. If needed, slowly add reserved pasta water, milk or sour cream (or yogurt or mayo).

Grease a casserole dish with cooking spray. Pour in the spaghetti casserole and evenly spread across the entire dish. Top with the shredded cheese.

Then bake in the oven for 5 minutes, or until the cheese is melted and bubbly.

Divide into four pieces and enjoy.

What to Serve with the Best Weeknight Dinner

Chicken spaghetti is almost a complete dish, in my mind. It is just missing some vegetables! Since this dish is already cheesy and slightly spicy, I love serving this with a sweeter vegetable like my maple bacon Brussels sprouts, my candied carrot chips or crunchy crack broccoli.

You can store chicken spaghetti in the fridge for up to three days in an air tight container. To heat it up, I typically pop it in the microwave for a few minutes. But, you can also add it back to a casserole dish and place it in the oven.

Breaded chicken cutlets are so good plus, you can air fry them, which taste just like a fryer, or a cutlet can be baked in the oven.

Breaded chicken cutlets are so good plus, you can air fry them, which taste just like a fryer, or a cutlet can be baked in the oven.

What are Chicken Cutlets?

Chicken cutlets are very thinly sliced boneless chicken breasts. You can purchase them pre-sliced; however, you can also slice them yourself. You will need to slice them horizontally and pound them thin, if necessary.

I typically see chicken cutlets breaded and either made in the air fryer or baked in the oven. However, you can also fry the chicken cutlets (not in the air fryer, an actual fryer) but that requires a lot of oil!

Why This is One of My Favorite Recipes

So, why is this one of my favorite recipes? It is so versatile and can be used for pretty much anything. They are amazing as a sandwich, a salad topping, mixed into pasta, or really just about anything.

These are the essential ingredients that you will need to make the crispiest chicken ever!

Chicken

Of course, you will need chicken. Chicken cutlets are very thinly sliced boneless chicken breasts. You can purchase them pre-sliced; however, you can also slice them yourself. You will need to slice them horizontally and pound them thin, if necessary.

Egg Whites

I usually use egg whites because they are easy to pour out into a bowl and are not as sticky as the full egg. There is so whisking required. However, you can use a real egg, just be sure to whisk it first.

Flour

Any type of all-purpose flour will work. You can also use a gluten free cup-for-cup flour.

Italian Seasonings Blend

I typically do an Italian seasonings blend; however, you can modify the seasonings to your liking.

  • Garlic powder
  • Onion powder
  • Paprika
  • Italian seasonings
  • Salt
  • Pepper

Adding grated parmesan cheese is also really great; however not necessary. I love how it adds flavor and crunch to the chicken cutlets.

Additional Ingredients

First off, you will need an air fryer, you can use a basket type air fryer; but, I really like a rack type air fryer as well. 

Then, you will need three small shallow bowls. I typically use plastic containers.

Finally, some cooking spray to emulate actual frying.

Step By Step Instructions

Ensure the chicken cutlets are thin and even. You may have to pound some down to ensure they are all the same thickness.

Preheat the air fryer to 400 degrees. Grease the air fryer rack with cooking spray.

Pour two tablespoons of flour and half the seasonings into one bowl, the egg into another and the remaining ingredients in the final bowl.

Press the chicken cutlets into the flour, then, dredge them in egg. After that, press the chicken into the breadcrumb mixture.

Place each chicken piece on the greased air fryer rack, trying not to let them touch.

Air fry chicken cutlets

Air fry for 3 minutes. Then, spray with cooking spray. Air fry for another 2 minutes.

Flip the chicken over and then spray again with cooking spray. Air fry for another 5 minutes or until fully cooked and crispy.

Breaded chicken cutlets

Oven Baked Breaded Chicken Cutlets

Ensure the chicken cutlets are thin and even. You may have to pound some down to ensure they are all the same thickness.

Preheat the oven to 425 degrees. Grease an oven safe cooling rack with cooking spray. Line a baking tray with aluminum foil and place the cooling rack on top.

Pour two tablespoons of flour and half the seasonings into one bowl, the egg into another and the remaining ingredients in the final bowl.

Press the chicken cutlets into the flour, then, dredge them in egg. After that, press the chicken into the breadcrumb mixture. 

