One Pan Roasted Chicken and Potatoes

This one sheet pan chicken, potatoes and broccoli recipe mimics a weeknight casserole dish but allows all the elements to be roasted to perfection. 

Sheet pan dinners are my favorite thing to make! They are so easy to cook and only require one sheet pan, obviously, which means an easier clean up. This is my sheet pan cheesy chicken with potatoes and broccoli. It combines a protein with a carb and a veggie, plus you are getting a little fat in there too. Everything you need, all in one dish, in one sheet pan!

What You Need for a One Pan Meal

Sheet pan roasted chicken, broccoli and potatoes only need one sheet pan. Plus, you might need a cutting board and knife to chop everything up.

Broccoli

I keep it easy by buying precut broccoli. I still have to cut it a little because some of t he pieces are uneven; but, it really does cut back on time. However, you can also buy a head of broccoli and cut the whole thing up yourself.

Shredded Cheese

Feel free to use whatever type of shredded cheese that you like on our one pan roasted chicken and potatoes recipe. However, I prefer low fat or fat-free.

Shallot

I used shallots in this recipe, because I love them. You can skip it, or use less, if you are not a fan. Additionally, if you do not want to buy shallots or cannot find any, substitute red onions. This also tastes really good with diced bell peppers if you prefer that.

Potatoes

I have been obsessed with these nibbles potatoes and they are perfect for this one pan roasted chicken recipe. They are already pretty small, therefore, just need a little extra chopping. You can use a different potato; however, be mindful of the cooking time as you will need to chop them pretty small.

Chicken

Chicken tenderloins are skinny pieces of chicken that are known to be very tender. Hence the name. I use these because they do not require as much cutting, since they are already skinny. However, you can opt to use a different cut of chicken or a different type of meat.

Garlic

You can buy pre-minced garlic; however, I love mincing my own with this mini food processor. You can also use that for the onion, depending on how big you like the pieces.

Seasonings

I keep it simple for this chicken, broccoli and potatoes casserole recipe with items you probably have in your cabinet.

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasonings
  • 1 teaspoon basil dried
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika

Make this one pan roasted chicken and potatoes recipe spicier by adding ground red pepper and chili powder. You can also keep it more Italian style and leave it the way I had it, I am not a huge spicy fan.

Olive Oil

This is just to coat everything in to keep it from sticking to the pan and to keep the seasonings sticking onto the items.

I cook everything, at the same time, in one sheet pan. Which is why this recipe is called the one pan roasted chicken and potatoes recipe. The cleanup is VERY minimal which makes for a perfect weeknight meal. I even line my baking tray with aluminum foil to just toss and go.

You really need to chop up the potatoes VERY small since they take a long time to cook. I like my potatoes really well done, so I chop them up really small. The smaller they are, the faster they cook, and vice-versa.

The same goes for the broccoli, if you like more well done broccoli, make the pieces smaller. If you like crunchier broccoli, make the pieces bigger.

Make sure to keep the chicken pieces larger as they cook the quickest. You want to make sure the chicken is completely cooked, but not overcooked.

I used fat-free cheese for this. Sometimes it can be more difficult to find, or sometimes you may just not want fat-free. But, you can substitute any cheese you would like or have on hand.

Chicken and broccoli casserole

Step by Step Instructions for Chicken, broccoli and potatoes casserole recipe

Preheat oven to 400 degrees. Line a baking tray with aluminum foil (for easy cleanup) and grease with cooking spray.

Chop up potatoes, broccoli, and chicken. Then, dice the shallot. The potatoes should be very small. The chicken should have the biggest pieces about an inch or so by an inch or so. 

You really need to chop up the potatoes small since they take a long time to cook. I like my potatoes really well done, so I chop them up REALLY small. The smaller they are, the faster they cook, and vice-versa.

However, you can also bake the potatoes for about 10 to 15 minutes ahead of time, if you wish for them to be larger in size.

Add cut chicken, potatoes, and broccoli, diced shallots and minced garlic to a sheet pan. Drizzle with oil and toss to coat. Sprinkle with the seasonings and toss to evenly coat. 

Bake for 15 minutes. 

Remove sheet pan from oven and flip over the ingredients, tossing to mix up. Sprinkle the cheese over everything. But, if you like the cheesy to be extra crispy, you can put it on top from the beginning.

Place the sheet pan back in oven until chicken is fully cooked and potatoes are soft. About another 15 minutes.

