Greek Chicken Meatballs

Take a taste of the Mediterranean with my Greek chicken meatballs, drizzled with my low cal and low fat homemade tzatziki sauce! 

You all asked for more Greek recipes and I am happy to oblige! These are my Greek chicken meatballs and they pack such a punch. They are drizzled with my greek yogurt tzatziki sauce which brings in so much more flavor.

Fun fact, I am about a quarter Greek as my grandpa was born there. He was never a big cook so we never had Greek recipes. As I got older, I started experimenting with Greek food and it is delicious. I have my own low cal and low fat version of a Tzatziki sauce that makes any Greek delicious AMAZING.

What You Need for Mediterranean Greek Chicken Meatballs

I like making these with ground chicken breast, as opposed to ground beef or lamb. It is very lean and delicious; however, does require some work to make sure they remain moist. Don't worry, we got this!

Typically, I just pop these in the oven; however, they are amazing in the air fryer as well. They come out a bit crispier on the outside but can get a little more dry on the inside. It is up to you which you prefer.

The ingredients are pretty simple and you should have most of the items already; however, you can always substitute an herb here or there.

  • Ground chicken breast
  • Pickle juice
  • Lemon juice
  • Egg
  • Breadcrumbs
  • Parsley
  • Dill weed
  • Basil
  • Dried mint
  • Garlic Powder
  • Onion Powder
  • Salt
  • Pepper

I really love a fresh and herb-y flavor to my Greek food!

Ground Chicken Breast

I make these Italian stuffed peppers with ground chicken breast. I love how lean and protein packed ground chicken breast is. However, you can substitute regular ground chicken or a different type of meat such as beef or lamb.

Pickle Juice

Just from a jar of dill pickles! I just use a generic brand; however, you can use some fancy pickles too.

Lemon Juice

Use just a tiny bit to bring in some more fresh flavor. I use the lemon juice from the little jar; however, you can use fresh lemon juice.

Egg

This keeps the chicken in the Greek meatballs moist while also helping it hold together. I really prefer liquid egg whites; however, you can use a real egg. Be sure to whisk the egg before adding it to the other ingredients.

Breadcrumbs

Again, helps to keep the meatballs together. I just use Panko breadcrumbs; however, you can use whatever you want to.

Spices

Yes, it is a lot of spices; however, you can skip one or two if you really needed to. I enjoy having all of them but I know that is not an option for many people. In addition, you can also substitute fresh herbs that are finely minced.

What You Need for a Low Cal, Low Fat Tzatziki Sauce

You will use most of the same ingredients for the sauce as you did the meatballs.

  • Plain, nonfat Greek yogurt
  • Dill weed
  • Dill pickle juice
  • Lemon juice
  • Garlic powder
  • Salt

I make this tzatziki sauce for my greek chicken meatballs recipe with plain, nonfat Greek yogurt. Yogurt is the ultimate healthier substitute for sour cream or mayo. I absolutely love making sauces and dips with it because you cannot even taste the yogurt. However, if you do not want to use that, you can substitute mayo or sour cream.

Again, we will be using some dill pickle juice from a bottle of pickles. I prefer a more pickle flavor than a traditional cucumber, even though they are very similar. You can chop up some pickles or cucumber and place it into the sauce as well; however, I do not like a chunky sauce.

But, if you are adventurous, add some jalapeรฑo juice to spice it up!

I use garlic powder; however, you can use fresh garlic if you prefer that. I also use lemon juice from a container; but, you can use fresh lemon juice.

Low Cal, Low Fat Tzatziki Sauce

How to Make a Low Cal, Low Fat, Tzatziki Sauce

Start with the sauce as that needs to set in the fridge.

Combine all the ingredients for the sauce in a small bowl, stirring together. Store in the fridge while the meatballs cook to allow the flavors to form together.

How to Make Mediterranean Greek Chicken Meatballs

Preheat the oven to 375 degrees. Grease a baking tray with cooking spray.

Mix all the ingredients for the meatballs in a large bowl.

Scoop out 20 equal sized meatballs onto the baking tray. It is about 1 heaping tablespoon each. However, you can make the meatballs bigger. But, I just prefer little ones.

Bake for 14-16 minutes, flipping halfway through. Be sure the chicken is fully cooked.

But, there are also a couple different ways to make some greek chicken meatballs with tzatziki sauce.

Air Fryer Version

Preheat the air fryer to 400 degrees, greasing the rack with cooking spray.

Mix all the ingredients for the meatballs in a large bowl.

Scoop out 20 equal sized meatballs onto the air fryer tray. It is about 1 heaping tablespoon each.

Air fry for 12-14 minutes, spraying with cooking spray and flipping halfway through. However, be sure the chicken is fully cooked before taking the meatballs out of the air fryer.

Stovetop Version for Greek Chicken Meatballs

Preheat the oven to 375 degrees. Grease a baking tray with cooking spray.

Mix all the ingredients for the meatballs in a large bowl. Scoop 20 equal sized pieces onto a clean plate.

Heat a large pan over medium high heat. Drizzle some oil onto the pan.

Once heated, add the meatballs and sear about 2 minutes per side.

Transfer the meatballs to the baking tray and finish cooking in the oven. It will take about 10 minutes and you will want to flip them halfway through; however, be sure the chicken is fully cooked.

Instructions

Asian Stuffed Peppers

The best Asian / Chinese style stuffed peppers made with sriracha and teriyaki sauce. They are sweet, yet spicy and absolutely delicious!

I used my fan (and personal) favorite meat, my sweet asian taco meat, to make the best and most delicious asian / Chinese style stuffed peppers, plus a little teriyaki sauce.

I absolutely love stuffed peppers. They are the perfect meal prep or easy weeknight dinner. Plus, there are tons of flavor combinations to try. You can chose from my famous pizza stuffed peppers. Try out my Mexican stuffed peppers or enchilada stuffed peppers. Keep it more Italian with my lasagna stuffed peppers recipe or Italian stuffed peppers. But, I have not made Chinese style stuffed peppers yet and it was time to change that!

Quick Tips from Allie Carte

  • These stuffed peppers are great with ground beef instead of chicken
  • I use rice and riced cauliflower; however, you can use one or the other
  • Use the ground chicken for taco meat. It is amazing!

What You Need for Asian Stuffed Peppers

I cook the meat on the stove while the peppers cook in the oven. You can also try cooking the peppers in the air fryer or instant pot; however, I just like to pop them in the oven.

Now, for the actual ingredients.

  • Bell peppers
  • Sesame oil
  • Green onions
  • Minced garlic
  • Ground chicken breast
  • Seasonings
  • Splenda
  • Sriracha Sauce
  • Soy Sauce
  • Teriyaki Sauce
  • Chicken broth
  • Cooked rice
  • Cooked riced cauliflower

This is one of my favorite dishes to make as I usually have all of these items on hand and this meat tastes so good!

However, we can go over some suggestions and substitutions.

Asian Stuffed Peppers
Bell Peppers

I typically use this meat for tacos or rice bowls. I decided to turn this into stuffed peppers and use some green bell peppers. However, you can use any color of bell pepper or substitute your pepper with a jalapeรฑo pepper or mini sweet pepper. 

Sesame Oil

I love the flavor of sesame oil in dishes. Make sure you grab sesame oil that is used for cooking not for finishing. The sesame oil will be used to sautรฉ the onions and garlic.

Green Onions

The green onions are sautรฉed first, to provide a base flavor for the asian stuffed peppers. I have made this with different types of onion, such as a white onion; however, I really prefer green onions. If you do not like onion, you can skip it.

Minced Garlic

I love mincing my own fresh garlic with this mini food processor. However, you can use pre-minced garlic. 

Ground Chicken Breast

I make these Italian stuffed peppers with ground chicken breast. I love how lean and protein packed ground chicken breast is. However, you can substitute regular ground chicken or a different type of meat.

This meat is amazing with lean ground beef as well!

Splenda

These Asian stuffed peppers are sweet and spicy; therefore, you need some sugar. I choose to use Splenda as my sugar as it dissolves very well and I do not like adding real sugar. However, you can use another sugar replacement. In addition, I have done this with real sugar and it works fine. I just prefer a sugar replacement.

You can add as much sugar / Splenda as you like to get to your desired taste.

Sriracha Sauce

Try as much as you can handle! I am a baby when it comes to spice and I do not put in that much. However, if you can handle more, definitely put some more in.

Soy / Teriyaki Sauce

The sauces are what make it a more these more asian style stuffed peppers. I try to use a gluten free and low sodium soy and teriyaki sauce. However, you can use whatever of your choosing. If you do not have both, or do not want to use both, just use one.