Place each chicken piece on the greased cooling rack, trying not to let them touch.ย 

Baked chicken cutlets

Bake for 3 minutes. Then, spray with cooking spray. Bake for another 3-4 minutes.

Flip the chicken over and then spray again with cooking spray. Bake for another 5-7 minutes or until fully cooked and crispy.ย 

What To Serve with My Favorite Chicken

This is so versatile and can be used for pretty much anything. They are amazing as a sandwich, a salad topping, mixed into pasta, or really just about anything.

I serve it with a side of my Gigi Hadid famous pasta recipe, air fryer buffalo cauliflower, mini bloomin onions (air fryer white pearl onions), or air fryer baby potatoes.

Storing and Leftovers

You can store these cutlets in the fridge for up to three days in an air tight container. To heat them up, I air fry the chicken cutlets at 400 degrees for 3-4 minutes. They can also be reheated in the oven at 425 degrees for 4-5 minutes. I also love eating them cold over a cold salad.

Have you seen that famous Gigi Hadid pasta recipe, well, it is just penne alla vodka and I will show you how to make the best version of it!

This is not my typical healthy recipe, sorry. This is your classic, full fat version of my favorite dish. If you want something "lightened up" you can check out my instant pot penne alla vodka or my light vodka sauce which is just made on the stovetop.

Gigi Hadid, you may know her as a supermodel or the daughter of one of those real housewives ladies. Well, a while back, she went viral making this spicy vodka sauce. Everyone went crazy for this "Gigi Hadid vodka pasta recipe". But, it is really just a spicy penne alla vodka!

Have you seen that famous Gigi Hadid pasta recipe, well, it is just penne alla vodka and I will show you how to make the best version of it!

I will leave the name as the Gigi Hadid pasta recipe. I do like her and that is apparently what it is known as now. But, still, it will always be penne alla vodka to me.

Fun fact: my family is OBSESSED with penne alla vodka. When I tell you obsessed, I mean ridiculously beyond crazy obsessed. We can go to anย Italian restaurant every night for a good penne vodka dish.ย 

When I tell you we are the biggest penne alla vodka critiques, I MEAN IT. You cannot get a less than perfect sauce pasta us. Which is why I know this will be your favorite penne alla vodka dish.

Tips and Tricks from Allie Carte
  • Substitute the vodka with a squeeze of lemon and additional water, if needed.
  • If you do not like it spicy, skip the crushed red pepper.
  • However, we also love using Italian hot sausage and skipping the crushed red pepper (it is spicy enough)
  • Use your favorite pasta shape for this Gigi Hadid pasta recipe
What You Need to Make This

No special cooking gadgets are required. I make the pasta in one pot and then the sauce in a pan on the stove top. That is all you will need in terms of cooking tools.

Then, of course, for the pasta part, you will need pasta. Like I said, I am a penne alla vodka snob so I am using penne. However, you can use any shape that you love.

Next, will be the ingredients for the actual Gigi Hadid pasta sauce recipe, that will be the time consuming part.

  • Olive oil
  • Shallot
  • Garlic clove
  • Tomato paste
  • Vodka
  • Heavy cream
  • Parmesan cheese
  • Crushed red peppers
  • Salt
  • Pepper
  • Parsley

Now, this is typically where I go over some suggestions and substitutions. However, I will preface this by saying I have perfectly crafted this recipe and I follow it to a T. If you are going to make any substitutions, it will not be the same.

Olive Oil

Yes, I am sure you can use a different type of oil; however, I do not. I just use extra virgin olive oil and that is the end of it. I am not sure what Gigi Hadid would have used in her pasta recipe. Avocado oil is super trendy over in LA; however, olive is just fine here in Florida.

Shallot

Okay, this may be where you can make the biggest substitute; however, the shallot really does make a difference. You can substitute a portion of a red onion; but, it really is not the same! Shallots do have a more mild taste. Honestly, I love the taste of onion; therefore, I do like using a red onion in this. However, my husband cannot stand onions and he says the shallot really makes a difference. It is up to you!

Garlic

You can buy pre-minced garlic; however, I love mincing my own withย this mini food processor. You can also use that for the shallot.

Tomato Paste

This is in a jar by your classic tomato or pizza sauces.