Crock Pot Shredded Taco Chicken

Happy Taco Tuesday! This delicious shredded chicken taco meal is exactly what I needed!!! I added all my ingredients to the crock pot and I cannot even describe how amazing the smell was! Then the taste was better than I could have ever imagined, better than any restaurant dish you have tried! Super easy and delicious, a must try!!

BTW this dish makes the most amazing leftovers or meal prep!

Ingredients
 

  • 16 ounces chicken breast about 2 pieces
  • ½ can diced tomatoes half a 15 oz can, about ½ cup
  • ½ cup chicken broth fat free, low sodium
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cumin

Instructions

  • Grease the bottom of the crock pot and add in the chicken breasts side by side to the bottom.
  • On top, add the crushed tomatoes, chicken broth, lime juice and seasonings. Stir to combine without disturbing the chicken.
  • Cover the pot and cook on low for 1.5 to 2 hours, it depends how thick the chicken breasts are, just monitor it until it is completely cooked
  • Once completely cooked, shred the chicken with two forks or a hand mixer
  • Add shredded chicken back into the pot with the juices and stir occasionally as the chicken absorbs the juices. Store the chicken with the remaining juices.

This is a spin on my one point Alfredo, or should we now call it zero point Alfredo because technically you gain a point eating a vegetable? Any-who, you all love my one point spaghetti squash Alfredo, now its time to step it up and make it a full meal. I eat it like this all the time, it is the perfect meal prep and INSANELY DELICIOUS! It is seriously so crazy how I just crave spaghetti squash after I first started making this recipe.

This is the perfect meal prep to! Depending on how big your spaghetti squash is, you may need to adjust some of the ingredients. I typically just do a large squash if I am prepping for four days, if not, I get a smaller one.

This is really good mixed with tomato sauce, it creates an alla vodka sauce!

Cooking the Spaghetti Squash

  • 1 spaghetti squash large
  • cooking spray
  • 2 teaspoons garlic salt

Cooking the Chicken

  • 1 pound ground chicken breast

Instructions

Cooking the Spaghetti Squash

  • Preheat oven to 400 degrees
  • Slice spaghetti squash in half, longwise. Remove the seeds and the core
  • Spray with cooking spray and sprinkle with the garlic salt
  • Place on a greased baking tray, cut side down. Bake for 50-60 minutes, until skin is soft to the touch.
  • Alternatively, place, cut side down, on a microwave safe dish and take a fork and carefully fork up the skin. Microwave for about 10 minutes, until the skin is slightly soft to the touch
  • Once cooked, fork up the insides of the squash
  • Add in the laughing cow cheese wedges and toss to combine and melt the cheese.

Making the Chicken

  • Heat a large pan over medium high heat, greased with cooking spray
  • Once heated, add chicken and brown both sides for about two minutes.
  • Start breaking up the chicken and sprinkle on the seasonings.
  • Continue to break up the chicken and mix in the seasonings as the chicken cooks.
  • Once chicken is fully cooked, place over the spaghetti squash and top with more basil.

Lightened Scalloped Potatoes

One of my favorite holiday sides is cheesy scalloped potatoes. These seemed pretty easy to make lighter, so I gave is a shot and it was amazing. I could not even tell that this was the lighted up version of one of my favorite sides. It was so cheesy, so creamy and absolutely amazing.


Serving Size

This dish makes 9 servings, or you could make smaller portion sizes to feed more people, it could feed up to 12 people. I used a 9x9 inch casserole dish and was easily able to cut up the final product in 3x3 inch squares. It was plenty of potato.

Leftovers

If you are making this for a holiday with a bunch of family and friends, you probably will not have leftovers because this is so good. Jokes aside, this makes for amazing leftovers. This is a great dish to make as a meal prep for your carbs for the week.

I made this dish one night and ended up not eating it (just sampling) because I was recipe testing a bunch of different potato recipes and this one really holds up well as leftovers so I set it aside. Just place some foil over the top and pop it into the refrigerator and it will stay fresh for up to 3 days.

To reheat, I just placed it back in the oven until it was warm again, it takes about 30 minutes. I left it in the same container and it was a simple way to prep my carbs for the night. We each ate a serving and I placed it back into the fridge, with the foil, and reheated it again for a third night. After that night, I placed the remaining into a tupperware and microwaved it when I was ready to eat the final servings.

Ingredients

This works best with yukon gold potatoes, they are smaller than your average baked potato and hold up well to being sliced and cooked like this.

I think the key to the delicious flavor here is the tiny bit of nutmeg.

If you have nut allergies, you can use another milk of your liking. I love almond milk because it is low on calories and lasts for weeks in my fridge.