Chicken Broth

Again, I try to use a low sodium chicken broth. However, you can use any type or flavor that you have. I use broth as adding the rices can make the dish a little dry.

Chinese stuffed peppers
Cooked Rice

I am not going to go over how to cook the rice in this recipe, we have enough to do. However, you will need to have cooked rice. You can try my Instant Pot rice, stovetop rice recipe or just use a rice cooker.

You can certainly skip the rice. Whether you are low carb, or just do not want it, the rice is not necessary in this recipe.

Cooked Riced Cauliflower

Again, I am not going to go over how to cook the riced cauliflower. In fact, I just pop one of those frozen packages in the microwave and go from there. I promise, you really do not taste the cauliflower, it just adds extra veggies. However, you can also skip this.

Seasonings

This is what I use for the seasonings; however, adjust to your liking.

  • garlic powder
  • salt
  • black pepper
  • paprika
  • gingerย ground

It is a bit basic as the Splenda, sriracha and soy/teriyaki sauce really give these Chinese stuffed peppers a lot of flavor. If you like things spicy, you can also add some ground red pepper. However, you adjust everything to your liking.

How to Make Asian Stuffed Peppers

Start with the peppers as those take longer.

Preheat the oven to 400 degrees and grease a baking tray with cooking spray.

Cut each pepper in half and remove the seeds/core. Place them on the baking sheet, cut side up, and bake for 20-30 minutes, or until desired wellness is reached.

Chicken for Asian Stuffed Peppers

Slice the green onion and mince the garlic.

Heat a large pan over medium/high heat and drizzle with the sesame oil. Once heated, add the onion and garlic and sautรฉ for 2-3 minutes.

Then, add the ground chicken. Begin to break up the chicken while seasoning. Continue to break up and mix in the seasonings while cooking.

Once fully cooked, sprinkle on the Splenda and the sriracha, mixing to combine.

Pour in the soy sauce, teriyaki sauce and chicken broth. Bring to a slight simmer while mixing the sauces in.

Add the rice and riced cauliflower, tossing to coat.

Once the peppers are done, stuff each pepper with the chicken mixture.

Air Fryer Burgers

Whether they are frozen burgers or ready for cooking, did you know you can cook a burger in the air fryer!?

I love making burgers in the air fryer because they come out a bit crispy on the outside; however, juicy on the insides. Plus, I do not have to deal with turning on and cleaning the grill. I just pop the air fryer basket in the dishwasher for an easy clean up.

The best part is that you can air fry frozen burgers without having to thaw them! It really does not take any longer either.

 Whether they are frozen burgers or ready for cooking, did you know you can cook a burger in the air fryer!?

Why do I like making burgers in the air fryer, frozen or not?

  • No need to wait for the burgers to thaw
  • I do not have to deal with turning on the grill or cleaning it... especially in this Florida heat!
  • Cast iron pans are more difficult to clean and can leave the room or whole house very smokey
  • This is the easiest clean up as you can just pop the air fryer basket in the dishwasher

What You Need for Air Fryer Burgers

Well, an air fryer and burgers of course! I love my Ninja double basket; however, you can use any basket style air fryer.

For the burgers, a higher fat content works better. I suggest 80/20 work best; however, this recipe will work with any type of beef.

You can try this from just ground beef and form your own patties. However, you can also try this from pre-made patties, either frozen or fresh from the meat section at the store.

But, be sure to season your burgers. or get some pre-seasoned ones. I prefer to use some seasoned salt, garlic powder and onion powder.

If you want to make this a leaner recipe, substitute ground turkey breast!

How to Make Air Fryer Burgers

I am going to give you the directions for cooking the patties from just a pound of ground beef.

Mix the seasonings into the ground meat.

Divide the ground beef into four equal pieces. Form into four patties about a ยฝ inch or so thick.

Preheat the air fryer to 390 degrees and grease the basket with cooking spray.

Set the patties onto the bottom of the air fryer in a single layer.

Air fry for 8-12 minutes, until desired wellness is reached. Be sure to flip every 3-4 minutes to drain the oil sitting on top.

If using the air fryer from a frozen patty, add an extra 30 to 60 seconds.

If using turkey, to keep it lean, add an extra 2-3 minutes, until fully cooked.

Toppings for Air Fryer Burgers

Of course, you have a wide selection of choices from cheeses, tomato, lettuce, onion and anything in between. I have a couple recipes for amazing toppings for burgers as well!

Seasonings for Air Fryer Burgers

If you wanted to use turkey (or chicken) to keep it leaner, you have to try out my Worcestershire onion burger seasonings mix to make the burger taste absolutely delicious!

Instant Pot Frozen Burgers

Ingredients
 

  • 1 pound ground beef I suggest 80/20; however, you can choose what you like or substitute a turkey/chicken
  • 1 teaspoon seasoned salt
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder

Instructions

  • Mix the seasonings into the ground meat.ย 
  • Divide the ground beef into four equal pieces. Form into four patties about a ยฝ inch or so thick.ย 
  • Preheat the air fryer to 390 degrees and grease the basket with cooking spray.ย 
  • Set the patties onto the bottom of the air fryer in a single layer.ย 
  • Air fry for 8-12 minutes, until desired wellness is reached. Be sure to flip every 3-4 minutes to drain the oil sitting on top.ย 
  • If using the air fryer from a frozen patty, add an extra 30 to 60 seconds.

Marry Me Chicken Instant Pot

Try out my take on the classic marry me chicken recipe but made in the instant pot with some pasta!

How you heard of Marry Me Chicken? Legend has it, if you make this for your boyfriend, he will fall in love with you and ask you to marry you. Marry me chicken is that amazing of a recipe.

But, basically, it is a creamy sauce, flavored with some sun-dried tomatoes and served over chicken. I put my little spin on it and make this marry me chicken in the instant pot with some pasta.

I absolutely love instant pot recipes. They are so easy and clean up in minimal. If you like them too, some of my most popular ones are my penne alla vodka, chicken Alfredo, or Birria tacos.

What You Need for this Marry Me Chicken Recipe

First things first is an instant pot of course. I use the original instant pot brand and I love using the non-stick bowl insert easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

Now for the ingredients:

  • Olive oil
  • Chicken cutlets
  • Seasonings
  • Butter
  • Garlic
  • Broth
  • Pasta
  • Milk
  • Laughing cow cheese
  • Parmesan cheese
  • Sun-dried tomatoes

I know it seems like a lot of ingredients but I promise it is not overwhelming and very easy to make. But, we can also go over some suggestions and substitutions.

Olive Oil

This will be for searing the chicken in the instant pot on the sautรฉ mode before we begin anything else. You do not have to use olive oil; however, can substitute a different oil or something to make sure the chicken does not stick to the pot.

Chicken Cutlets

Next, after the oil heats up, we will add in the chicken cutlets. You preferably need a thin chicken piece; therefore, I like to use chicken cutlets. If you do choose a chicken breast, you will need to slice it thinner as this chicken needs to cook quickly.

Butter

After the chicken has seared, we will start with a fresh pot. This time, we will use butter to sautรฉ the ingredients. However, I do use I Can't Believe It's Not Butter Light, which is not butter. This is a margarine but I do prefer using that. You can use any butter or butter substitute that you prefer.

Garlic

I love mincing my own fresh garlic with this mini food processor. However, you can use pre-minced garlic. I also love putting some finely diced onion into this mixture as well. It provides an elevated flavor; however, I know not everyone loves onion.

Broth

Then, we will begin on the sauce while also cooking the pasta. The chicken broth thins out the sauce a little while providing a delicious flavoring. 

Typically, I have chicken broth on hand. It just has a very nice neutral, yet slightly meaty, taste to it. I usually make this dish with chicken broth; however, you can use another type of broth.

Additionally, you can do a water and broth concentrate mixture. Any one of these options will work well. Just be mindful that I use low sodium broth and if you are using regular broth, you will have to adjust the salt content.

Pasta

I typically prefer a penne pasta with this; however, you can also do a fettuccine type of Alfredo as well. Really any type of pasta works great.

Milk

This milk and the broth will help cook the pasta in this marry me chicken.

Now, this is where things get a little crazy, HAHA! Almond milk is a staple in my Weight Watchers journey. It is the lowest point milk and I use it in tons of recipes and as a creamer. 

I believe it has more of a neutral taste and you cannot taste the almond. However, you can substitute a different type of milk, or a heavy cream / half and half.

Laughing Cow Cheese

My favorite thing to add into this is laughing cow cheese wedges! Which is similar to a Bourison cheese I would say. I plop two garlic and herb laughing cow cheese wedges in here and it makes the dish so creamy and flavorful.