Vodka

If you do not want to use vodka, or do not have it, you can try a little squeeze of a lemon and add a bit more water, if it needs it.

We will be burning the alcohol off; therefore, there will not be any actual alcohol in the dish. Actually, when Gigi Hadid made this pasta recipe, she skipped the vodka and everyone suspected she was pregnant! Well, she was, but still, we do burn off the alcohol.

Heavy Cream

Yes, the heavy cream does make it better and it is what I specifically use. However, if you really want to make it lighter, you can try some fat-free half and half.

Crushed Red Pepper

I add this at the end to make it spicy. Gigi Hadid does like her pasta recipe to be spicy. However, we also skip the crushed red pepper a lot and use a spicy Italian sausage instead. You can also skip the spicy part which is also amazing.

Salt, Pepper and Parsley

Add this at the end, as much or as little as you like!

How to Make the Best Penne alla Vodka

Gigi Hadid, you may know her as a supermodel or the daughter of one of those real housewives ladies. Well, a while back, she went viral making this spicy vodka sauce. Everyone went crazy for this "Gigi Hadid vodka pasta recipe". But, it is really just a spicy penne alla vodka!

I like to have everything prepped, measured and ready to go. I suggest you do the same.

Pasta

Start by cooking the pasta according to the package instructions. Reserve a half cup of pasta water, if needed. Then, drain well and set aside.

Heat a large pan over medium heat. Add one tablespoon of oil and allow that to heat up.

In the pan, add the shallots and sautรฉ for about a minute or two, until they start to become translucent. Add the garlic and sautรฉ for another 30 seconds, until fragrant.

Pour in the rest of the oil and the tomato paste. Mix that together and continue to cook until they are combined, about 3-5 minutes.

Add in the vodka sauce. Stir together for about 2-3 minutes, until it no longer smells like alcohol.

Pour in the heavy cream and parmesan cheese, stirring to combine. Reduce the heat to low and allow it to simmer for 4-7 minutes, until thickened.

Add in the pasta and stir to combine. If needed, slowly stir in the pasta water.

Sprinkle with crushed red pepper, salt, pepper and parsley, mixing to evenly distribute.

Fakeout Tuesday featuring CHICKEN FRIED RICE!!! I havenโ€™t had this dish in forever but my sister got me craving fried rice!! We were not going to give in to her temptation of going to my local Chinese takeout. Hello major points. So I pulled out my recipe and made my version!

I couldnโ€™t believe how quick and delicious this recipe was when I first made it. It is so hard to stop sampling it to take some photos! It is a great dish served with lots of vegetables. You can add any of your favorites or serve some edamame on the side. Either way, I guarantee youโ€™ll be asking for more!!

What I Love About Teriyaki Chicken Fried Rice

What I love about this fried rice is that it is made with teriyaki sauce, ground chicken, gluten free ingredients and some secret spicy sauce!

Plus, of course, some vegetables. This dish is easily customizable depending on which vegetable you want to put inside. Specifically, I chose onions, peppers, carrots, peas and cauliflower. Yes, cauliflower! I sneak some riced cauliflower in there just for more veggies!

Make this dish for a quick weeknight dinner or prepare it ahead of time for a meal prep. I like to do both! We will make all four servings and eat two that night and then two for lunch the next day. It heats up pretty well in a work microwave.

You can make this with only riced cauliflower, if you are going low carb. Plus, this dish is great with other cuts of chicken or other types of meat. You can also make it vegetarian by skipping the meat all together.

No matter what you do, this teriyaki chicken fried rice recipe is very customizable and even more delicious.

What You Need for Teriyaki Chicken Fried Rice

Like I said, this recipe is completely customizable. You can use any vegetables, any type of meat, whatever you want! I am just going to go over how I did it; however, you can make it your own.

There are no fancy gadgets required. You just need a big pot and a stovetop.

  • Minced garlic
  • Diced onion
  • Vegetables
  • Sesame oil
  • Ground chicken
  • Seasonings
  • Splenda
  • Liquid egg whites
  • Ketchup
  • Sriracha sauce
  • Soy sauce
  • Teriyaki sauce
  • Rice
  • Riced cauliflower

It may seem like a lot of ingredients; however, l like using all of them to have a flavorful dish. Sometimes chicken fried rice can be a little bland but not here!! But, we can go over some suggestions and substitutions.