Scalloped potatoes typically call for arrowroot powder. If you do not have that, or do not want to buy that for one recipe, use cornstarch in half the amount specified in the recipe.

I used fat-free cheese but you can certainly use regular or reduced fat cheese if you cannot find fat-free, or do not want to use it.

You can use a different sized casserole dish if needed. But remember, a larger casserole dish will have a thinner recipe and will need to be baked with less time. The opposite goes for a smaller casserole dish.

Directions

I used a mandoline (I liked my favorite one in the recipe) to cut the potatoes. You can cut them by hand, but it is very tedious and you want the potatoes to be the same width, to cook evenly. If using a mandoline, please be so very careful, you can cut your fingers very easily and I am not paying for your stitches haha. My mandoline comes with the cutting glove but you still need to be careful.

I cooked my potatoes for 60 minutes, I like them very well done. I love how some of the edges got crispy and the inside stayed nice and creamy. Just like brownies, there is a piece for everyone.

This is a great dish to make ahead if you are bringing it or serving it for a holiday gathering. You can slightly under bake the potatoes and then when ready to serve, pop them back in the oven and let them reheat and finish cooking.

Ingredients
 

  • 3 pounds yukon gold potatoes
  • 1 tablespoon light margarine ICBINB
  • ⅛ cup diced white onion
  • 4 cloves minced garlic
  • 1 tablespoon thyme
  • ½ tablespoon basil
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 pinch nutmeg
  • 1 pinch paprika
  • 1 cup plain, unsweetened almond milk
  • 1 tablespoon arrowroot powder
  • 1 cup mozzarella cheese shredded, fat-free
  • ¼ cup cheddar cheese shredded, fat-free

Instructions

  • Preheat oven to 400 degrees and spray a 9x9 casserole dish with cooking spray.
  • Slice potatoes into thin slices, about ⅛ of an inch. Place half of the potatoes into the bottom of the casserole dish, in overlapping layers. Set the other half of the potatoes to the side.
  • Heat a medium sized saucepan over medium high heat.
  • Once heated, add the margarine and allow it to melt. Add in the diced onions and minced garlic and allow them to cook for about 3-5 minutes, until softened. Add in the seasonings and stir to combine.
  • Bring the heat down to medium / low medium and add in the arrowroot powder, stirring to combine.
  • Add in the milk, little by little and vigorously whisk together until all the milk is combined and there are no clumps.
  • Bring milk up to a slight simmer, stirring occasionally. Add in ¾ cup of mozzarella cheese (reserving ¼ cup) and the cheddar cheese. Stirring until the cheese is melted.
  • Add half the cheese sauce to the tops of the potatoes in the casserole dish.
  • Arrange the remaining potatoes over the cheese sauce in the casserole dish. Top with the remaining cheese sauce. Sprinkle the remaining mozzarella cheese over the potatoes.
  • Bake for 60 minutes, or until potatoes are softened to your liking. Cut into 9 pieces (3 inch by 3 inch squares) and serve.

Peppermint Sangria

Christmas drink #2… PEPPERMINT CRANBERRY SANGRIA! This was so so good and perfect for the holidays. It came out to 5 points for me but it’s kinda two drinks (strength wise) which is pretty good to me. Use ‘garnacha’ wine for this, it’s probably found in the Spain area of you wine store, because it makes for the best sangrias. Make sure you grab some skinny mixes sugar free simple syrup for this or make your own sugar free version, if you like it sweet, which I certainly do. I love the peppermint hint in this, you can use as much or as little peppermint as you like, but remember, it packs a peppermint punch! Make sure to add lots of ice and enjoy.

Broccoli Alfredo

Cheesy, garlic-y, delicious broccoli. Yes, it is possible, and so easy! Try out my broccoli alfredo, just takes two ingredients with some seasonings.

I like to keep my cheese more of a solid form, so I put on the cheese after the broccoli has fully cooked. If you like the cheese more melty, take out the broccoli about five minutes before it is done, add the cheese and pop it back in the oven.

  • 1 laughing cow cheese wedges garlic
  • ¼ teaspoon garlic salt

Instructions

  • Preheat oven to 350 degrees. Line a baking tray with aluminum foil and spray with cooking spray
  • Chop broccoli up into bite sized pieces and place on the aluminum foil. Spray liberally with cooking spray. Sprinkle with the garlic salt and toss to evenly coat. (if you would like to add some oil and points into your day, sub the cooking spray for a teaspoon of light olive oil)
  • Bake for 20-30 minutes, until soft (stirring halfway).
  • Add the cheese wedge to the broccoli and toss to mix it up into the broccoli heads.