However, you can also substitute some cream cheese or reduced fat cream cheese to thicken up the sauce.

Parmesan Cheese

Yes, I use the fake stuff from the jar that you buy in the grocery aisle. I also use reduced fat! However, pick whatever you like or just skip it.

Sun-Dried Tomatoes

This is what really makes the dish pop! The sun-dried tomatoes provide so much flavor and really make this chicken a marry me chicken. My preference is the Alessi Julienne Cut as I do not like them chunky or big.

How to Make Marry Me Chicken in the Instant Pot

First things first is to grab an instant pot of course. I use the original instant pot brand and I love using the non-stick bowl insert easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

An Instant Pot recipe goes very quick so you need to make sure you have everything measured and ready to go.

Chicken

Combine all of the seasonings in a small bowl and sprinkle evenly over both sides of each chicken cutlet.

Drizzle the olive oil into the bottom of the instant pot. Set the Instant Pot to the sautรฉ method. Add the oil and allow it to heat up. 

Once heated, add the chicken cutlets and cook for about a minute or two per side. You may need to do this in batches.

Remove the chicken onto a clean plate once completed and turn off the instant pot. Let it set for a few minutes to slightly cool down. Otherwise, the pasta will burn.

Pasta / Sauce

Add the butter to the bottom on the pot and place the minced garlic cloves inside. Sautรฉ for about 30 seconds then turn the instant pot off.

Pour in the chicken broth and scrape up the bottom to deglaze it.

Add in the pasta, milk, cheeses, and sun-dried tomatoes and stir together. Try to press the pasta down to completely cover in the liquids.

Add the chicken on top.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 5 minutes and start it.

Once the instant pot is done cooking, let stand for 3 minutes then de-pressurize. Stir everything together to make sure it is all combined.

You can either chop up the chicken and mix everything together or serve on top of the pasta.

Stovetop Cooking Method

If you do not have an instant pot, you can easily make this on the stove.

Begin by cooking the pasta according to the package instructions. Drain well then set aside.

Then, season the chicken cutlets. Heat a large pan over medium high heat. Drizzle with the oil and allow that to heat up.

Add the chicken cutlets to the heated pan and let them sear until fully cooked, a couple minutes per side. Set them aside on a clean plate.

Reduce the heat on the pan. Add in the butter and garlic and sautรฉ the garlic as the butter melts. Scrape up the browned bits at the bottom while you do this.

Pour in the chicken broth and continue to scrape up the bottom of the pan. Add in the milk, cheeses and sun-dried tomatoes and stir that together while bringing the sauce to a slight simmer.

Simmer for a few minutes until the sauce is thickened. Add in the pasta, stirring together. Then, top with the chicken.

Italian Stuffed Peppers

This recipe is for Italian stuffed red peppers with ground chicken, spaghetti and cream cheese, mixed with my delicious tomato sauce.

I think that stuffed peppers are the ultimate meal. They combine a vegetable, protein and carb, all in one cute little package. Typically, you would find them stuffed with rice; however, I decided to spice things up and make an Italian stuffed pepper with my homemade bolognese sauce and spaghetti.

This recipe is for Italian stuffed red peppers with ground chicken, spaghetti and cream cheese, mixed with my delicious tomato sauce.

I absolutely love stuffed peppers. They are the perfect meal prep or easy weeknight dinner. Plus, there are tons of flavor combinations to try. You can chose from my famous pizza stuffed peppers. Try out my Mexican stuffed peppers or enchilada stuffed peppers. Keep it more Italian with my lasagna stuffed peppers recipe. But, these cream cheese and ground chicken stuffed red peppers are amazing!

Stuffed peppers make a great meal prep because they do not get soggy or go bad. They stay great and heat up very well in your break room's microwave.

Overview of these Italian Stuffed Red Peppers

I am going to go over how I make these stuffed peppers; however, there are also tons of substitutions and suggestions.

I begin with basically a creamy bolognese sauce. You will make this with ground chicken, cream cheese and my homemade tomato sauce. Start by cooking the chicken on the stove, then, adding the tomato sauce and cream cheese to make it super delicious and flavorful.

Then, add the cooked spaghetti pasta and mix that all together with the creamy bolognese sauce. After that, stuff it into some cooked bell peppers. You can also top it with some mozzarella cheese and broil it; however, you do not have to.

Quick Tips From Allie Carte

  • Use any ground meat of your choosing!
  • Skip the spaghetti or use spaghetti squash to keep it lower carb
  • Substitute rice or riced cauliflower for the spaghetti
  • If you prefer just a bolognese recipe, you do not have to stuff the peppers
  • Add some shredded mozzarella on top and broil it
  • Skip the cream cheese if you do not want it creamy

What You Need for Italian Stuffed Peppers

Bell Peppers

I used some red bell peppers for these Italian stuffed peppers. However, you can use any color of bell pepper or substitute your pepper with a jalapeรฑo pepper or mini sweet pepper. Also, I suggest trying some spaghetti squash, eggplant, zucchini or another vegetable that you love.

Spaghetti

I chose Banza protein spaghetti to use in this recipe. It provides some extra protein while giving you some of your carbs. There are various different protein pastas that you can use; however, you can also use a regular spaghetti. You can skip the spaghetti to keep it low carb; but, you can also substitute a veggie noodle such as spaghetti squash or spiraled zucchini.

Ground Chicken

I make these Italian stuffed peppers with ground chicken breast. I love how lean and protein packed ground chicken breast is. However, you can substitute regular ground chicken or a different type of meat.

Crushed Tomatoes

You can certainly use fresh tomatoes; however, I do not have time for that and I am sure you do not either. I use a can of crushed tomatoes as they are ready to go in my sauce. My favorite brand is Muir Glen no salt added. However, you can use any brand you would like.

If you are using diced tomatoes or actual real tomatoes, you will need to blend them if you want a smoother sauce.

Cream Cheese

I typically will do a โ…“ less fat cream cheese in these Italian stuffed peppers. However, you can use regular cream cheese.

But, my favorite thing to add into this is laughing cow cheese wedges! Which is similar to a Bourison cheese I would say. I plop two garlic and herb laughing cow cheese wedges in here and it makes the bolognese so creamy and flavorful.

Parmesan Cheese

Seasonings

Some people say this seems like a lot of seasonings but who doesn't want a well seasoned dish? I use your classic Italian seasonings, plus, some secret weapons.

  • oregano
  • Italian seasonings
  • garlic powder
  • onion powder
  • salt
  • black pepper

You are more than welcome to switch up the seasonings or add some in, such as ground red pepper to make it spicy.

Plus, my secret weapon!
  • granular sugar replacement

Yes, sugar is definitely needed in this and I use a sugar replacement. I prefer something like Splenda or Swerve; however, you can use whatever you like. The sugar cuts the acidity of the tomatoes and you definitely need it.

You can add some lemon juice if you wish. Lemon juice brings out the flavor of the tomato sauce, just like salt does; however, lemon juice does not have the acidity of salt.

Italian stuffed peppers

How to Make an Italian Stuffed Peppers Recipe

There are basically three phases to this dish: the peppers, the spaghetti and the bolognese. I start with the peppers, as they take the longest. Then I move onto the pasta and finally the sauce.

Bell Peppers

Start by preheating your oven to 400 degrees. Grease a baking tray with cooking spray.

Cut each pepper in half and remove the seeds/core. Place them on the baking sheet, cut side up, and bake for 20-30 minutes, or until desired wellness is reached.

Spaghetti

Cook spaghetti according to package instructions. Drain well and set aside.

Bolognese Sauce

Heat a large pan over medium/high heat. Grease with cooking spray.

Once heated, add the minced garlic and diced onion. Cook until soft and fragrant, about 3-4 minutes.

Add the ground chicken and begin breaking it up. Add the seasonings and continue to break up while cooking and mixing up the chicken.

Once the chicken is fully cooked, add the crushed tomatoes and reduce the heat to low. Let the tomatoes simmer for a few minutes.

Then, add the cream cheese and parmesan cheese and mix that together until melted.

Add the cooked spaghetti noodles into the sauce and toss together.

Stuff the peppers with the spaghetti bolognese and enjoy!

Copycat recipe for the Panda Express sweetfire chicken breast made with some sweet chili sauce to give it that fire taste!

If you know me, you know my top two food categories are takeout dishes and copycat dishes. Therefore, I put the two together and made some Panda Express sweet fire chicken! I already did their honey sesame chicken as well so check that out!

The recipe can be easily doubled, tripled, quadrupled, etc. It also makes great lunch leftovers! And donโ€™t worry, I always build in extra sauce in my recipes to pour over your rice!