Minced Garlic and Diced Onion

These are going to be separate from the vegetables of choice as these provide a nice flavor base. Minced garlic and diced onion are sautรฉed at the start of this recipe. Do you really need them? Not particularly. However; I do think it adds a bit of flavor.

Plus, I love the texture of onion, I know, strange, but I do. It is always my philosophy that you cannot have too much garlic; therefore, we add the garlic! 

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. You can also use that for the onion depending on how small you want the pieces.

Vegetables

This dish is easily customizable depending on which vegetable you want to put inside. Specifically, I chose onions, peppers, carrots, peas and cauliflower. Yes, cauliflower! I sneak some riced cauliflower in there just for more veggies!

However, you can pick any vegetables that you love or just leave them out!

Sesame Oil

Just your typical sesame oil. However, if you are trying to cut back some oil, you can skip this ingredient and use cooking spray.

Ground Chicken

I make this teriyaki fried rice with chicken but, try this with ground beef if you prefer a red meat. Typically, I will use a 99% fat-free ground chicken breast; however, you can substitute a different fat percentage. I think the best fried rice recipe is with ground chicken but, I am very biased towards it. 

You can also use this recipe to marinate some chicken (or steak) strips and make a more stir fry recipe from that.

Seasonings

For the seasonings, I just used some basic seasonings that you probably have.

  • Ginger
  • Oregano
  • Garlic powder
  • Onion powder
  • Paprika
  • Seasoned salt

I know I promised you a spicy chicken fried rice. We will get there. For the sauce, we will add in some sriracha sauce; however, if you think you can handle it, add in some ground red pepper.

Splenda

I guess the Splenda would be included in the seasonings; however, I wanted to give it its own time. This is going to be a sweet and spicy chicken fried rice. Hence, the Splenda for the sweetness.

I use Splenda because I love Splenda; however, you can choose a different alternative or just some real sugar.

You do not necessary need the sugar; however, I do think it compliments the spicy and salty flavors VERY well. Just try it!

Liquid Egg Whites

For the eggs, I do prefer liquid egg whites as it is a smoother, less clumpy consistency; however, regular eggs do work. Whisk the eggs before beginning to make things easier.

Ketchup

Well, here is where things get a little interesting. The sauce that I use is a take on my world famous yum yum sauce mixed with your classic flavors of teriyaki chicken fried rice.

I use sugar free ketchup as that is what I always do and love! However, you can use regular ketchup if you wish.

Soy Sauce

This is a gluten free chicken fried rice; therefore, we will be using gluten free soy sauce. I also use a low sodium version as well. However, you are more than welcome to use a different type of soy sauce.

Teriyaki Sauce

Same thing goes for the teriyaki sauce. A gluten free chicken fried rice will call for some gluten free teriyaki sauce. However, you can use a normal kind.

Rice

You will need to make your own rice and this recipe is not going to teach you how. For this recipe, I find that 1 cup or so of cooked rice works the best. That will be ยฝ cup dry. You can follow my stovetop rice recipe, my instant pot rice recipe or you can just use a rice cooker.

Riced Cauliflower

Finally, our last ingredient, some riced cauliflower. This one is the easiest to cook as you just pop it into the microwave. Feel free to use as much or little as you wish or just skip it.

How to Make Teriyaki Chicken Fried Rice

What is great about this recipe is that you just need a large pot and a stovetop!

Start by getting all your ingredients ready.

Mince the garlic and dice up the onion and any other vegetables that you are using. I like them pretty small; however, you can make them your desired size.

Heat a large pan over medium/heat. Drizzle on the oil and allow that to heat up. Once heated, add the garlic and all the vegetables. Sprinkle them with a little bit of salt and sautรฉ until slightly soft, about 3 minutes.

Add the ground chicken and start breaking it up. Sprinkle on the seasonings and continue to breakup while cooking. Continue to break up and mix in the seasonings until the chicken is fully cooked.

Move the chicken to the sides of the pan, forming a hole in the middle. Pour in the eggs and allow them to heat up a little. Keep mixing and scrambling the eggs until fully cooked.

Reduce the heat to a low. Pour on all the sauce and mix to fully combine. Add in the cooked rice and riced cauliflower and toss to coat again.