I am SO lovin it! This copycat McDonald’s McGriddle is everything I want and love. McGriddles used to be one of my favorite things, but now I have a copycat version. This is packed with protein, including a chicken patty and protein pancake. Yet, has all the delicious flavors and textures of the original.

Ingredients
 

  • 1 chicken sausage patty Applegate
  • 1 slice cheese velveeta
  • 3 tablespoons liquid egg whites
  • 1 pinch salt

Pancakes

  • ¼ cup Kodiak flapjack and waffle mix
  • ¼ cup plain, unsweetened almond milk
  • 1 tablespoon maple syrup

Instructions

  • Combine ingredients for the pancake buns in a bowl. Set aside to let the mixture rise as you prepare the remaining ingredients.
  • Cook one sausage patty according to the package instructions.
  • Meanwhile, heat a medium sized pan over medium heat. Grease with cooking spray
  • Once heated, add the egg and sprinkle with salt.
  • If you have an egg mold, use that, otherwise, try to keep all the egg together as you scramble it. Once cooked, fold into the same shape/size as the breakfast patty. It will not be perfect, but it will taste great.
  • Remove the egg from the pan and re spray the pan with cooking spray.
  • Place a mason jar lid on the pan and grease that with cooking spray. Add half the pancake batter into the middle of the mason jar lid. Once the pancake has held its shape, remove the lid and flip the pancake. Cook until fully cooked.
  • Repeat the previous step for the second pancake patty.
  • Once everything is cooked, assemble the McGriddle.

  • 1 cup rice
  • 4/3 cup water
  • 24 meatballs fully cooked, frozen
  • ¼ cup grape jelly sugar free
  • ¼ cup sweet thai chili sauce G Hughes

Instructions

  • Add rice and water to the bottom of the Instant Pot.
  • Carefully place frozen meatballs on top.
  • Stir together grape jelly and sweet Thai chili sauce, then carefully pour over the meatballs.
  • Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it.
  • Once completely cooked, let set for 5 minutes, then vent and de-pressurize the instapot then open the lid. 
  • Top with green onions.

Loaded Baked Chicken Casserole

All the tastes of a loaded baked potato, with some added protein. Loaded baked chicken casserole is a one-pot meal that is sure to please the crowd. Potatoes, chicken, cheese and bacon, what could be better?! This may be one of my top new favorite dishes of mine, it is seriously so good.

For this recipe I used Ore Ida tater tots. The specific brand does not particularly matter. I just usually grab those or Publix brand. I did not pre-bake them before adding in the chicken. It did make them soft but I loved that because it was truly like eating a loaded baked potato and having the mashed potato at the bottom. You can pre-bake the tater tots or keep everything separate if you want crispy tater tots but I prefer it like this. Plus, my way is easier.

  • 36 tater tots
  • ½ teaspoon seasoned salt
  • 1.25 pounds chicken tenderloins
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon seasoned salt
  • ¼ teaspoon oregano
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon paprika
  • 1 cup fat-free shredded cheddar cheese
  • 3 tablespoons bacon bits
  • ¼ cup plain, nonfat Greek yogurt
  • 2 green onions

Instructions

  • Preheat the oven to 450 degrees
  • Grease an 8x8 casserole dish with cooking spray. Add the tater tots to the bottom of the dish. Sprinkle with the seasoned salt.
  • Cut chicken tenderloins into bite sized pieces, about 1 inch by 1 inch. Season with the remaining seasonings and place on top of the tater tots, in a single layer.
  • Bake for 30-35 minutes, until chicken is almost fully cooked. About half way, carefully flip over the chicken, trying not to disturb the tater tots.
  • Top with the shredded cheese and bacon bits then place back in the oven for about 10 minutes, until chicken is fully cooked and cheese is melted.
  • Serve with nonfat greek yogurt and sliced green onions.

  • Heat a large pot over low heat. Once heated, add garlic and cook for 1-2 minutes, until fragrant
  • Add ground chicken and begin to break it up. Add the remaining seasonings and continue to break up the chicken while mixing together and cooking
  • Grate the zucchini then add to the half cooked chicken. Continue stirring and mixing together.
  • Once completely cooked, add the blended tomatoes and stir together
  • Allow sauce to simmer for 15-45 minutes, stirring and scraping the pot occasionally
  • Meanwhile, cook pasta according to package instructions. Drain well then combine with the sauce once finished.