I started my blog withย takeout dishesย andย copycat recipes!ย You may know me from myย air fryer sweet and sour chicken,ย orange chicken, orย general tso chicken. If you are aย Chick-fil-Aย lover, you probably know me from myย copycat nuggetsย andย sauce. These are some of my most popular recipes and my favorites! I had to combine my two favorite loves and make a copycat recipe for the Panda Express sweetfire chicken breast.

What You Need for the Chicken

You will obviously need an air fryer. I love my Ninja double basket. The one side is the perfect size to cook one serving of shrimp. You can also use a rack or toaster oven style air fryer; however, I do prefer the basket kind for this one.

For the ingredients, it kind of seems like a lot of things, but it really is quite simple to make.

  • Chicken tenderloins
  • Corn starch
  • Flour
  • Breadcrumbs
  • Egg whites
  • Seasonings

However, we can go over some suggestions and substitutions:

Chicken tenderloins

I typically use chicken tenderloins when I need nugget sized chicken, but you can use other cuts of chicken. Chicken tenderloins are already thin, so minimal cutting is required, which is why I like them. However, chicken breasts or chicken thighs can work well too. But, you can use beef, pork or even tofu if you are vegetarian. Any kind of protein will work great in this recipe. Remember to cut the chicken, or your preferable substitution, in the same size, so they are all cooked simultaneously.

Breading

First, the breading for the Panda Express sweet fire chicken.

There will be three stages to breading; therefore, I like having three small shallow bowls or Tupperware. The first step of the breading process is covering the chicken pieces in a flour/corn starch/seasonings mix. You can skip the corn starch; however, I do like using it.

The next step in breading these air fryer nuggets is dredging the chicken in egg whites. I do prefer egg whites as they are not as goopy as real eggs. They are also easier to work with as you just have to pour them into the container. However, you can substitute real eggs if you whisk them first.

The final process to breading the chicken is to cover it in the actual breading. This will be a flour, breadcrumb and seasonings mix. This is nonnegotiable and I have perfected this breading to my liking.

Seasonings

For the seasonings, I keep it somewhat simple with a little bit of Asian flare to it. I use garlic powder, onion powder, seasoned salt, paprika (for some color) and ground ginger. Plus, I add a little bit of cinnamon to some sweetness in.

Vegetables

For the vegetables, we are going with the classic Panda Express Sweetfire chicken version. We will use white onion, bell pepper and some pineapple... which I guess is a fruit. Plus, some minced garlic! However, you can substitute or switch out any ingredients.

Sauce

The sauce is the easiest part of this recipe. It is just bottled sweet Thai chili sauce for this Panda Express recipe. I prefer the G Hughes's brand; however, you can use any brand that you love.

Rice

This recipe does not include rice; however, you can use my stovetop rice recipe or my instant pot rice recipe. You can also make some with a rice cooker.

How to Make Panda Express Sweet Fire Chicken

Let's learn how to make some Panda Express Sweetfire chicken breast.

Chicken

Slice chicken tenderloins into bite-sized pieces, about one inch by one inch.

Grab three small shallow bowls; however, I do like to use shallow Tupperware containers.

In one, add half the flour, half the seasonings and the corn starch. Pour the eggs into the second bowl. Finally, in the third, add the rest of the flour, the seasonings and the breadcrumbs. Make sure to combine all of the ingredients thoroughly.

Preheat the air fryer to 400 degrees and grease the rack with cooking spray.

One by one, cover the chicken piece in the corn starch/flour. Then, dredge chicken piece in the egg white, being sure to shake off any excess. Finally, cover the chicken in the flour/breadcrumb mixture.

Place each battered chicken piece on the greased air fryer, trying not to let them touch.

Air fry for 3 minutes. Spray the chicken with cooking spray and then air fry for another 2 minutes.

Flip the chicken over and spray any raw flour with cooking spray. Air fry for another 3-4 minutes, or until fully cooked and crispy.

Vegetables

Slice up the bell pepper, onion and pineapple into small pieces. Heat a small pan over medium heat. Add the oils and allow them to heat up.

Add the bell pepper and cook for 3 minutes. Place the pineapple into the pan and cook for another minute. Add the minced garlic and sautรฉ for another 30 seconds. Finally, add the onion and cook until everything is soft, about another 3-4 minutes.

Sauce

Turn off the heat and pour in the sauce. Toss the vegetables in the Panda Express sweet chili sauce for about 30 seconds to allow it to heat up and combine into the vegetables. Remove from the stove.

Add in the cooked chicken pieces and toss everything to coat.

Air Fryer Nuggets

This is the best recipe for making chicken nuggets in the air fryer! They are easy to make and come out so crispy. 

I realized I have never really posted one of my core recipes. AIR FRYER NUGGETS! They are the base for so many of the recipes I make but they are always amazing on their own. You can use any type of sauce, which I have tons. There is nothing better than being a grown adult and eating some chicken nuggets for dinner! Especially when they are this healthy!! You can also use this recipe for tenders.

This is the best recipe for making chicken nuggets in the air fryer!

These chicken nuggets in the air fryer are the base for tons of different recipes of mine:

  • Panda Express Honey Sesame Chicken

  • Sticky Chicken Nuggets

You can also dip your air fryer nuggets into any of the delicious sauces I have made:

You can also use various store bought sauces as well. G Hughes is one of my favorite brands. They have tons of zero to low point sauces such as BBQ, Polynesian, honey mustard, ketchup or sweet thai chili.

This is one of the easiest dinners to make and is a fan favorite for everyone in the family. All you do is mix a few ingredients together, scoop some balls into your air fryer and bake them.

These air fryer chicken nuggets are made with ground chicken. This allows the flavors to incorporate in the entire chicken nugget. Which is different than your classic air fried chicken nugget made with chicken breast pieces. But, both are very good.

You can make low carb, keto friendly chicken nuggets with just some cheese, ground chicken and egg!

The best part about making chicken nuggets with ground meat is that the flavors can incorporate into the entire nugget. You can add as much flavor as you want and you will taste it in every little bite.

Plus, you do not have to worry about breading these. The crust can get a little crispy and delicious on its own. This also makes for a low carb, keto friendly chicken nuggets.

Quick Tips from Allie Carte

  • You can add some keto friendly breadcrumbs to this if you want to!
  • If you are not keto, you can add a tablespoon of breadcrumbs into the mixture. However, it is not necessarily needed.
  • Add some buffalo sauce into the mixture, if you like things spicy!

These keto chicken nuggets are low carb and high protein. This is why I love using ground chicken breast. I specifically use chicken breast as it is lower in fat. However, you can use just ground chicken.

You can try this with a different ground meat; however, that would not be a chicken nugget, ya know?

Liquid Egg Whites

I prefer liquid egg whites to real eggs as they are easier to work with and not as goopy. However, if you want to use a real egg, each pound of meat calls for one egg.

Shredded Cheese

For the cheese, I use nonfat cheese. I am keeping these keto chicken nuggets very low carb and low fat. However, you can use a different type of cheese.

In addition, I like to mix both cheddar cheese and mozzarella cheese; however, you can use just one or another substitute.

Seasonings

For the seasonings, we keep it very simple and delicious.

  • Ranch powder
  • Garlic powder
  • Onion powder
  • Seasoned salt

However, you can certainly change up these seasonings depending on what you like.

Breadcrumbs

You can add in a tablespoon of breadcrumbs, if you are not on keto. However, there are also keto friendly breadcrumbs that you can buy. But, you can certainly skip the breadcrumbs all together.

In a bowl, combine all of the ingredients, except the egg and cheese, making sure to mix thoroughly well.

Add the egg and cheese and mix together again very well.

Form the mixture into 18 equal sized patties, about โ…› cup each. Use your hand to make them into circles or different shapes.

Air fry for 16-18 minutes, flipping halfway through. But, be sure they are fully cooked.

They may be done earlier; however, I like to keep them in their longer to get them extra crispy. They will still remain moist on the inside.

What to Pair With Keto Chicken Nuggets

I do not have many Keto recipes on here, as I am not keto. However, I do have tons of recipes that would taste great with chicken nuggets!

  • mini air fryer bloomin onions
  • boiled radishes (taste like potatoes)
  • loaded broccoli and cauliflower
  • maple bacon brussels sprouts
  • parmesan truffle fries

But, you can always pair with a delicious side salad as well!

Did you know that you can make a homemade hamburger helper in the instant pot, it is basically a cheesy hamburger mac and cheese!

You know it, and boy do you LOVE IT, itโ€™s my HAMBURGER MAC AND CHEESE!! This is basically just a homemade hamburger helper, and, this time, it is made in the instant pot!!

Did you know that you can make a homemade hamburger helper in the instant pot, it is basically a cheesy hamburger mac and cheese!