Air Fryer BBQ Chicken Thighs

The best way to cook your boneless chicken thighs is in the air fryer and smothered in a sweet BBQ sauce.ย 

These air fryer chicken thighs coated in a sweet BBQ sauce were voted top 10 of all of my recipes! They are a little crispy and have all of the tastes of BBQ chicken wrapped up into a little bite. Plus, they are done in less than 20 minutes and only require two ingredients plus some seasonings.

Why are these one of my favorite dishes? Mostly because they only require chicken thighs and BBQ sauce. Plus, of course, some seasonings that I am sure you have in your cabinet. They are a fan favorite and you can try them out in any type of dish. From salads, to wraps, to just eating them with a fork and knife.. these are amazing!

I am a huge chicken fan; however, my husband prefers a less lean meat. We compromise a lot with some chicken thighs. I have made sweet and sour chicken thighs, garlic butter chicken thighs and some made in the instant pot. But, the air fried boneless chicken thighs is the way to go!

Quick Tips From Allie Carte

  • These are sweet; however, if you want something spicy, try substituting buffalo sauce.
  • The chicken thighs will be done early; however, if you can air fry for a little extra longer to keep it a bit crispy.

What You Need for Air Fryer BBQ Chicken Thighs

Why are these one of my favorite dishes? Mostly because they only require chicken thighs and BBQ sauce. Plus, of course, some seasonings that I am sure you have in your cabinet.

First off, you will need an air fryer, you can use a basket type air fryer; but, I really like a rack type air fryer as well. However, you can also make them in the oven. I will go over both directions. 

  • Chicken thighs
  • BBQ sauce
  • Brown sugar
  • Seasonings
Chicken Thighs

I used some Publix brand boneless and skinless chicken thighs. The boneless and skinless are my favorite as they are easier to cut and eat without the bones. Also, without the skin, they are a bit leaner.

You can use bone-in thighs if that is what you prefer. Boneless thighs take a little less time to cook. Therefore, if you substitute bone-in, cook it for an extra minute or two.

BBQ Sauce

These air fryer chicken thighs are smothered in BBQ sauce. Now, these are spicy spicy! You will smother them in BBQ sauce. I use Sweet Baby Ray's sugar free BBQ sauce; however, you can use any brand that you love.

If you want something spicy, I love using this method but with buffalo sauce. It is basically the same concept; however, spicy.

Brown Sugar

Brown sugar replacement is a staple in my household, it is great on so many dishes. I use theย Swerve brand; however, Splenda has a brown sugar blend, and, alternatively, you can use regular brown sugar.

Seasonings

Now, we can go over the seasonings that I use. This may seem like a lot; however, you should have all, if not most, in your cabinet.

  • Garlic powder
  • Garlic salt
  • Onion powder
  • Chili powder
  • Paprika

You should have most of these in the cabinet; however, if you do not, you can skip a seasoning if you do not want to buy it. But, I do think all of these seasonings really make it taste amazing.

How to Make Air Fryer BBQ Chicken Thighs

Start by preheating your air fryer to 400 degrees. Grease the basket with cooking spray.

Combine the seasonings in a small bowl, mixing together. Sprinkle both sides of the chicken thighs with the seasonings and press them into the chicken.

Pour the BBQ sauce into a small bowl. Dunk the chicken into the sauce and press the sauce into the chicken.

Place each chicken into the air fryer, trying not to let them overlap.

Air fry for 16-18 minutes, flipping halfway.

The chicken will be done after about 11 minutes; however, I like to leave them in longer to let them get crispy.

Oven / Stovetop Version

If you do not have an air fryer, you need one! But, in the meantime, you can make these on the stovetop/oven.

Start by preheating your oven to 425 degrees. Grease a baking tray with cooking spray.

Combine the seasonings in a small bowl, mixing together. Sprinkle both sides of the chicken thighs with the seasonings and press them into the chicken.

Pour the BBQ sauce into a small bowl. Dunk the chicken into the sauce and press the sauce into the chicken.

Heat a pan over medium high heat. Add the chicken thighs and cook for 3-4 minutes per side. 

Transfer to a greased baking tray and bake in the oven for about 10 minutes, until fully cooked.