Best Chicken Marinade

The easiest and most delicious way to get the juiciest chicken is with a really good marinade! This is my tried and true marinade and is always a hit. The best way to get a really good marinade is to fork up your chicken (or other meat) so that the marinade really seeps down inside the chicken. This chicken is amazing for meal prep or a BBQ with friends!

In the recipe builder you will notice that I made this 12 servings. While this does serve only 6, you will really only use half the marinade, at most.

What I love about this recipe builder clickable link is that you can edit it within your own app. My recipe is just for the marinade, but when you export the recipe builder to your WW app, you can add the chicken or anything you use this marinade for.

This marinade is for 1.5 pounds of chicken breast. This would also work great with salmon. Marinade your chicken in this mixture for 2-8 hours. I like to fork up my chicken a bunch so that the marinade really seeps inside the chicken and the flavor lasts. I put everything into a plastic baggie or Tupperware container.

When ready to cook, I usually wring off the excess liquids and season my chicken with some extra garlic salt. We like to grill the chicken on the Blackstone!

  • Place on a greased baking dish and use a potato masher to mash down the potatoes, trying to keep them as one piece. The more you mash them down (the thinner they get), the crispier they will be.
  • Evenly spread the margarine across the potatoes. Sprinkle evenly with all of the seasonings.
  • Bake for about 40-45 minutes, until your desired crispness is reached. Do not flip the potatoes.

I made four servings of everything, then added 1 tablespoon of the G Hughes sweet thai chili sauce and reduced fat cheese, plus all the green onions in the world.

If you are in Orlando, the restaurant I am talking about is Sus Hi Eatstation, it is my favorite!!

Garlic Bread Chicken

Garlic bread chicken! One of the greatest inventions I have come up with lately. This tastes just like a garlic roll you get from your local Italian restaurant, you know, minus the bread, add the chicken. This is extremely garlic-y, in the best way ever. So juicy, from the margarine, and absolutely delicious. I could not get over how good this was!

I made the chicken in the oven but you can cook it however you prefer. The main thing to worry about is the sauce.

  • Stovetop

Ingredients
 

Chicken Ingredients

  • 16 ounces chicken tenderloins 5-7 pieces
  • 1 teaspoon Italian seasonings
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Sauce Ingredients

  • 2 tablespoons light margarine ICBINB
  • 8 cloves minced garlic
  • 1 tablespoon parsley

Instructions

  • Preheat oven to 400 degrees F
  • Season the chicken tenderloins with the seasonings and place on a greased baking tray
  • Bake the chicken for about 15 minutes, flipping halfway. Or until fully cooked
  • Meanwhile, heat a small saucepan over medium heat, greased with cooking spray
  • Add the minced garlic and cook for about 1-2 minutes, until fragrant
  • Add the margarine and stir until melted, add the parsley and stir to combine
  • Once the chicken is fully cooked, place in the sauce pan with the margarine and toss to coat
  • Plate the chicken and pour over any excess sauce

Caprese Burgers

I have been so obsessed with caprese since we had it at our wedding! I have been trying to find any excuse to make it.. so here we have CAPRESE BURGERS. These make the best burgers! It is kinda like your basic lettuce, tomato and cheese, but taken to a whole new and slightly fancier level.

Caprese Burgers

Ingredients
 

Burger Ingredients

  • 2 pounds 99% fat free ground turkey breast sub ground chicken breast
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 4 teaspoons garlic powder
  • 4 teaspoons onion powder

Caprese Ingredients

  • 2 tomatoes
  • 8 ounces part-skim mozzarella cheese ball
  • ¼ teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic glaze
  • basil fresh

Instructions

Patties

  • Heat a large pan over medium/high heat. Spray with cooking spray
  • Place ground turkey in a large bowl. Sprinkle evenly with the seasonings. Use your hands to thoroughly mix the seasonings into the meat
  • Form ground meat into 4 equal sized patties. Add to the heated pan and cook until thoroughly cooked, about 5-6 minutes per side, flipping once

Caprese

  • Slice tomatoes and mozzarella into 8 slices, each
  • Assemble your capers on a round plate. Set down the tomato slices, with a slice of mozzarella on top of each one, you may need to overlap them. Sprinkle with salt
  • Drizzle with the olive oil and balsamic glaze
  • Slice basil into thin sliced and cover the top of the caprese with basil

Caprese Burgers

  • Assemble your burgers by adding one patty and one caprese stack to your bun of choice. I used a smart bun.