It is basically, you know, a Mac and cheese burger recipe. Itโ€™s packed with protein, rich, creamy and insanely delicious. Bowls, forks and pots are licked CLEAN when this is made! Worth EVERY point. (Oh, and try stopping at just one serving!)

It is not your typical chicken and Mac and cheese. Obviously, that is why it is called hamburger Mac and cheese. It combines all the flavors you love about a hamburger, like ketchup, with a creamy Mac and cheese sauce. Could you think of a better combo.

If I could pick the first dish of mine for anyone to make, it would be this one. I have tons of favorite recipes of mine, sweet and sour chicken, sweet asian taco meat or a bloomin onion (click the links for those recipes), but homemade hamburger helper, is the ultimate recipe.

It is everything you love about not being "on a diet" while also being "on a diet", except WW is far from a diet.

Substitutions in This Instant Pot Hamburger Helper Recipe

I make this dish with ground chicken. That is my preference, I love chicken and Mac and cheese together. I have tried it out with ground beef, and while it is amazing, I much prefer the chicken with this recipe. But with that being said, I do lean more towards liking chicken, while the beef version is amazing, I am a chicken gal.

If you do not have an instant pot, you can make a homemade hamburger helper on the stovetop! Just follow my hamburger Mac and cheese recipe.

I also have a pretty similar recipe called pizza Mac and cheese. Similar to this one but has some more pepperoni pizza flavors in it. In addition, I have a bacon burger Mac and cheese, this one is made with beef and has bacon in it. Highly recommend that one as well. You can also try some similar Mac and cheese burger recipes such as my Big Mac and cheese, taco Mac and cheese or just my normal Mac and cheese recipe.

Here Is What You Need for a Homemade Hamburger Helper in the Instant Pot

First things first is an instant pot of course. I use the original instant pot brand and I love using the non-stick bowl insert easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

Now for the ingredients:

For this cheesy hamburger helper recipe, here is what you will need. Okay, it kinda seems like there are a lot of ingredients for this dish but I promise it is not that bad and totally worth it. I like to create most of my recipes with things I (and you) would typically have in your pantry. While I obviously need to pick up some fresh chicken, you get the point.

Reduced fat cream cheese and chicken broth are staples in my pantry! Definitely stock up on those.

  • Minced garlic
  • Onion
  • Ground chicken breast
  • Pasta
  • Tomato sauce
  • Sugar-free ketchup
  • โ…“ less fat cream cheese
  • Shredded cheddar cheese
  • Seasonings

Ingredient Suggestions and Substitutions

Pasta

For the pasta, I use elbow shaped noodles. You can use any shape but I like the elbow, it gives a classic Mac and cheese look. There are many times when I randomly crave this homemade hamburger helper style mean and grab any pasta I have in the cabinet. The elbows look better, and more like Mac and cheese, but it really does not matter.

This recipe; however, does use elbow shaped pasta. It does cook quicker; therefore, I use one less minute than I normally would with another pasta. If you are using a larger pasta, add an extra minute to the timer.

Ground Chicken

I use ground chicken breast because it is essentially fat free. That is my preference, I love chicken and Mac and cheese together. This is a healthy hamburger helper recipe after all. However, you are more than welcome to use a different percentage of chicken.

Tomato Sauce

99.9999% of the time I will make my homemade tomato sauce. But you can substitute with a bottled sauce or just crushed tomatoes if you do not want to make a whole homemade sauce.

Ketchup

My favorite sugar free ketchup is G Hughes, but I ran out and so did Publix. So I grabbed some sugar free Heinz. It is higher in calories, if you are counting that, but is zero-points as well, if you go that direction. I recommend stocking up on some G Hughes from amazon. You can order that here!

Cheese

A cheesy hamburger helper is going to need some cheese! I use reduced fat cheese for both the shredded cheese and the cream cheese. However, you are more than welcome to pick your own cheeses.

Here is What to Do to Make a Cheesy Hamburger Helper

Before you begin cooking, and this goes for any Instant Pot recipe, make sure you have all of your ingredients ready. Make sure to dice the onion and set that aside as well.

Drizzle oil on the bottom on the Instant Pot and set to the sautรฉ setting. Once the oil is heated, add the diced onion and minced garlic. Stir while cooking, until slightly soft, about 1-2 minutes.

Add the ground chicken and start to break it up. Sprinkle on the seasonings and continue to break up while cooking. Cook the chicken until it is halfway cooked, it will continue to cook once pressure cooked.

Turn the Instant Pot off.

Add the pasta noodles, water, broth, tomato sauce and ketchup. Stir to combine and try to cover the pasta noodles in the water as much as possible.

Top with the cream cheese.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 4 minutes and start it. 

Once completely cooked, vent and de-pressurize the instant pot then open the lid.  

Add the shredded cheese and mix everything together while melting the cheeses.

I always top my dishes with fresh parsley!

The assistant absolutely goes crazy over this healthy hamburger helper too. She was having a full on panic attack while I was shooting pictures. She doesn't get like this always, it has to be a really good cheesy dish, such as this homemade hamburger helper. Look how funny she is!

But don't worry, I paid her by letting her clean up a few of the shredded cheese strands that were left behind. Her favorite part is the clean up! Now, if only she could do dishes too.

Serving Size

This dish makes four serving at one heaping cup per serving. I measured out a heaping cup and left the other portions for my husband's dinner and lunches.

It is a lot of food and keeps me really full. I just decided to use the biggest bowl on the planet!!

Stovetop Version

If you do not have an instant pot, you can make this on the stovetop by following my hamburger Mac and cheese recipe.

Cook pasta according to the package directions, drain well and set aside.

Heat a large pan on the stove over medium/high heat. Spray with cooking spray. Add minced garlic and cook for one minute. Add diced onion and cook until soft and translucent, about 3-4 minutes.

Make sure to use a wooden spatula when sautรฉing in an Instant Pot.

Place ground chicken into the pan, breaking it apart while cooking. Once slightly broken up, season with the seasonings. Cook almost through, until almost all the pink is gone.

Pour in tomato sauce, broth, ketchup and stir to combine. Allow chicken to cook completely. Stir in cream cheese and stir in until melted. Add in cheddar cheese and stir until melted. Add in the pasta and stir to combine in the sauce.

Okay, Okay, enough talking, let's get to this recipe.

Panda Express Teriyaki Chicken

Copycat recipe for the panda express teriyaki chicken sauce. Make this with chicken thighs, chicken breasts, or my favorite, chicken tenderloins. Plus, cook them on the grill, in the oven, or on the stovetop! A super versatile and delicious dish.

If you know me, you know my top two food categories are takeout dishes and copycat dishes. Therefore, I put the two together and made some Panda Express teriyaki chicken! This comes after my Panda Express honey sesame chicken.

You can make this dish with chicken thighs or chicken breasts and slice them into thin strips, which is more typical of Panda Express. I personally prefer this with chicken tenderloins as they are very tender and become very flavorful in this marinade. However, if you prefer a different cut of chicken, you can certainly use that.

  • You can cook the chicken however you like. Typically, this would be grilled; however, you can also cook these on the stovetop, in an air fryer, or in the oven.

This is typically made grilled; however, you can make this on the stovetop, in an air fryer, or in the oven. Just make sure you have your preferred cooking equipment.

  • Chicken tenderloins
  • Soy sauce
  • Lemon juice
  • Brown sugar
  • Ground ginger
  • Garlic powder

You can make this dish with chicken thighs or chicken breasts and slice them into thin strips, which is more typical of Panda Express. However, I personally prefer this with chicken tenderloins as they are very tender and become very flavorful in this marinade. However, if you prefer a different cut of chicken, you can certainly use that.

soy sauce

I use a gluten free, low sodium soy sauce here. It will not only be used for the sauce; however, also be utilized to coat the chicken in the breading mixture. This will make the chicken super tasty! 

However, you can use a regular soy sauce. But, please me mindful of the sodium content if you are not using a low sodium version.

Brown Sugar

Brown sugar replacement is a staple in my household, it is great on so many dishes. I use theย Swerve brand; however, Splenda has a brown sugar blend, and, alternatively, you can use regular brown sugar.

How to Make Panda Express Teriyaki Chicken

Start by marinating the chicken. Fork up the chicken a little to allow the marinade to penetrate the chicken. Combine all the ingredients, including the chicken, into a baggie or a covered dish and set in the fridge for about 30 minutes. However, if you are low on time, you can just marinate it for a few minutes.

Once ready to cook, heat a large pan over medium high heat.

Add all of the ingredients, including the chicken and marinade, into the pan. Bring the marinade to a simmer and allow it to simmer for four minutes.