Air Fryer Buffalo Chicken Thighs

These boneless chicken thighs are covered in buffalo sauce then air fryer to mimic a crispy, fried piece of chicken.

These air fryer chicken thighs coated in buffalo sauce were voted top 10 of all of my recipes! They are a little crispy and have all of the tastes of buffalo chicken dipped wrapped up into a little bite. Plus, they are done in less than 20 minutes and only require two ingredients plus some seasonings.

Why are these one of my favorite dishes? Mostly because they only require chicken thighs and buffalo sauce. Plus, of course, some seasonings that I am sure you have in your cabinet. They are a fan favorite and you can try them out in any type of dish. From salads, to wraps, to just eating them with a fork and knife.. these are amazing!

I am a huge chicken fan; however, my husband prefers a less lean meat. We compromise a lot with some chicken thighs. I have made sweet and sour chicken thighs, garlic butter chicken thighs and some made in the instant pot. But, the air fried boneless chicken thighs is the way to go!

Quick Tips From Allie Carte

  • If you do not like things too spicy, try substituting BBQ sauce or adding brown sugar.
  • Air fry for a little extra longer to keep it a bit crispy.
  • These are amazing in any dish from salads, to wraps, to just eating them with a fork and knife.
  • Try this out with a different cut of chicken if you want a leaner meal.

What You Need for Air Fryer Buffalo Chicken Thighs

Why are these one of my favorite dishes? Mostly because they only require chicken thighs and buffalo sauce. Plus, of course, some seasonings that I am sure you have in your cabinet.

First off, you will need an air fryer, you can useย a basket type air fryer; but, I really likeย a rack type air fryerย as well.ย However, you can also make them in the oven. I will go over both directions.ย 

  • Chicken thighs
  • Buffalo sauce
  • Seasonings
Chicken Thighs

I used some Publix brand boneless and skinless chicken thighs. The boneless and skinless are my favorite as they are easier to cut and eat without the bones. Also, without the skin, they are a bit leaner.

You can use bone-in thighs if that is what you prefer. Boneless thighs take a little less time to cook. Therefore, if you substitute bone-in, cook it for an extra minute or two.

Buffalo Sauce

These air fryer chicken thighs are smothered in buffalo sauce. Now, these are spicy spicy! You will smother them in buffalo sauce. I use Frank's Red Hot; however, you can use any brand that you love. I also like to use Sweet Baby Ray's buffalo wing sauce.

If you want something less spicy, I love using this method but with BBQ sauce and brown sugar. It is basically the same concept; however, sweeter.

Air fried boneless chicken thighs
Seasonings

Now, we can go over the seasonings that I use. This may seem like a lot; however, you should have all, if not most, in your cabinet.

  • Garlic powder
  • Garlic salt
  • Onion powder
  • Chili powder
  • Chipotle
  • Red pepper
  • Black pepper
  • Dill weed
  • Paprika

You should have most of these in the cabinet; however, if you do not, you can skip a seasoning if you do not want to buy it. But, I do think all of these seasonings really make it taste amazing.

How to Make Air Fryer Buffalo Chicken Thighs

Start by preheating your air fryer to 400 degrees. Grease the basket with cooking spray.

Combine the seasonings in a small bowl, mixing together. Sprinkle both sides of the chicken thighs with the seasonings and press them into the chicken.

Pour the buffalo sauce into a small bowl. Dunk the chicken into the sauce and press the sauce into the chicken.

Place each chicken into the air fryer, trying not to let them overlap.

Air fry for 16-18 minutes, flipping halfway.

The chicken will be done after about 11 minutes; however, I like to leave them in longer to let them get crispy.

Oven / Stovetop Version

If you do not have an air fryer, you need one! But, in the meantime, you can make these on the stovetop/oven.

Start by preheating your oven to 425 degrees. Grease a baking tray with cooking spray.

Combine the seasonings in a small bowl, mixing together. Sprinkle both sides of the chicken thighs with the seasonings and press them into the chicken.

Pour the buffalo sauce into a small bowl. Dunk the chicken into the sauce and press the sauce into the chicken.

Heat a pan over medium high heat. Add the chicken thighs and cook for 3-4 minutes per side.ย 

Transfer to a greased baking tray and bake in the oven for about 10 minutes, until fully cooked.