Flip the chicken over and continue cooking for another four minutes. Continue simmering until the chicken is fully cooked. At this point, the marinade should be gone as well.

However, you can also grill, air fry or oven bake the chicken.

One of the best weeknight recipes is this bang bang popcorn shrimp in the air fryer. It is made with my healthier bang bang sauce!

One of my absolute favorite dishes from Cheesecake Factory or Bonefish Grill was their bang bang sauce dishes! That sauce is amazing with chicken but it is most commonly paired with shrimp.

I made some deliciously crispy shrimp in the air fryer and then I tossed it in my healthier, greek yogurt bang bang sauce.

You will obviously need an air fryer.ย I love my Ninja double basket. The one side is the perfect size to cook one serving of shrimp. You can also use a rack or toaster oven style air fryer; however, I do prefer the basket kind for this one.

Sauce Ingredients

First, let's go over the ingredients for the sauce. I do like to make the sauce first and allow it to sit in the fridge while I cook the shrimp. This allows all the flavors to mend together.

  • Plain, nonfat Greek yogurt
  • Chili sauce
  • Sriracha sauce
  • Rice vinegar

This is my healthier take on the classic bang bang sauce with a crispy air fryer shrimp. Therefore, make this recipe with plain, nonfat Greek yogurt. Yogurt is the ultimate healthier substitute for sour cream or mayo. I absolutely love making sauces and dips with it because you cannot even taste the yogurt. However, if you do not want to use that, you can substitute mayo or sour cream.

For the chili sauce, I use my favorite sauce in the entire world, G Hughes's sweet Thai chili sauce. I always grab a pack on amazon because I cannot live without it. However, you can substitute a different kind of chili sauce if you prefer that more.

Add as much or as little sriracha sauce as you can handle. It can get pretty spicy so be careful. If you like it sweeter, you can add in a teaspoon or two of Splenda.

Air Fryer Popcorn Shrimp Ingredients

Now for the shrimp!

  • Shrimp
  • Flour
  • Egg
  • Breadcrumbs
  • Seasonings

For the shrimp, I went the easy route and got peeled and deveined shrimp. I did a third pound which was enough for two people. You can use frozen shrimp and just make the sauce with them. You can also just peel and devein the shrimp yourself.

I typically use egg whites since they are easier to pour and not as stringy as real eggs. However, you can use a real egg, just whisk it before coating the shrimp in it.

How to Make Air Fryer Bang Bang Shrimp

Start by combining all the ingredients for the sauce in a small bowl. Cover and store in the fridge for at least 30 minutes, to allow the flavors to form together.

Grab three small, shallow bowls. In one bowl, add the flour and half the seasonings. Pour the eggs in the second bowl. Finally, in the third combine the breadcrumbs and the remaining seasonings.

Preheat the air fryer to 400 degrees and grease the air fryer basket.

One by one, cover the shrimp in the flour. Then, cover in egg. Finally, press all sides of the shrimp into the breadcrumb mixture.

Place all the coated shrimp in the air fryer, trying not to let them touch.

Air fry for 2 minutes then spray the shrimp with cooking spray. Air fry for another 2 minutes.

Flip the shrimp over and spray again with cooking spray. Air fry for another 3-5 minutes, or until the shrimp are fully cooked and look pink.

Either cover the shrimp in the bang bang sauce or place it on the side and dip the shrimp into it. I prefer dipping as it keeps the shrimp crispy.

Instant Pot Frozen Hamburger

Did you know you can cook burgers from frozen hamburger patties in the instant pot?ย You can go from freezer to table with just one minute of prep. These make delicious burgers and require very little effort.

Ever forget to take your dinner out of the freezer? Don't worry, that's why I have my frozen chicken breast and chicken tenderloins in the instant pot recipes. It happens to everyone! Or, sometimes, I am not sure if I will be cooking that night so I don't want to take meat out of the freezer. Then, I end up needing to cook something and only have frozen meat!

My sister in law's birthday is the day after the Fourth of July, so July 5th. We threw her a birthday party this year and it was BOGO hamburger patties at Publix so you know we stocked up for the party and after the party! We tossed the extras in the freezer to use whenever we need them.

I love being able to cook from frozen because there is no pre planning! An Instant Pot frozen hamburger is just that meal. They come out delicious and are simple for me to make while I am finishing up some work. Plus, you can add cheese or any other toppings.

What You Need to make an Instant Pot Frozen Hamburger

First things first is an instant pot of course. I use the original instant pot brand and I love using the non-stick bowl insert easy clean up; however, you do not have to. Alternatively, there are many brands of pressure cookers you can try; however, I have not.

Additionally, you will also need a trivet to set the burgers on while they cook. I use this Instant Pot brand stainless steel trivet.

For the ingredients, all you need is some water, or another liquid, and some frozen burger patties! You can use homemade patties that you froze or store-bought patties. I have used Publix patties that I froze and some Butcher Box patties that came frozen.

If you are going to freeze the patties, be sure to separate the paper from them because that is impossible to get off after it is frozen!

How to Make an Instant Pot Frozen Hamburger

To make an Instant Pot frozen hamburger, it requires 1 minute of prep and then you just sit back, relax, and the burgers will be ready!

Place 1 cup of liquid at the bottom of your instant pot. You need at least 1 cup to not get the burn warning.

Add the trivet and place the frozen burger patties on top. Try to spread them out as much as you can. I typically just do up to 4 at once.

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the pressure cook button to 20 minutes and start it.ย 

Once completely cooked, vent and de-pressurize the instant pot then open the lid.ย ย

Come learn the best way to make a ribeye steak with a blackened seasoning rub. Plus, find out our secret to making the best steak!

Welcome to our first episode of DINNER WITH DREW. If you are new here, Drew is my husband and he loves cooking all things "manly". From him, you will get tons of steak and fish recipes, ways to cook things on the Blackstone and the smoker, plus, tons of other idea. Basically, everything I make him do because I do not want to!

Our first episode of Dinner With Drew is his all-time favorite recipe: blackened ribeye on the Blackstone. So, come learn the best way to make a ribeye steak with a blackened seasoning rub.

Blackstone Grill

Drew recommends a Blackstone, he absolutely loves his. He recommends you either get a 3 or 4 burner version as the 2-burner is a bit too small. We have the 3-burner version and it is perfect for us.

What You Need to make the Best Blackened Ribeye

To make the best steak, you are going to need a couple ingredients, which you may or may not already have.

  • Ribeye
  • Salt and Pepper
  • Truffle Oil
  • Blackened Seasonings
  • Freezer
  • Corn Oil
  • Blackstone Grill

We will be making a ribeye for this recipe; however, Drew's tips and tricks will work for various different cuts of steaks.

Drew says one of the secrets to his 'best steak ever' is truffle oil! It gives it such a great taste without overpowering the entire steak. The brand we use is Truff. However, I do not always want mushroom on mine and regular oil works fine as well.

You can make your own blackened seasonings; however, you can also buy a mix. We just buy the Blackstone version of a blackened seasonings mix.

Trust me on this one, and I will explain later, you are going to need a freezer. It is the key to the best blackened ribeye!

Finally, to cook the steak, heat up your Blackstone and grab some corn oil. We prefer our Blackstone griddle; however, you can use a cast iron skillet indoors or another type of grill. Corn oil has a smoke point of 450 degrees, and is often used for frying. This is why we typically use that on the Blackstone; however, you can use another high heat oil if you prefer.

How to Make the Best Steak

The first step is grabbing a good cut of steak from a reputable seller. We really love Butcher Box and there are local meat markets here in Orlando that we often shop at for steak.

Score the ribeye against the grain, to know how to cut it after it cooks.

Season all sides of the steak with salt and pepper and press it into the steak. This can be to your liking; however, I typically do about ยผ teaspoon of salt and โ…› teaspoon of black pepper. If you are using a pre-made blackened seasonings mix, be mindful of the salt as it may already have plenty of salt. However, you do want to add a little salt at this step.

Then, pour on a tablespoon of truffle oil and rub that along all sides of the steak. Sprinkle on the blackened seasonings and press that into all sides of the ribeye.

Place the steak on a plate and into the freezer for 30 minutes. This is Drew's secret to the best steak; however, you can skip this is you are running low on time.

When the time is running out, get your grill preheated and greased with some corn oil.

Grill your steak for about 5 minutes per side, if it came from the freezer. However, if you did not freeze the ribeye, cook about 3 minutes per side. You can adjust this depending on how you like your steak cooked.

Let the steak rest for 10 minutes then cut against the grain, where you scored the ribeye earlier.

What To Serve with Blackened Ribeye

Drew says there is nothing else to serve with steak than some potatoes! He calls this his Irish meal and he absolutely loves it!

Try this out with my air fryer baby potatoes, crispy smash potatoes, spicy truffle roasted potatoes or, my favorite, roasted red potatoes.

Did you know you can cook ground beef in your air fryer and then use it for any of your favorite recipes!? Trust me on this one, it is such an easy and simple way to cook ground beef. It comes out crispy and juicy. Plus, all the fat falls to the bottom of the air fryer!

Have you ever grabbed a higher percentage of fat beef than you wanted? I have done it too, don't worry. Higher percentage beefs are typically cheaper and easier to find; therefore, I always end up with some.

All the fat can sometimes ruin your recipes; therefore, I found way to EASILY cook out the fat. The air fryer method is perfect because you don't have to babysit the meat, like you would on the stovetop. Plus, it comes out crispy and without any fat.

The fat slips through all the little cracks of the air fryer basket and you are left with just the delicious meat. I will show you, but, I am warning you, this is a gross picture.

Beef Fat

Imagine having all of that fat in your delicious recipe! Even if you are not looking for low fat content, too much fat can really ruin a dish you are trying to make.

What You Need to Make Ground beef in the air fryer recipesย 

You will obviously need an air fryer. I love my Ninja double basket. The one side is the perfect size to cook a pound of ground beef. This is not a recipe where you can use a toaster oven/rack style air fryer. You really need the basket type.

Next, you will need the ground beef. Any type of ground beef will work. I love the Butcher Box one because it tastes AMAZING but it just needs a lot less fat. The Butcher Box one is heavily compacted so it stays together nicely in the air fryer.

I put a little bit (2-3 tablespoons) of seasonings on my ground beef as I cook it. The seasonings you use will vary depending on the type of recipe you want to use this in. You can do Mexican, Italian, Pizza style. Really, any seasonings should work.

Finally, you need either a wooden spatula or a meat chopper to spread out and mix the ground beef. I love using a meat masher when I cook meat on the stove or in my air fryer.

How to Make Ground beef in the air fryer recipesย 

Start by preheating the air fryer to 400 degrees. Grease the basket with cooking spray.

Add in the ground beef and break up the ground beef a little to cover the bottom of the air fryer. Sprinkle with half your seasonings.

Then, air fry for 5 minutes.

Break up and flip over the ground beef some more. Then, sprinkle with the remaining seasonings.

Air fry for another 3-5 minutes, or until fully cooked. However, you can cook it longer if you like it extra crispy.

How to Use the Air Fryer Ground Beef in Recipes

I made this with taco seasonings and made tacos; however, you can choose many different types of seasonings to make many different recipes using this air fryer ground beef.

Panda Express Honey Sesame Chicken

This is the best copycat recipe for the panda express honey sesame chicken breast. It is crispy, juicy chicken breasts, covered in a delicious sauce. Then, paired with vegetables and served on rice. You cannot beat this!

If you know me, you know my top two food categories are takeout dishes and copycat dishes. Therefore, I put the two together and made some Panda Express honey sesame chicken!

The best copycat recipe for the panda express honey sesame chicken breast

The recipe can be easily doubled, tripled, quadrupled, etc. It also makes great lunch leftovers! And donโ€™t worry, I always build in extra sauce in my recipes to pour over your rice!

I started my blog with takeout dishes and copycat recipes! You may know me from my air fryer sweet and sour chicken, orange chicken, or general tso chicken. If you are a Chick-fil-A lover, you probably know me from my copycat nuggets and sauce. These are some of my most popular recipes and my favorites! I had to combine my two favorite loves and make a copycat recipe for the Panda Express honey sesame chicken breast.

What You Need for Honey Sesame Chicken

First off, you will need an air fryer, you can use a basket type air fryer; but, I really like a rack type air fryer as well. 

Next, a couple ingredients, super simple, basic stuff. 

  • Chicken tenderloins
  • Soy sauce
  • Egg whites
  • Cornstarch
  • Flour
  • Breadcrumbs
  • Seasonings
  • Honey
  • Brown sugar
  • Ketchup
  • Green beans
  • Yellow bell pepper
  • Onion (not traditional but I add them)
  • Sesame seeds

Okay, it may seem like a lot, but I promise it is all worth it! However, we can also go over some suggestions and substations.

Chicken Tenderloins

I typically use chicken tenderloins when I need nuggets sized chicken, but you can use other cuts of chicken. Chicken tenderloins are already thin, so minimal cutting is required, which is why I like them. However, chicken breasts or chicken thighs can work well too. But, you can use beef, pork or even tofu if you are vegetarian. Any kind of protein will work great in this recipe. Remember to cut the chicken, or your preferable substitution, in the same size, so they are all cooked simultaneously.

Soy Sauce

I use a gluten free, low sodium soy sauce here. It will not only be used for the sauce; however, also be utilized to coat the chicken in the breading mixture. This will make the chicken super tasty!

However, you can use a regular soy sauce. But, please me mindful of the sodium content if you are not using a low sodium version.

Egg Whites

For the eggs, I do prefer liquid egg whites as it is a smoother, less clumpy consistency; however, regular eggs do work. Whisk the eggs before beginning.

Cornstarch, Flour and Breadcrumbs

Cornstarch, flour and breadcrumbs come together to form the PERFECT breading for these Panda Express honey sesame chicken bites. I love using cornstarch for takeout dishes as it makes for the best consistency.

Brown Sugar

Brown sugar replacement is a staple in my household, it is great on so many dishes. I use the Swerve brand; however, Splenda has a brown sugar blend, and, alternatively, you can use regular brown sugar.

Ketchup

Again, I use a sugar free ketchup. My favorite is from G Hughes and it is so good! However, you can use a regular ketchup, just be mindful of the added sugar.

Vegetables

Panda Express uses yellow bell pepper strips and green beans in their honey sesame chicken. I used those two and added some onion because I love onions! However, you can substitute or add any vegetables that you wish.

And donโ€™t worry, I always build in extra sauce in my recipes to pour over your vegetables and rice!

What is a slurry? It is a liquid-y mixture that makes the sauce thick! It just combines corn starch with some water. Add that into the sauce, after it is made, until you reach your desired thickness. I typically do not need this; however, if you do, that is how you thicken a sauce.

How to Make The Copycat Recipe for Panda Express Honey Sesame Chicken Breast

First, let's go over how to make the actual crispy chicken pieces. As mentioned, it does seem like a lot of ingredients but I promise it is so easy to make, and most importantly, so worth it.

How to Make the Chicken

Preheat the air fryer to 400 degrees, greasing the basket with cooking spray.

Start by slicing up the chicken tenderloins into bite sizes pieces, about 1 inch by 1 inch. Place those in a bowl with the soy sauce and egg whites, mixing to combine.

In another bowl, combine all the ingredients for the breading, the flour, breadcrumbs, cornstarch and seasonings.

One by one, grab a chicken piece, shaking off any excess liquid, and covering that in the breading mixture. Place that in the air fryer basket, trying not to let the pieces touch. Repeat that for each chicken piece. If multiple batches are required, do not start breading until ready to cook.

Once all the chicken nuggets are coated, place in the greased air fryer and air fry for 1 minute. Spray chicken with cooking spray (this will emulate actual frying, while keeping this sweet and sour chicken healthy) then air fry for another 3 minutes. Flip/shake the chicken and spray with cooking spray again. Air fry for another 4-6 minutes, or until thoroughly cooked.

How to Make the Vegetables

As the chicken cooks, slice the vegetables into thin strips. Grease a small pan and heat over medium high heat. Once heated, add the vegetables and sautรฉ until slightly soft, about 5 minutes.

How to Make the Sauce

This Panda Express honey sesame chicken recipe has the absolute best sauce!

Heat a small pan over medium high heat. Add all the ingredients for the sauce together, in a small bowl. Whisk together until all the brown sugar and honey are dissolved into the liquids.

Add to the heated pan and bring to a boil. Once boiling, reduce the heat to low/low medium and let simmer until thickened.

Combine everything together

Once the chicken is cooked, the sauce is thickened and the vegetables have softened, add the chicken and vegetables to the sauce pan and toss to coat. Top with sesame seeds and enjoy!

I serve mine with rice, of course! You can use my instant pot rice recipe or my stovetop rice recipe to make some. But, I also highly recommend a rice cooker. And donโ€™t worry, I always build in extra sauce in my recipes to pour over your rice!

Low Carb Ideas

If you want to make this recipe lower carb, you can skip the breading part. These Panda Express honey sesame chicken bites are amazing without breading too! Also, instead of rice, try some riced cauliflower. It is delicious with this sauce.

Need some happy-hour pick me up drinks, then try out my blended strawberry lemonade made with vodka and the prettiest pink color!

Cheers! And if you are reading this, it is 5 o'clock somewhere!! Grab your blender and let's make a blended vodka strawberry lemonade.

I have made tons of skinny drinks from margaritas, to a Paloma, to a piรฑa colada and so much more. Now that is is summertime (and 103 degrees during the day), I needed another skinny drink and blended vodka drinks are my favorite.

Need some happy-hour pick me up drinks, then try out my blended strawberry lemonade made with vodka and the prettiest pink color!

What You Need for a Vodka Strawberry Lemonade

Obviously, a blender.

  • Lemon vodka
  • Strawberry syrup
  • Lemon juice
  • Strawberries
  • Ice

I use deep eddy's for my lemon vodka. It is seriously one of my favorite brands. They have so many flavors. If you just want to use regular vodka, add a little extra lemon juice. You really want to taste the lemonade in this vodka strawberry lemonade.

Jordan's Skinny Mixes are my favorite zero sugar syrup. I use them for the strawberry syrup. They have so many flavors and are all amazing. You can also find them cheaper at HomeGoods or other places.

You can use fresh lemonade juice in this strawberry vodka drink; however, I just use lemon juice from a container. Whichever you find easier or better!

Strawberry lemonade needs some strawberries. I use fresh strawberries and toss a couple into my blender.

However, you can also add a little extra water in if it is not blending well enough.

How to Make a Vodka Strawberry Lemonade

To make this pink lemonade vodka, add all your ingredients to a blender and blend until smooth. You may need to add a little bit of extra water if it is not blending well.

Make sure to serve it in a pretty glass and garnish with a fresh strawberry and slice of lemon! Presentation is everything.

Healthy Jalapeno Popper Dip

There is nothing like a delicious skinny jalapeno popper dip, especially when it is healthy with yogurt and covered in cheddar cheese.ย 

If you know me, you know I LOVE a good greek yogurt dip. It is a great substitute for sour cream or mayo. Plus, if you do it right, you hardly even taste the yogurt. Some of my most popular dips areย my greek yogurt buffalo chicken dip,ย zero point onion dipย andย fiesta corn dip.

There is nothing like a delicious skinny jalapeno popper dip, especially when it is healthy with yogurt and covered in cheddar cheese.ย 

Quick Tips from Allie Carte

  • Use pickled jalapeรฑos or sautรฉ fresh ones on the stove for a less spicy dip
  • Add cheese on top and broil it
  • Bacon bits are easy but, real bacon is delicious
  • Serve the dip inside a jalapeรฑo! For a less spicy version, try it out in a bell pepper or mini sweet pepper. However, you can also use these instead of chips
  • Remove all the seeds if you do not want the jalapeรฑos to be too spicy.
  • You can heat this up in the oven; however, I prefer serving it cold.

What You Need for Skinny Jalapeno Popper Dip

To make this healthy jalapeno popper dip, you don't need any fancy cooking gadgets. However, if you do not want to use fresh jalapeรฑos, you can use pickled jalapeรฑos or sautรฉ some on the stove, to make them less spicy. At the end, you can also stuff the dip into jalapeรฑos, add some shredded cheese on top and broil them in the oven.

  • Plain, nonfat greek yogurt
  • Sour cream
  • Jalapeรฑos
  • Bacon bits
  • Shredded cheddar cheese
  • Seasonings

Trust me, you really cannot tell that there is yogurt in this. I love making a dip with yogurt, especially this jalapeno one. It is a great substitute for sour cream or mayo. Plus, if you do it right, you hardly even taste the yogurt. I like adding just one tablespoon of sour cream (you can also substitute mayo) into this recipe because it really does cut the yogurt taste completely. However, if you do not want to use yogurt, you can substitute all mayo or sour cream.

I used one whole jalapeรฑo in this recipe, diced it up and placed it right into the dip. However, if you do not want to use fresh jalapeรฑos, you can use pickled jalapeรฑos or sautรฉ some on the stove, to make them less spicy. Remember, take the seeds out if you do not want overly spicy.

Yes, I am lazy and use bacon bits. However, you can certainly cook and dice up your own bacon.

In this jalapeno popper dip, I use fat-free shredded cheddar cheese. However, you can use any type of shredded cheese that you like. I serve it cold, without melting the cheese. However, you can pop this in the oven for 10-20 minutes, which will help melt the cheese.

How to Serve Jalapeno Popper Dip

This dip is great on its own with chips. However, I love placing it into a fresh jalapeรฑo. It is amazing with some extra shredded cheese on top. Then, broil that in the oven to get the cheese crispy and melty.

However, you can also serve jalapeรฑo slices on the side, for dipping. If you want something less spicy, serve this in some of those mini sweet peppers, in a bell pepper, or with bell pepper strips on the side.

I serve this cold; however, you can also heat this in the oven for 10-20 minutes to get the cheese a little melty.

Then, all you do is combine all the ingredients together, in a small bowl, and store in the fridge for at least an hour, to allow the flavors to form together.

I used one whole jalapeรฑo in this recipe, diced it up and placed it right into the dip. However, if you do not want to use fresh jalapeรฑos, you can use pickled jalapeรฑos or sautรฉ some on the stove, to make them less spicy. Remember, take the seeds out if you do not want overly spicy.

Air Fryer Buffalo Cauliflower

Air fryer buffalo cauliflower bites are crispy, delicious and taste just like buffalo wings! They are the best way to get your vegetables in, or trick your friends/family into eating them!

Little fun fact - my sister and one of my closest friends are basically total vegetarians. I am with them all the time, and as a food blogger, I am cooking for them all the time. This means that I am constantly trying to find vegetarian friendly appetizers, that will also please a crowd.

This is where I started making air fryer buffalo cauliflower wings. I love how they can look like real buffalo chicken wings; however, are obviously not. This tricks people into trying a new item and they always end up loving it!

These air fryer buffalo cauliflower bites are super spicy; therefore, I serve them with my homemade yogurt ranch to cool them down a little.

What You Need for Air Fryer Buffalo Cauliflower Wings

First off, you will need an air fryer, you can use a basket type air fryer; but, I really like a rack type air fryer as well. 

Next, a couple ingredients, super simple, basic stuff.

  • Cauliflower
  • Egg
  • Breadcrumbs
  • Flour
  • Seasonings
  • Buffalo sauce
  • Cooking spray

For the cauliflower, I highly suggest getting pre-cut cauliflower pieces. I love these Eat Smart ones that come in a bag; however, any brand should work. Some pieces are big; therefore, I suggest cutting up some of the large pieces.

For the eggs, I do prefer liquid egg whites as it is a smoother, less clumpy consistency; however, regular eggs do work. Whisk the eggs before beginning.

As for the buffalo sauce, use your favorite! I did a buffalo wing sauce; however, there are tons of options. You can also try a BBQ sauce or another sauce if you do not like things too spicy.

How to Make Air Fryer Buffalo Cauliflower Wings

Cut up any large cauliflower florets into smaller pieces.

Grab two small, shallow bowls. One will be used for the egg and one will be used for the flour mixture.

In one bowl, pour the egg whites. In the other bowl, whisk together the flour, breadcrumbs and seasonings.

Preheat the air fryer to 400 degrees. Grab the air fryer rack and grease it with cooking spray.

One by one, dredge each cauliflower floret into the egg mixture. Then, coat with the flour mixture. Place on the greased air fryer rack being careful not to let the pieces touch. I like to do two batches, one of larger pieces and one of smaller pieces so the smaller ones do not burn.

Air fry for 3 minutes. Then, spray with cooking spray. Air fry for another 2-7 minutes, depending on how big the pieces are.

Remove the rack from the air fryer and spray the cauliflower florets again. Flip them over and then grease again with cooking spray. Air fry for another 3-5 minutes, until golden.

Pour the buffalo sauce into a bowl.

Keeping the air fryer preheated, remove the rack from the air fryer. Dunk each cauliflower floret into the buffalo sauce then return it to the air fryer rack. Repeat this for each piece.

Once all the cauliflower are coated in buffalo sauce, air fry again for another 1-2 minutes per side, until crispy.

Oven Way

You can also bake these in the oven, at 425 degrees, for 15-20 minutes, flipping and spraying halfway. They do not get as crispy. However, I suggest placing them on an oven safe cooling rack to cook, then, placing that on a baking sheet. Then the air circulation will get to the bottom of the cauliflower, making them crispier.

Make sure to serve your air fryer buffalo cauliflower wings with my homemade ranch. It provides a cool touch to the super spicy cauliflower. To heat it back up, I suggest popping it back in the air fryer.
